¼ cup all-purpose flour
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
2 tablespoons olive oil
2 tablespoons butter
⅓ cup hoisin sauce
⅓ cup orange juice
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onions
¼ cup chopped cashews

Steps:

  • Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
  • Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear. Set aside, and keep warm.
  • Stir hoisin sauce and orange juice into the skillet, and scrape up the browned bits. Mix in mandarin oranges, green onions, and cashews, Return chicken to the skillet. Continue cooking until all ingredients are heated through.

4 tablespoons low-sodium soy sauce, divided
2 teaspoons toasted sesame oil, divided
1 pound skinless, boneless chicken breasts
1/2 head napa cabbage, thinly shredded (about 6 cups)
1/4 head red cabbage, shredded (about 2 cups)
1 large carrot, shredded (about 2 cups)
3 scallions, trimmed and thinly sliced, greens included (about 1/2 cup)
1 (8-ounce) can sliced water chestnuts
1 (11-ounce) can Mandarin oranges in water, drained
1/3 cup rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger
2 tablespoons canola oil
2 tablespoons brown sugar
1 1/2 teaspoons chili-garlic sauce or chili sauce
1/4 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine 1 tablespoon soy sauce and 1/2 teaspoon sesame oil and brush onto chicken breasts. Arrange in a baking dish and bake until juices run clear, about 13 to15 minutes. Remove from oven, cool completely, and cut into 1/4-inch slices.
  • In a large bowl, combine Napa cabbage, red cabbage, carrot, scallions, water chestnuts, Mandarin orange and sliced chicken. In a separate bowl, whisk together 3 tablespoons soy sauce, vinegar, garlic, ginger, oil, 1 1/2 teaspoons sesame oil, brown sugar and chili sauce. Pour dressing over salad and toss to combine. Divide among bowls and top each serving with 2 teaspoons toasted almonds.

1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon canola oil
1 can (11 ounces) mandarin oranges
1 small onion, chopped
1/8 teaspoon crushed red pepper flakes
Hot cooked rice
2 teaspoons cornstarch
2 tablespoons water
1/4 cup minced fresh cilantro

Steps:

  • In a small bowl, combine the salt, ginger and pepper. Sprinkle over both sides of chicken. In a nonstick skillet, saute chicken in oil for 2 minutes on each side or until browned. 1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can sliced water chestnuts, drained
4 teaspoons brown sugar
2 tablespoons white vinegar

2 teaspoons cornstarch, dissolved in
1/4 cup water
1 1/2 cups chicken broth or 1 1/2 cups chicken stock
1 1/2 lbs boneless skinless chicken breasts, trimmed and fileted

MANDARIN MARINADE:
2/3 pound boneless skinless chicken breasts
2 tablespoons soy sauce
1 tablespoon shao hsing wine or dry sherry
2 teaspoons cornstarch
2 teaspoons vegetable oil
COOKING:
2 tablespoons oil
1/2 cup sliced water chestnuts
1/3 cup sweet and sour sauce
1/4 teaspoon crushed red pepper
1 can mandarin oranges - (11 oz) drained
3 green onions cut 2" slivers

Steps:

  • Combine marinade ingredients in a medium bowl. Remove skin from chicken and cut meat into bite-sized pieces. Place in the bowl with the marinade and set aside. Place a wok or large skillet over high heat until hot. Add oil, swirling to coat sides of pan. Add chicken; stir-fry for 2 minutes or until chicken turns opaque. Add water chestnuts, sweet and sour sauce and crushed red pepper; cook for 1 minute. Gently stir in half of the mandarin oranges and half of the green onions. Transfer to a serving platter. Garnish with remaining mandarin oranges and green onions. This recipe yields 2 servings.
