Our Old Fashioned Crock Pot Lima Beans and Ham will make you fall in love with lima beans! You never knew they could taste so good!

1 lb bag Dried Lima Beans (Rinsed, Sorted, and Soaked)
3 cup Meaty Ham Hocks (or 1 leftover ham)
2 Onions (Chopped)
1 teaspoon Minced garlic (I used freeze dried)
1 teaspoon Chili Powder
Salt and Pepper to taste
4 Cups Chicken Broth
Additional Water

Steps:

  • Place beans in your slow cooker.
  • Add ham hocks and onion.
  • Add broth and any water needed to bring the waterline 2 inches above the beans.
  • Stir in seasonings.
  • Cook on HIGH for 2 hours then turn to LOW for 4 more hours or until the beans are tender.

I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

1 pound dried baby lima beans
2 quarts water
2 onions, coarsely chopped
1 meaty ham bone
1 cup leftover ham meat from bone, chopped
3 cups water, or as needed to cover
1 teaspoon Cajun seasoning
¼ teaspoon freshly ground black pepper
¼ teaspoon garlic salt, or to taste
1 pinch cayenne pepper

Steps:

  • Soak lima beans in 2 quarts of water in a large bowl for 8 hours or overnight. The next day, drain the lima beans and place into a slow cooker with onions, ham bone, and ham. Pour in 3 cups of water or as needed to cover. Place lid on the cooker, set to High, and cook for 3 hours.
  • Stir in Cajun seasoning, black pepper, garlic salt, and cayenne pepper; set cooker to Low and cook until the beans and meat are very tender, about 4 more hours.

1 package Hurst's® HamBeens® 15 Bean Soup®
8 cups low sodium chicken broth (can sub water, beef, or vegetable broth for added flavor)
1 leftover ham bone with meat (or ham hocks, diced ham or 1 lb. cooked sausage)
1 onion (diced)
1 clove garlic (minced)
1 teaspoon chili powder (optional)
15 ounces diced tomatoes
1 lemon (juiced)
Optional: Hot sauce or crushed red pepper to taste

Steps:

  • Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
  • Place beans, onions, ham bone (or diced ham), broth/water, garlic and chili powder in a 6qt slow cooker.
  • Cook on high 5 hours (or low for 7-8) or until beans are tender.
  • Once tender, remove the hambone (if used) and chop any meat left on the bone and add it back to the pot.
  • Stir in diced tomatoes, Ham Flavor packet, and lemon juice.
  • Cook for additional 30 minutes.

1 (8 ounce) package 15-bean soup mix
1 ham bone
3 cups cubed fully cooked ham
2 cups chicken broth
2 cups water
1 onion, chopped
3 carrots, chopped
1 (15.5 ounce) can great Northern beans, drained and rinsed
2 cloves garlic, finely chopped
1 teaspoon freshly ground black pepper
½ teaspoon salt
1 bay leaf

Steps:

  • Place 15-bean soup mix in a large bowl and cover with several inches of cool water; soak in refrigerator 8 hours to overnight. Drain and rinse.
  • Place 15-bean soup mix, ham bone, cooked ham, chicken broth, water, onion, carrots, great Northern beans, garlic, black pepper, salt, and bay leaf in a slow cooker; stir to combine. Cook on Low for 8 to 10 hours.

8 ounces dried baby lima beans
2 cups chopped onions
2 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-1/2 cups cubed fully cooked lean ham
1 cup sliced fresh carrots (1/4-inch slices)
1/2 cup water
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh parsley
1/2 teaspoon pepper

Steps:

  • Place lima beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discard liquid., In a Dutch oven coated with cooking spray, cook onions and garlic until tender. Stir in the broth, ham, carrots, water, jalapeno, parsley, pepper and lima beans. Bring to a boil. Reduce heat; cover and simmer for 50 minutes or until beans are tender.
