3 stalks celery, chopped (1 1/2 cups)
3 medium onions, chopped (1 1/2 cups)
1 ½ cups chopped red-skin potatoes
2 medium carrots, chopped (1 cup)
1 ¼ cups water
1 (8 ounce) bottle clam juice
1 cup reduced-sodium chicken broth or low-sodium vegetable broth
1 ½ teaspoons dried thyme, crushed
½ teaspoon coarsely ground black pepper
1 (12 fluid ounce) can fat-free evaporated milk
3 tablespoons cornstarch
2 (6.5 ounce) cans chopped clams, drained
2 tablespoons dry sherry
1 teaspoon red wine vinegar
2 slices turkey bacon, cooked according to package directions and chopped
1 Chopped green onion

Steps:

  • In a 3 1/2- or 4-quart slow cooker, combine celery, onions, potatoes, carrots, the water, clam juice, broth, thyme and pepper (see Tip).
  • Cover and cook on low-heat setting for 7 hours or on high-heat setting for 3 1/2 hours.
  • If using low-heat setting, turn to high-heat setting. In a medium bowl, combine evaporated milk and cornstarch. Stir milk mixture, clams and sherry (if desired) into cooker. Cover and cook for 30 to 60 minutes more or until bubbly around edge. Stir in vinegar just before serving. Sprinkle each serving with bacon and if desired, green onion.

1 onion, chopped
2 celery ribs, sliced
2-3 oz pancetta or lean bacon, finely diced
1/4 c all purpose flour
1 1/2 c cold water
2 c half and half
1 1/4 lb russet baking potatoes ( about 4 medium) peeled and cut into small cubes
3/4 tsp dried thyme leaves
2 - 6 oz cans chopped or minced clams
1/4to 1/2 tsp season salt
1/4 tsp freshly ground pepper
chopped fresh parsley for garnish

Steps:

  • 1. In a crock pot, combine the onion, celery, and pancetta.
  • 2. Whisk the flour into 1/2 cup of cold water. Stir into the vegetables in the crock pot. Stir in the remaining cup of water and add the potatoes and thyme.
  • 3. Drain the liquid from the clams into the cooker; reserve the clams in the refrigerator. Cover and cook on low heat setting about 6 hours, stirring once or twice, if possible, until the potatoes are tender, but not mushy and falling apart.
  • 4. Increase the heat to high. Stir in the reserved clams, half-and-half, seasoned salt, and pepper. Cook, uncovered, on high 30 to 40 minutes, stirring occasionally. Serve hot, garnished with sprinkling of parsley, pancetta,bacon or cheese.

1 (14 1/2 ounce) can sliced carrots, drained
2 (6 1/2 ounce) cans clams, chopped
2 cups tomato juice
1 1/2 cups water
1/2 cup tomato puree
1 tablespoon parsley
1 1/2 teaspoons thyme
1 teaspoon salt
1 bay leaf
2 whole black peppercorns

2 (6 1/2 ounce) cans clams
1/4 lb salt pork or 1/4 lb bacon
1 medium onion, chopped
3 -4 potatoes, pared and cubed
1 1/2 cups water
1 3/4 teaspoons salt
1/8 teaspoon pepper
2 cups half-and-half or 2 cups milk
1 1/2-2 tablespoons cornstarch (optional)

Steps:

  • Saute pork or bacon and onion until golden brown;drain.
  • Put clams in crock pot with bacon.
  • Add all remaining ingredients, except milk or half-and-half.
  • Cover and cook on High 3-4 hours.
  • Add 1 cup milk or half-and-half and cornstarch last hour of cooking.
  • Add remaining milk or half and half before serving.
  • STOVE TOP INSTRUCTIONS: Place all ingredients EXCEPT milk and cornstarch in kettle.
  • Simmer on low heat for 45 minutes.
  • Mix cornstarch into milk and add to kettle.
  • DO NOT BOIL.
  • Heat to warm, then serve.
