  • Cook macaroni according to package directions.
  • In medium saucepan, melt butter over medium heat; stir in flour, and cook for 3-5 minutes stirring constantly to form a roux; add salt and pepper; slowly add milk, stirring well after each addition.
  • Cook and stir until bubbly.
  • Stir in cheese a small amount at a time until fully melted.
  • Drain macaroni; add to cheese sauce; stir to coat.

¼ cup butter
1 ¼ teaspoons salt
¾ teaspoon mustard powder
4 cups milk
¼ cup cornstarch
4 cups shredded Cheddar cheese, divided
2 gluten-free bread slices, toasted and broken into crumbs
1 teaspoon butter, softened
½ teaspoon paprika

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir salt and mustard powder into melted butter and remove saucepan from heat.
  • Whisk milk and cornstarch together in a bowl until smooth; stir into butter mixture until well blended. Return saucepan to stove; cook milk mixture, stirring constantly, over medium heat until sauce is thickened, about 5 minutes. Remove saucepan from heat.
  • Stir 3 cups Cheddar cheese into sauce until heat from sauce melts cheese. Add pasta to cheese sauce and stir well; pour into the prepared baking dish.
  • Combine remaining 1 cup Cheddar cheese, gluten-free bread crumbs, 1 teaspoon butter, and paprika in a bowl; sprinkle over pasta mixture.

700ml full-fat milk
1 onion, peeled and halved
1 garlic clove, peeled
1 bay leaf
350g macaroni
50g butter, plus a little extra for greasing
50g plain flour
175g mature cheddar cheese, grated
1 tsp English mustard
50g parmesan, grated
50g coarse white breadcrumb

Steps:

  • Prepare the pasta: In a small pan, warm the milk, onion, garlic and bay leaf until almost boiling. Remove from the heat, leave covered to infuse for 10 mins, then strain. Cook the macaroni according to pack instructions until just soft, but still with a little bite (this is called al dente in Italian). This will take about 10 mins. Drain in a colander, then run under the tap and stir to stop the pasta sticking together.
  • Make a roux: (A roux is simply flour and fat, cooked together, then used to thicken sauces.) Heat oven to 190C/ fan 170C/gas 5 and butter a 25 x 18cm ovenproof dish. Melt the butter in the medium pan. When foaming, add the flour, then cook, stirring constantly, for 1 min on a low heat.
  • Finish the sauce: Slowly stir the warm infused milk into the roux until smooth. Simmer for 3-4 mins, stirring often, until the sauce has thickened and has a coating consistency (run your finger through the sauce on a spoon - it should leave a trail). Remove the pan from the heat, then add the cheddar and mustard powder. Season, then stir until the cheese has melted.
  • Assemble and bake: Mix the cheesesauce through the macaroni to coat it well, then tip into the prepared dish. Sprinkle the Parmesan and breadcrumbs over the top, then bake for 15-20 mins until golden brown and bubbling. Serve piping hot on its own or with a green salad.

3 tablespoons butter
2 tablespoons flour
1 cup heavy cream
1 cup 2% low-fat milk
1 1/2 cups sharp cheddar cheese (shredded)
4 -5 dashes Frank's red hot sauce (do not use Tobasco)
salt and pepper

Steps:

  • Cook macaroni until al dente. Drain and set aside.
  • Melt butter in large saucepan. When melted, whisk in the flour until incorporated and cook for 30 seconds or so until thickened.
  • Slowly pour in cream and milk while whisking. Cook until thickened on low heat, whisking frequently. Usually 3-4 minutes.

1 lb pasta (elbow, rotini, bucatini)
1 stick butter or margarine
2 c milk
1 lb shredded cheddar

Steps:

  • 1. The American favorite pasta is small elbow noodles or rotini. The Italian favorite is long macaroni or Bucatini.
  • 2. Boil the pasta of your choice in very well salted water until al dente. Don't cook the pasta completely because it will finish cooking in the oven. Pour into a colander and quickly rinse with cold water to stop the cooking - allow to drain.
  • 3. In the same pot that you boiled the pasta, add butter and melt it over low heat. Turn Off Heat! Add the milk and the drained pasta - stir well. Taste at this point to see if it needs any additional salt. Remember that cheese is salty so don't add too much if it's needed.
  • 4. Add about 1/3 of the shredded cheese to the pasta & milk and stir. It doesn't have to completely melt, just get it mixed well.
  • 5. In a large casserole dish layer half of the noodles, then put a layer of cheese.
  • 6. Add the rest of the noodles and all of the remaining liquid, then layer the top with the remaining cheese.
  • 7. Bake at 350° F for 30-40 minutes until hot and bubbly and cheese is golden brown. Remove from oven and allow to sit about 5-10 minutes. Serve hot. Enjoy!
  • 8. *NOTES: I prefer to use a mixture of mild and sharp cheddar. Use Colby or whatever flavor cheese that you like to make it your own. If you like pepper, granulated garlic or onion then add it - I don't think it needs it but make it to your taste.

26 ounces condensed tomato soup

Steps:

  • Preheat over to 400°F. Make the Mac and Cheese as normal, but leave the noodles slightly uncooked still, that "1 more minute" point. While it is cooking fry the ground beef and leave it unseasoned or season as you like, I use a little Montreal Steak Seasoning. Mix the Mac and Cheese, ground beef and tomato soup together.
  • Pour into a 9x13 baking dish, top with cheese and a light sprinkle of seasoning salt. I always put this on a cookie sheet, it bubbles over the tiniest amount sometimes.
  • Put in oven and bake 20-30 minutes, or until cheese is completely melted and slightly golden. Cool for a few minutes, serve and enjoy!

  • 3. Mix soup and milk in medium saucepan, heat
  • 4. When soup mixture begins to bubble, add grated cheese, continue to heat until melted

1 (16 ounce) box pasta shells
1 cup milk
8 ounces sliced American cheese, cut up
1 cup shredded cheddar cheese
1/2 pinch salt

Steps:

  • 1. Heat pot of lightly salted water to boiling. Add pasta and cook according to package directions. Drain.
  • 2. Add milk to pasta pot and heat over medium heat. Sprinkle in American and Cheddar cheeses and the salt and whisk until melted and smooth.
  • 3. Return macaroni to pot with cheese sauce and stir to combine. Serve warm.
