2 tablespoons butter, melted
⅔ cup brown sugar
½ cup chopped walnuts
1 teaspoon ground cinnamon
⅓ cup heavy whipping cream
⅔ cup sifted confectioners' sugar
1 tablespoon milk, or more as needed
1 dash vanilla extract

Steps:

  • Lightly grease 2 round cake pans with butter.
  • Roll bread dough out to an 18x6-inch rectangle and brush with melted butter. Mix brown sugar, walnuts, and cinnamon in a bowl; sprinkle over dough. Roll dough into a log, starting at the long edge. Moisten edge with a little water; seal the edge. Cut log into 20 slices; arrange rolls, cut sides down, in prepared cake pans. Cover with a towel and let rise in a warm place until doubled in volume, about 1 1/2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Pour heavy cream over dough.
  • Bake in preheated oven until golden brown, about 25 minutes.
  • Stir confectioners' sugar, milk, and vanilla extract in a bowl until smooth, adding more milk or sugar as needed so the mixture is easily drizzled. Drizzle over warm cinnamon rolls to serve.

1 cup milk
⅓ cup butter
2 eggs, room temperature
4 cups bread flour, divided
½ cup white sugar
2 ½ teaspoons rapid-rise yeast
1 teaspoon salt
1 tablespoon vegetable oil
¾ cup packed brown sugar
2 ½ tablespoons ground cinnamon
⅓ cup butter, softened

Steps:

  • Heat milk and 1/3 cup butter together in a microwave-safe container in a microwave on high power for 30 seconds. Stir and repeat until mixture reaches 120 to 130 degrees F (49 to 54 degrees C). If too cool, microwave for 15 seconds more; if too hot, let cool to proper temperature.
  • Whisk eggs lightly in a small bowl, adding a small amount of milk mixture at a time to temper eggs until thoroughly combined. Pour mixture into the bowl of an electric stand mixer.
  • Mix 3 cups flour, sugar, yeast, and salt together in a large mixing bowl. Add to milk mixture and beat on low speed using a dough hook, scraping down the sides of the bowl using a rubber spatula as needed.
  • Add remaining flour slowly, 1 tablespoon at a time, until dough begins to pull away from the sides of the bowl. Continue to knead on low speed until dough looks smooth, 7 to 10 minutes; dough will be sticky and the bottom will remain stuck to the bowl.
  • Pour vegetable oil over dough and turn to coat. Cover and let rest for 10 minutes.
  • Turn dough out onto a lightly floured surface and use your hands to shape into a small rectangle. Roll dough out into a rectangle that is about 1/4-inch thick.
  • Mix brown sugar and cinnamon together in a small bowl. Spread 1/3 cup softened butter over dough and sprinkle with cinnamon-sugar mixture. Roll dough into a log and cut into 12 equal pieces.
  • Place rolls, cut-side down and almost touching, into a greased 9x13-inch pan. Cover loosely with plastic wrap and let rise until doubled in size, 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes. Remove from the oven and immediately turn out onto a tray or plate to cool; this allows the inside mixture to drip back into the rolls as they cool.

Toasted pecans add crunch to the cinnamon-sugar filling, and a tangy cream cheese glaze blankets the top of the rolls. The end result is tender, chewy and cakey rolls that taste best when unspooled bit by bit and eaten with your fingers.

2 pkg rapid rise yeast
6 1/4 to 6 1/2 cups all purpose flour, divided
1 tsp salt
2 1/2 c warm water [120 to 130] degrees
3 eggs, beaten
1/3 c vegetable oil
4 stick margarine, softened
2 c sugar mixed with 1/2 cup cinnamon
2 c sifted powdered sugar
1/4 c milk
1 tsp vanilla

Steps:

  • 1. Combine cake mix, yeast, 1 cup of flour, and salt in a large bowl. Stir in water, eggs, and oil. Beat 2 minutes on medium speed of electric mixer. Gradually add enough remaining flour to make a soft dough.
  • 2. Turn dough out on a well floured surface. Knead until smooth and elastic, {About 5 minutes}. Cover dough and let rest 10 minutes.
  • 3. Divide dough in half and roll each half into a 15 x 14 rectangle and spread each half with 2 sticks of margarine and half of the cinnamon and sugar mixture (or to taste).
  • 4. Roll up each rectangle jellyroll fashion, starting at long side, moisten edges with water and pinch to seal. Cut each roll into 1 inch slices. Place slices cut side down on two greased 13x9x2 inch pans.
  • 5. Cover and let rise in a warm place, free from drafts, about 45 min. Rolls will not double in bulk. Bake at 350 degrees for 30 min.

