CHEAP & EASY CLAM SAUCE FOR PASTA
Super cheap if you tend to keep garlic and olive oil on hand at all times like I do and can find a can of clams for more like $0.99 instead of $2.50 (luckily, I can at one of the cheaper grocery stores). If not, it's still worth it. I keep parsley frozen flat in the freezer and just break off a piece to add, but you can go with anything along the lines of the basil, Italian seasoning, parsley family, really - very versatile that way. Mix and match spices or even oils, add milk or don't, and it will still be delicious and fast. Aiming for healthier? Excellent over whole wheat pasta, too!

Steps:
- Heat olive oil in small pan, and add garlic and the optional onions. Cook on medium about 3 minutes or until tender and lightly browned.
- Stir in the basil or parsley (or both or other spices) and optional red pepper flakes.
- Add the drained juice from the can of clams.
- Bring to a boil, and then reduce heat to low allowing to simmer about 5 minutes.
- Stir in the clams and the butter. Once butter is melted, add the optional milk or half and half and cook until heated through.
- Serve over spaghetti or linguine or other favorite pasta.
FAST AND EASY LINGUINE WITH WHITE CLAM SAUCE
Why buy jars or cans of white clam sauce when you can make your own so easily?...and no chemicals(preservatives) or that "off" after taste that so many have.

- 1. Cook the linguine according to the directions on the package.
- 2. While that is cooking heat oil in a medium frying pan.
- 3. Add garlic to the hot oil and cook until lightly browned.
- 4. Remove from heat stir in parsley,pepper,salt,clams with juice and the lemon juice.
- 5. Return to a LOW heat and cook for 5 minutes until heated thoroughly.
- 6. Pour sauce over hot pasta and toss to coat well.
- 7. Serve with parmesan cheese and a nice crusty bread for mopping sauce if you like.

Steps:
- 20oz canned clams is equal to 2-10oz cans of chopped clams with juice.
- Cook linguine as instructed. Drain.
- Meanwhile melt butter in skillet. Add garlic, shallot and red pepper flakes. Sautee for 4 minutes until vegetables are cooked.
- Add flour, oregano and parsley to mixture and stir until incorporated. Keep stirring for at least 1 minute.
- Add clams with juice and wine. Stir constantly for 8minutes or until thickened.
- Remove from heat.
- Stir in cream and cook over low heat until well heated about 2 minutes.
- Pour sauce over pasta and toss. Sprinkle with cheese.

- Saute onion and garlic in butter.
- Blend in flour.
- Drain clams and reserve juices. Add minced clams and milk to the onion and garlic.
- Simmer 10 minutes, season with salt and pepper to taste.
- If you desire a thicker sauce, make a slurry of cornstarch and milk.
- Add a little at a time to the sauce, stirring, until the desired thickness. Use the reserved clam juices to thin the sauce if need be.
- Meanwhile, cook pasta al dente in boiling salted water.
- Serve sauce over pasta.
- Top with parsley.
- Pass grated Parmesan.

- Drain clams, reserving liquid.
- Brown garlic until golden in butter (or margarine) in a medium sized sauce pan.

- start big pot of salted water for pasta, when it boils, add linguini or other pasta. Finely (or coarsely if you prefer) chop at least 3 cloves of garlic (more if you like). Use a small saucepan to fry the garlic gently in a few Tbsp of extra-virgin olive oil until golden, add 2 cans of minced clams, juice and all. Add chopped flat leaf parsely - about 2 Tbps or more if you like. Bring to a slow simmer while pasta is cooking. When pasta is done, drain and return to bowl, add all sauce or let guests fix their own with grated parmesean cheese

- Heat olive oil in a large skillet, add onions and chile pepper flakes, and sweat until onion is soft (do not brown).
- Add garlic and parsley and saute for another minute or two, until garlic aroma is apparent.
- Add reserved clam juice, and simmer for 15-20 minutes.
- Add whipping cream and simmer over low heat until hot, but do not let come to a boil.
- Add drained clams and heat until warm. Do not overcook at this point or your clams will get tough and rubbery - cook just until until well heated.
- Serve over pasta and top with shredded parmesan. Asiago works as well!
