This is a quick and easy shrimp fried rice recipe that my kids all love! This recipe is best warm and fresh, but will keep airtight in the refrigerator for up to 5 days or in the freezer for up to 4 months. Reheat gently, as desired.

2 tablespoons sesame oil
2 tablespoons olive oil
1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen peas and carrots
½ cup frozen corn
2 cloves garlic, finely minced, or more to taste
3 large eggs, lightly beaten
4 cups cooked rice
3 tablespoons thinly sliced green onions
3 tablespoons low-sodium soy sauce, or more to taste
½ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat sesame oil and olive oil in a large nonstick skillet or wok over medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
  • Remove shrimp from the skillet using a slotted spoon, allowing oils and cooking juices to remain in the skillet. Place shrimp on a plate and set aside.
  • Add peas and carrots and corn to the skillet and cook, stirring intermittently, until vegetables begin to soften, about 2 minutes. Add garlic; cook and stir for 1 minute. Push vegetables to the side of the skillet, pour eggs into the other side, and cook to scramble, stirring as necessary, 3 to 4 minutes.
  • Stir shrimp, rice, and green onions into the skillet. Drizzle evenly with soy sauce, season with salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.

I never could make fried rice, it always turned out sticky and nasty. Until one night when I couldn't sleep, I turned on the tv and watched this infomercial for cookware and they made fried rice. And what do you know, its a good recipe! Only thing good that ever came out of a infomercial, lol. Anyway my whole family loves it and have been asked for the recipe many times. If you have leftover chicken, toss it in too. I've also added hamburger and other veggies with good results too.

1/2-1 cup oleo (or butter)
1 medium onion (chopped)

4 eggs

4 cups cold cooked rice

1 (8 ounce) package sliced mushrooms
½ pound frozen cooked shrimp, thawed
2 stalks green onions, sliced

1 large egg

Steps:

  • Rinse rice in a strainer until the water runs clear.
  • Transfer rice to a saucepan. Add water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Check rice; the water should be completely absorbed and rice should be tender. If rice is still firm, cover and continue to cook until tender, 3 to 5 more minutes. Remove from the heat. Measure out 2 cups cooked rice for fried rice; set aside. Reserve remaining rice for another use.

1 onion, diced
1 teaspoon garlic, minced
1 carrot, shredded
1 (16 ounce) package frozen peas

1/2 cup soy sauce, Soy Sauce Substitute - Gluten Free

Steps:

  • Put 3 tbs oil in a large pan and heat up.
  • Once heated add in cold rice and let sizzle and brown, stirring occasionally. This usually takes about 10 minutes.
  • Once done add in the rest of the oil, onion, garlic, carrot, peas, and ham, mixing it all in together and letting this cook for 5 minutes.

1 bunch broccolini (about 6 ounces), ends trimmed, sliced in half lengthwise if stalks are thick
4 cups cooked white rice (preferably day-old, long-or medium-grain)
3 large eggs, beaten to blend
1 cup snow peas
1/2 cup frozen edamame or green peas
3 tablespoons low-sodium soy sauce or tamari
2 tablespoons fresh orange juice (from about 1/2 orange)
Chili or sesame oil (optional; for serving)

Steps:

  • Heat 1 Tbsp. oil in a large nonstick or cast-iron skillet or wok over high. Reserve about 2 Tbsp. sliced scallion greens; add remaining scallions to oil and cook, tossing occasionally, about 1 minute. Add chicken, 1 tsp. salt, and pepper and cook, stirring, about 2 minutes. Stir in garlic and ginger, then add broccolini and toss until incorporated. Cover and cook until chicken is cooked through and broccolini is tender, 2-3 minutes more. Transfer to a large bowl.
  • Heat remaining 3 Tbsp. oil in skillet over high. Add rice and remaining 1/4 tsp. salt, toss to coat, then press rice into a single layer, and cook, undisturbed, until crisped on the bottom, about 2 minutes. Move rice to one-half of skillet and add eggs to other half. Cook, stirring gently to form curds, until soft set and just cooked through, about 1 minute, then fold into rice.
  • Fold in snow peas, edamame, soy sauce, and orange juice. Cook, tossing, until warmed through, about 1 minute. Add chicken mixture and toss to combine. Divide among plates, then top with reserved 2 Tbsp. scallions. Drizzle with chili or sesame oil, if using.