1 Tbsp cinnamon
1/3 c sugar
1/2 c chopped pecans

  • 1. Ingredients 1 Crescent Dough Sheet, cinnamon, butter, pecans, sugar
  • 2. Open the Crescent roll container and unroll and flatten.
  • 3. Take a spoon and with the backside press in to the softened butter, spread softened butter on flattened Crescent single sheet, cover all area of sheet.
  • 4. In a small container add sugar and cinnamon, stir well to blend.
  • 5. Scoop out tablespoon at a time of cinnamon/sugar mix and spread all over the buttered sheet.

  • 8. With a strip of dental floss, slide under the rolled sheet about 1 1/2" wide and twist to cut through. Or you can use a serrated knige and cut carefully in to pieces.
  • 9. Place in a butterd cake pan keeping a space between the rolls. Bake at 350 degrees for 10 minutes or until just golden brown.
  • 10. Remove from oven and cool slightly. Add frosting to each one. Frosting recipe: 1 cup powdered sugar 2 tb of softeded butter pinch salt 1/2 teaspoon instant coffee granules 1/2 teaspoon vannilla extract 3 tb half and half or alittle more if you like the frosting thinner. Mix well with spoon until creamy and smooth.
  • 11. Add chopped pecans to warmed frosting. Enjoy warm or cold.

1 loaf bridge ford bread (from a frozen 3-loaf package)
1/2 cup unsalted butter, softened
1/3 cup sugar
1/3 cup dark brown sugar
2 teaspoons ground cinnamon
1 cup unsalted butter, softened
1 lb confectioners' sugar
1/2 teaspoon vanilla
4 -6 tablespoons milk

Steps:

  • Defrost bread dough per package instructions.
  • Roll dough into a 6-inch-by-15-inch rectangle. Spread butter evenly over dough.
  • Combine sugars and cinnamon in a bowl, and sprinkle evenly over butter.
  • Roll dough into a log. Slice roll into approximately 12 (1-inch) pieces. Place slices on 2 greased pie plates and let them rise 3 to 4 hours.
  • Preheat oven to 350 degrees.
  • Bake rolls until dough is brown and sugar is bubbly, about 10 minutes.
  • Let rolls cool slightly before spreading on the icing.
  • To make icing, cream butter until fluffy. Add sugar, then vanilla. Add enough milk to make mixture fluffy.
  • Serve rolls warm.

From the Penzey's Spices website. I was killing time at a bookstore recently and saw this recipe in a Penzey's cookbook. I want to try it because it doesn't have yeast in it.

3 cups flour
1/4 teaspoon salt
4 teaspoons baking powder
1/2 cup sugar
2 eggs
2/3 cup milk
1/2 teaspoon pure vanilla extract
1/2 cup butter or 1/2 cup shortening, melted
1/2 cup white sugar
1/4 cup melted butter
1 1/2 teaspoons cinnamon, the stronger the better
1/2 cup brown sugar
1/2 cup broken walnuts or 1/2 cup pecans
3 tablespoons melted butter
1 cup powdered sugar
2 tablespoons warm milk
1 tablespoon melted butter
1/4 teaspoon pure vanilla extract

Steps:

  • Sift flour with salt, baking powder and sugar into a large mixing bowl, and make a well in the center of the dry ingredients. In another bowl, beat eggs until well mixed, pour into the center of the dry ingredients, along with milk, pure vanilla extract, and butter, which should be melted and cooled slightly, so it is warm, not hot. Mix by hand with a wooden spoon, or on the lowest speed with a mixer.
  • Once the dough is holding together, turn out onto a floured board, knead for 1 minute. This dough is easy to work with-if it seems sticky, sprinkle a bit more flour onto it as you work. Turn the dough over once or twice as you are kneading, then roll the dough out into a rectangular shape about 1/4 inch thick. Shoot for about a 9" by 13" rectangle, just like a baking pan, but don't worry if it is a bit bigger or smaller.
  • Combine the filling ingredients, mixing well in a small bowl, then spread onto the dough using a flexible spatula, the back of a spoon or a pastry brush, smoothing out from the middle to 1/2 inch from the edge. Roll the dough up into a jellyroll from the long side, and, using a sharp knife, cut the dough as evenly as possible into 18 pieces.
  • Mix the topping together in a small bowl. Use spray oil to grease a muffin pan, then divide the topping between 18 muffin tins. After dividing up the topping, place one piece of dough, cut side down, in each muffin tin, on top of the walnut mix. Bake in a preheated 350° oven for 20-25 minutes, until golden brown.
  • Remove the cinnamon rolls right away to cool, if some of the topping stays in the tin, just pull it out with a spoon and replace it on top of the muffin while it's still hot. Prepare the icing by whisking all the ingredients together while the rolls cool for at least 10 minutes,. Cinnamon Rolls look great served upside down or rightside up. Pick which you prefer, drizzle with icing and serve.

