KITTENCAL'S EASY TUNA OR CHICKEN NOODLE CASSEROLE
This is a delicious casserole that can be made using either tuna or 1-1/2 cups or more of cooked cubed chicken or even cooked turkey --- for a thinner sauce use 1 cup of milk or half and half instead of 3/4 cup, prep time includes boiling the egg noodles, if you are not a garlic-lover then you may omit the garlic powder and to zing the flavor up even more add in 1-1/2 tablespoons of lemon juice

- Preheat oven to 375 degrees F.
- Grease a 2-quart casserole dish.
- Cook the egg noodles in boiling salted water; drain then toss with 2 tablespoons butter.
- In a large saucepan, mix the undiluted mushroom soup, garlic powder, Parmesan cheese (if using) milk or half and half, sour cream, salt, pepper, chopped onion, pimiento, bell pepper and celery; cook over low heat, stirring frequently for 15 minutes.
- Add in the tuna or chicken; mix to combine.
- Combine the mixture with the cooked egg noodles.
- Transfer to prepared greased baking dish.
- Sprinkle top with the broken Ritz crackers.
- Bake for about 25 minutes.

(Note: You can also use 2 pounds of chicken breast meat instead of a whole chicken; I like to cook my chicken ahead of time and freeze it, so that it is even quicker to make when I'm ready).

- Cook spaghetti in a large pot of salted boiling water until it is al dente (about 8 to 10 minutes). Drain and set aside.
- Preheat oven to 350 degrees F (175 degrees C).
- In a 9x13 inch baking dish combine the shredded chicken, cooked spaghetti, soups, water, salt and pepper. Mix all together. Sprinkle cheese on top of mixture and bake in preheated oven for 20 to 25 minutes or until cheese is melted and turning slightly brown. Let cool 10 minutes and serve!

Steps:
- Preheat oven to 375 degrees.
- Cook egg noodles and frozen vegetables according to directions on noodle bag.
- In medium bowl, combine the two soups, chicken, onion flakes, garlic powder, and thyme. Add salt and pepper to your liking. Mix well.
- When noodles and vegetables are done cooking, drain well and return to pot. Mix margarine into noodles.
- Add soup mixture to pot with noodles. Mix well and pour into 2 quart round casserole.
- Sprinkle with the fried onions. Put in oven, and bake for 20 minutes, or until fried onions turn golden.
- {For a lower-fat meal, omit margarine and use low-fat soups.}

- 1. Preheat oven to 325*.
- 2. Slightly thaw and cut chicken breasts into large strips and set aside.
- 3. In a casserole bowl put noodles, soup, milk and corn. Mix well to combine and then add the chicken strips. Season to taste with salt and pepper and/or your favorite seasonings.
- 4. Cover the dish with foil and then bake off for thirty minutes. Flip the chicken and stir the noodles. Bake for an additional thirty minutes or until chicken is completely cooked and the noodles nice and soft.

- Cook the noodles according to pkg. directions, drain and set aside. In a mixing bowl combine both soups and the seasoning. Stir in the chicken and veggies along with 1 C. of the cheese. Stir in the noodles and combine well. Pour into a lightly greased 9x13 dish. Sprinkle the top with the remaining cheese, plain breadcrumbs and panko, dot the top with the butter. Cover with tinfoil and bake in a 350 degree oven for 25 minutes, uncover and bake and additional 10 minutes. If you want to brown up the breadcrumbs a little more pop it under the broiler for a minute or two.
