1 tablespoon butter, softened
2 tablespoons white sugar
½ beaten egg
2 tablespoons sour cream
2 drops vanilla extract, or more to taste
¼ cup all-purpose flour
⅛ teaspoon baking powder
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon butter

Steps:

  • Stir 1 tablespoon softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add 1/4 cup flour and baking powder into the mixture; stir until smooth.
  • Mix 2 tablespoons flour, brown sugar, and cinnamon together in a bowl. Mash 1 tablespoon butter into the flour mixture with a fork or pastry cutter until mixture is crumbly; sprinkle over the cake batter in the mug.
  • Cook in microwave oven on high for 1 minute. Continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.

Steps:

  • Add flour, sugar, baking powder, and salt to a mug and stir together.
  • Stir in milk, melted butter, and vanilla extract until smooth, being sure to scrape the bottom of the mug. Stir in sprinkles.

  • Lightly butter 4 small microwave-safe mugs. Whisk 1/2 cup each sugar and buttermilk, 1/4 cup vegetable oil, 1 egg and 1/2 teaspoon vanilla in a large bowl until smooth, about 2 minutes. Whisk in 1/2 cup flour, 1/8 teaspoon baking soda and a pinch of salt until just combined. Pour 1/3 cup batter into each mug. Microwave, one at a time, until puffed and a toothpick inserted into the center comes out clean, about 2 minutes. (Continue microwaving in 15-second intervals, if needed.) Let cool slightly.   • Confetti: Make Basic Mug Cakes, adding 2 teaspoons rainbow sprinkles to each mug before adding the batter; stir. Top with whipped cream and more sprinkles.
  • Strawberry Shortcake: Make Basic Mug Cakes, adding 1 chopped strawberry and 1 tablespoon white chocolate chips to each mug before adding the batter; stir. Top with more chopped strawberries.

6 tbsp plain flour
¼ tsp baking powder
3 ½ tbsp milk
½ tsp vanilla
4 tsp icing sugar
sprinkles, to serve (optional)

Steps:

  • Put the butter in a microwave-safe mug and microwave on high for 30-45 seconds until melted. Stir in the caster sugar, flour, baking powder, milk and vanilla until smooth. Microwave on high for 1 min-1 min 15 seconds until cooked through and a skewer inserted into the middle comes out clean. Set aside while you make the icing.