I stumbled across this idea one day when I had too much pie dough from a the new ready-made roll up Pillsbury pie dough (from the refridgerated section at your grocer). I love it because it is so versatile...stuff it with crab mix or cheese/sausage to get a whole new recipe. Makes an excellent party snack! So easy and good! WARNING: Pan will be messy due to the topping and the butter/sugar stuffing melting. I spray liberally using nonstick spray and I prefer Nonstick foil or parchment paper to line the pan when I have it. Don't try to unroll pie crust without nuking first because it will break apart. Pillsbury Pie dough is more flaky than generic and turns out better product. Prep time is only 10 minutes, tops.

2 pieces pillsbury refridgerated pie dough (1 package)
6 tablespoons butter or 6 tablespoons margarine, softened
6 tablespoons of packed dark brown sugar or 6 tablespoons light brown sugar
1 teaspoon ground cinnamon (or more to taste)
1/4 teaspoon nutmeg, to taste (or cake spice)
1 -2 tablespoon of fine-mid processed pecans or 1 -2 tablespoon walnuts
1/2 cup butter or 1/2 cup margarine
1/4 cup packed dark brown sugar or 1/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg (or cake spice)
3 tablespoons of mid-processed pecans or 3 tablespoons walnuts

Steps:

  • Preheat oven according to package directions for pie crust (usually 400-425) and position rack so you can use the center of your oven.
  • Take 6 TB of softened butter or margarine and process or cream with 6 TB of packed brown suger+ 1 tsp of cinnamon and pinch of nutmeg or cake spice OPTIONAL: add 1-2 TB fine-mid processed pecans or walnuts.
  • Soften Pie Crust according to package directions by nuking in microwave a few seconds and unroll onto your clean surface.
  • Spread 1/2 of creamed mixture onto each pie crust then roll back up as before.
  • With a sharp knife, cut roll into 1/2" or desired width of segments end-to-end. The roll will be difficult to cut after cooking without smashing the filling out as the slices are made.
  • Spray glass casserole dish liberally with nonstick spray (better to use nonstick foil) and lay each mini roll on dish one deep, leaving 1/4" between each mini roll.
  • Prepare sauce, if desired, by melting all ingredients together in microwave. Sauce can also be reserved for dipping. Doing so will result in less mess in pan.
  • Pour over top of mini rolls.
  • Bake for 12-15 minutes in oven.
  • They will be a little sticky inside when done and some filling will have leaked out.

1/3 cup firmly packed brown sugar

1 tablespoon sugar
1 teaspoon ground cinnamon
2/3 cup powdered sugar
1 tablespoon milk or 1 tablespoon half-and-half
1/4 teaspoon almond extract or 1/4 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • Unroll crescent rolls, and separate each dough portion along center perforation to form 4 rectangles; press diagonal perforations to seal.
  • Stir together butter and next 4 ingredients; spread evenly over 1 side of each rectangle.
  • Roll up jellyroll fashion, starting at long end.
  • Gently cut each log into 6 (1-inch-thick) slices, using a serrated knife.
  • Place rolls, 1/4 inch apart, into 2 (8-inch) greased cakepans.
  • Bake at 375° for 15 to 18 minutes or until golden.
  • Cool 5 to 10 minutes.
  • Stir together powdered sugar and remaining ingredients.
  • Drizzle over warm rolls.
  • Note: To make slicing easier, place unbaked rolls on baking sheet, and freeze for 10 minutes.

Icing:
12 frozen Rhodes dinner rolls, or 1 loaf of frozen bread dough, thawed to room temperature
1/2 stick butter, melted
Additional butter for the pan, softened
1/2 cup sugar
1 heaping tablespoon cinnamon
1 1/2 cups confectioners sugar
1 tablespoon butter, melted
3 tablespoons half-and-half or milk
1/2 teaspoon vanilla extract

Steps:

  • Combine the sugar and cinnamon in a small bowl. Set aside. If using 12 rolls, squish them together to form a big ball. Roll dough out on a floured surface to form a 16x12-inch rectangle. Pour the 1/2 stick melted butter over the top of the dough rectangle and spread it almost to the edges with your hand. Generously sprinkle the cinnamon sugar mixture over the butter. Starting with a long side of the rectangle, roll it up jelly-roll style as tightly as possible into a long roll, ending with seam side down. With a sharp knife, cut into 12 even slices. Generously coat the bottom and sides of an 11x7-inch baking pan (or equivalent) with softened butter. Place the rolls, just slightly apart, in the pan. Cover rolls loosely with plastic wrap that has been sprayed with cooking spray. Place in a warm spot and let rise until doubled in size. (I usually heat the oven a minute or two at lowest setting, then turn the oven off. Don't put the rolls in until the oven feels just barely warm.) When ready to bake, preheat oven to 350 F. Bake the rolls for 20-25 minutes or until done. Combine the icing ingredients; pour all over the top of the hot rolls, filling all the cracks and crevices.
