- In a large bowl, combine 1/3 cup bread crumbs, green onions, red pepper, egg, mayonnaise, lemon juice, garlic powder and cayenne; fold in crab., Place remaining bread crumbs in a shallow bowl. Divide mixture into eight portions; shape into 2-in. balls. Gently coat in bread crumbs and shape into 1/2-in.-thick patties., In a large nonstick skillet, heat butter over medium-high heat. Add crab cakes; cook until golden brown, 3-4 minutes on each side.

- Mix crab, crushed crackers, egg, mayonnaise, Worcestershire sauce, parsley, seafood seasoning, mustard, lemon zest, and pepper in a large bowl until well combined. Shape into 6 cakes and place in the refrigerator until firm, about 30 minutes.
- Pour 1/8 inch vegetable oil into a large iron skillet or frying pan. Heat over medium-high heat.

- In a bowl, combine red pepper, green onion, mayo, lemon juice, salt, garlic powder, and cayenne pepper.
- Stir in crab, egg, and 1/3 c of the breadcrumbs (may be sticky).
- Divide and form mixture into 4 balls.
- Roll crab balls in remaining breadcrumbs.
- Flatten into cakes about 1/2 inch thick.
- In a skillet, melt butter over medium heat and fry crab cakes 3-4 min per side, or until golden.

- Stir bread crumbs, mayonnaise, beaten egg, onion, parsley, Worcestershire sauce, seafood seasoning, dry mustard, seasoned pepper, and hot sauce in a medium bowl until well combined. Gently fold in crabmeat. Cover and refrigerate for 30 minutes.

- Add crab and shrimp.
- Spread onto muffins (I use quite a bit).
- Freeze on cookie sheet. When frozen put in zip-lock baggies.

QUICK AND EASY CRAB CAKES

- Mix the eggs and all of the seasonings together.
- Add the chopped red bell pepper and spinach.
- Stir in all of the crab meat.
- Get the frying pan warm (just past a medium heat) and add olive oil. The olive oil needs to cover the bottem of the pan.
- With your hands mix in the bread crumbs. Don't use to much. Just enough to get all of the ingredients to stick together.
- Roll the mixture into small patties about 2 inches wide and less then an inch thick.
- Once the oil is hot add patties. Make sure not to have them touch while frying. This will make them easier to flip over.
- Cook each Pattie about 2 to 4 minutes on each side. If they cook faster then that turn your heat down. The desired color of the patties should be between medium and dark brown.
- Remove from heat and let sit for 1 minute on a papertowel over a plate Before serving.