2 cups uncooked white rice
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon dried chives
3 cups water
½ (16 ounce) package frozen peas and carrots
½ (8 ounce) bag frozen corn
3 tablespoons vegetable oil
1 (18 ounce) package boneless pork chops, cubed
¼ cup soy sauce

Steps:

  • Combine rice, basil, oregano, and chives in a saucepan. Add water and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Combine frozen peas, carrots, and corn in a microwave-safe bowl with a splash of water. Microwave, covered, until heated through, 6 to 7 minutes.
  • Heat oil in a large saute pan over medium heat. Cook and stir pork chops until no longer pink, 7 to 10 minutes. Mix in the cooked vegetables, rice, and soy sauce; heat through.

EASY INDONESIAN FRIED RICE (BUMBU NASI GORENG)



Easy Indonesian Fried Rice (Bumbu Nasi Goreng) image

I bought a jar of Kokita brand Nasi Goreng seasoning at the Uwajimaya store in Seattle and it made the best fried rice I had ever eaten. After scraping the last bits from the side of the jar, I didn't want to make the hour drive just for more (although it was tempting), so I improvised based on the ingredients. If you can find it, I highly suggest buying the pre-made product as it makes preparation very simple. After eating Indonesian fried rice I haven't been able to go back to making the more popular Chinese version. What makes this different than Chinese rice is the prominence of chili rather than soy sauce. Shallots, smaller and milder than the onion, are a pleasant addition. I like to add a lot of chili and use fish sauce as the source of saltiness. Many recipes call for shrimp paste, I haven't tried it and think it's just fine without since the fish sauce adds a seafood taste. There are other posted recipes for this dish, but this one is simpler and the eggs can be cooked right in with the rice. This is also great as a vegetarian (even vegan) dish, just omit the shrimp and use fried tofu instead of egg and use soy instead of fish sauce. Warning: this may be spicy for those with more delicate palates.

3 -4 cups cooked rice, cooled (any kind, I like Jasmine)
3 tablespoons peanut oil (preferred) or 3 tablespoons other vegetable oil
1 -2 tablespoon other se Asian chili sauce or 1 -2 tablespoon chili paste, i imagine sriracha would work alright.
3 cloves minced garlic
4 shallots, chopped
2 eggs, lightly beaten
1 1/2 tablespoons fish sauce or 1 1/2 tablespoons soy sauce
1/2 lb peeled raw shrimp (optional)

Steps:

  • Pre-heat a wok or large skillet over medium heat, add the oil and, once heated, add the garlic, shallots, chili relish and (if using them) shrimp; Cook the shrimp until pink on one side, flip once and pull them out when done (3-5 minutes total).
  • Once the shallots start to become soft add rice, eliminating any clumps, stir frequently for about three minutes.
  • Make a small hole in the center of the rice, pour in the eggs and scramble, incorporating them into the rice gradually as you stir.
  • Drizzle in soy or fish sauce, stirring to ensure even dissipation; More sauce or salt may be added at this point to taste; Rice should be thoroughly heated through.
  • Top with cooked shrimp; traditionally this is served with fresh cucumber and tomatoes.
  • Extras: (sorry for the semi-colons instead of periods, recipezaar's auto format makes each sentence into a seperate step-- something I did not want) It may not be traditional, but I like to add broccoli, deep fried tofu (available at Asian markets and many grocery stores, try to get small cubes), frozen peas and green onion to my rice; If you choose to do so, cut broccoli and fried tofu into small pieces; Add approximately 2/3 cup each of broccoli and peas at the same time you add the garlic, etc and stir fry.
  • If the vegetables have absorbed a lot of the oil, more may be necessary before adding rice; Add 2/3 cup fried tofu and sliced green onion with the rice; If you do this it might be easier to cook shrimp separately or leave them in the pan rather than removing (if you aren't picky about done-ness); In fact, any number of vegetables and/or meats may be added; For raw meat, cut into small pieces and add in step 1, after it's cooked proceed to 2, if cooked add it at the end; For added spice (I know these additions are getting exhaustive) add diced chili pepper at step 1.

Just love Fried Rice so I tried to create from a restaurant that we go to often. In a pinch you can use canned peas and carrots (drained). You could also try adding some diced ham and green onions.

3 cups cooked white rice (day old or leftover rice works best!)
3 tablespoons sesame oil
1 cup frozen peas and carrot (thawed)
1 small onion, chopped
2 teaspoons minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce

Steps:

  • On medium high heat, heat the oil in a large skillet or wok.
  • Add the peas/carrots, onion and garlic.
  • Cook until tender about 1 to 2 minutes.
  • Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and cook until scrambled.
  • Now add the rice and soy sauce and blend all together well.
  • Stir fry until thoroughly heated.
