EASY BAKED CHICKEN TENDERS

A wholesome twist on the classic favorite chicken tenders....I personally would prefer these baked over fried any day!

vegetable cooking spray (such as I Can't Believe It's Not Butter!®)
1 egg, beaten
1 ¼ cups panko bread crumbs
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon ground black pepper
4 skinless, boneless chicken tenders, cut into 1/2-inch strips lengthwise

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place egg in a shallow dish. Place bread crumbs, garlic powder, onion powder, paprika, salt, and pepper into a large zip-top freezer bag and mix well. Dip 2 chicken strips into egg and then place into bread crumb mixture and shake to coat. Place coated chicken pieces onto the prepared baking sheet. Repeat with remaining chicken.
  • Spray each chicken tender with cooking spray 2 times.
  • Bake tenders in the preheated oven for 7 minutes; flip, continue to bake on opposite side until no longer pink in the centers, about 7 minutes more. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil tenders in the preheated oven for extra crunch, about 2 minutes more.

1 1/2 pounds boneless skinless chicken breasts
1/2 cup all-purpose flour
1/4 cup milk
1 pinch cayenne pepper
4 large eggs
Kosher salt and freshly ground black pepper
2 cups panko breadcrumbs
Vegetable oil, for shallow frying
Honey mustard, spicy ketchup and/or ranch dressing, for serving

Steps:

  • Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
  • Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. Transfer the chicken fingers to a paper towel-lined plate to drain and season with salt. Serve with honey mustard, spicy ketchup and/or ranch dressing for dipping.

2 boneless, skinless chicken breasts cut into strips
2 Tbsp extra virgin olive oil
1 pkg saltine crackers, crushed
2 eggs, beaten

Steps:

  • 1. Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl
  • 2. Heat the oil in a large heavy skillet over medium heat.
  • 3. Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.
  • 4. Place the coated chicken strips into the hot oil.
  • 5. Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.
  • 6. Drain on paper towels and serve.

  • In a medium bowl beat egg and buttermilk.
  • Coat chicken with flour mixture, dip into egg mixture and coat AGAIN with the flour mixture.
  • In a large skillet, heat oil over medium heat. Add chicken; cook uncovered for 5 minutes. Turn chicken; and cook 3 minutes longer or until no longer pink in the center and golden brown.

6 Tbsp reduced fat mayonnaise
2 Tbsp milk
¼ tsp cayenne pepper
4 small chicken breasts, boneless and skinless, each cut lengthwise into 3 strips
1 pkg shake 'n bake extra crispy seasoned coating mix
2 Tbsp classic ranch dressing
2 tsp chopped green onions

Steps:

  • 1. In a small bowl, mix ¼ cup mayo, milk and pepper. Add mixture to chicken strips in a medium bowl; stir until chicken is evenly coated. Refrigerate 30 minutes to marinate.
  • 2. Pour coating mix onto plate. Dip chicken, 1 strip at a time, in coating mix, turning to evenly coat each strip; place in single layer on baking sheet. Discard marinade.
  • 3. Bake chicken in a preheated 400º oven for 20 minutes or until done. Meanwhile, mix remaining mayo, dressing and onions.
  • 4. Serve chicken with sauce.
