2 large eggs, room temperature
1 cup sugar
2 teaspoons grated lemon zest
2 teaspoons lemon extract
1-1/3 cups all-purpose flour
1 teaspoon baking powder
GLAZE:
1-1/2 cups confectioners' sugar
1 to 2 tablespoons lemon juice

Steps:

  • In a small bowl, beat eggs until frothy. Beat in the sugar, lemon zest and extract. Combine flour and baking powder; gradually add to sugar mixture and mix well. , Drop by teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 325° for 10-12 minutes or until lightly browned. Cool completely on baking sheets before removing to wire racks. , For glaze, in a small bowl, combine confectioners' sugar and enough lemon juice to achieve desired consistency; drizzle over cookies.

1 (18 ounce) package lemon cake mix
2 cups Cool Whip
1 egg
powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Mix the ingredients together; let set for a few minutes.
  • Roll 1 teaspoonfuls of dough into balls and roll in powdered sugar.
  • Place on ungreased cookie sheet and bake for 10-12 minutes.
  • Remove to racks to cool.

My mother made these all year round, she would just change the color of sugar in which they were dipped. Consider putting a small amount of powdered drink mix (e.g.. Kool-Aid crystals) in white sugar to get different colors, and a little flavor. (Don't omit the sugar or the flavor will be too strong. )

1 cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 tablespoons milk
2 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream together butter or margarine and white sugar. Add egg, vanilla and milk. Mix well.
  • Gradually add flour, baking soda and salt. Mix well. Roll spoonfuls of dough in your hands and dip one end in colored sugar. Place on baking sheets and press top down with a glass. Bake for 12 minutes.

So this recipe is taken from the cookbook I bought that day.It has a ton of good,old fashioned recipes,from some obviously salty Maine-ites!These cookies...

1 c margarine
2 c sugar
2 eggs
8 Tbsp milk
2 tsp vanilla
3 c flour
1 c hershey's cooking cocoa powder(unsweetened)
1/2 tsp salt
4 tsp baking powder

Steps:

  • 1. Oven to about 365.Grease cookie sheets well.
  • 2. Mix as usual for cookies:cream shortening and sugar.Beat in the egg,vanilla,milk,and salt.Stir and add in remaining dry ingredients.
  • 3. Drop by teaspooonful onto well greased sheet.I make a criss cross on them with a fork.And dip the criss cross top slightly,in powdered sugar when they are done baking.
  • 4. Bake between 8 and 12min's,depending on size/generosity of "teaspoonful." Careful not to overbake or these get too hard. Enjoy!!!

1/4 cup butter
8 oz cream cheese
1 egg yolk
1/4 tsp vanilla
1 pkg cake mix (any kind, I use devil's food)
1/4 cup chopped walnuts (optional)
Cream Cheese Frosting
1/4 cup cream cheese, softened
2 tsp milk
1/2 tsp vanilla
Dash of salt
1-3/4 cups confectioners' sugar

Steps:

  • Cookies
  • Cream butter and cream cheese. Blend in egg yolk and vanilla. Add cake mix 1/3 at a time, mix well. Add chopped walnuts. Chill dough 1/2 hour.
  • Drop by tsp. full onto an ungreased baking sheet. Bake 8-10 min. at 375 until delicately browned. Frost right away.
  • Frosting (make while dough cools)
  • Blend cream cheese, milk, vanilla, and salt. Gradually add sugar until smooth.
  • If you want both vanilla and chocolate frosting, divide in half.
  • Melt 1/2 oz. unsweetened chocolate, cool, add to mixture before adding sugar. If all chocolate, add 2 oz. chocolate. This is best.....
  • For easier frosting, place 2 sq. milk chocolate bar on cookie as soon as out of oven.
