2 tablespoons unsalted butter
1 medium white onion, finely chopped
1 cup (8 ounces) cream cheese, softened
2 (10-ounce) boxes frozen spinach, thawed and squeezed dry
1 teaspoon freshly grated nutmeg
Kosher salt and ground white pepper

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
  • BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

It doesn't get much easier than this... no sautéing and hardly any chopping - everything is cooked in one dish before putting in the oven (I even bake it in my toaster over). A great way to use up spinach that's been in the fridge for a while. Use whole-wheat pasta for extra nutrients. You could probably sub rice for the pasta. Add a dash of hot sauce to jazz it up a bit. Measurements and cooking times are approximate.

2 cups vegetable broth
2 cups fresh spinach
1 large garlic clove, minced
1/4 cup fresh parsley, chopped (optional)
1 cup whole-wheat elbow macaroni, uncooked
2 -3 teaspoons tapioca starch (or cornstarch)
2 tablespoons cream cheese
4 eggs
1/2 cup cheddar cheese, grated
1 tablespoon breadcrumbs (optional)

Steps:

  • Preheat oven to 350°F.
  • Combine broth, spinach (don't bother chopping) and garlic in a saucepan; bring to a boil. Cook 5 minutes until spinach is wilted. Cream using a stick blender.
  • Bring back a boil, add pasta, and simmer until pasta is al dente.
  • Dilute starch in an equal amount of cold water. Stir into pot along with cream cheese. Simmer until thickened; remove from heat.
  • In a separate bowl, whisk eggs together. Stirring constantly, add several spoonfuls of the mix to the eggs (to warm them up). Stir into remaining pasta & sauce mix. Pour into an oven-safe dish (a 9-inch pie plate is the perfect size).
  • Mix breadcrumbs with grated cheese and sprinkle over top. Bake 10 approximately 10 minutes, or until a toothpick inserted in centre comes out clean. Turn oven to broil and cook until cheese turns golden - watch constantly.

1 (10 ounce) package frozen chopped spinach, thawed and drained

SPINACH
1 to 1 1/2 lb baby spinach, fresh (i purchase it by the bag)
2 Tbsp olive oil
GARLIC CHEESE SAUCE
4 Tbsp butter
3 Tbsp flour
4 Tbsp garlic, minced (or you can use 2-3 tbsp garlic powder)
3/4 to 1 c milk (more or less to get the right consistency)
1/4 c evaporated milk **
1/8 c parmesan cheese

Steps:

  • 1. In a non-stick skillet, heat oil.
  • 2. On Medium heat, add handfuls of spinach leaves, adding more as it cooks down, until all spinach leaves are dark & wilted. Remove from heat.
  • 3. Meanwhile, in a small saucepan over Medium heat, melt butter.
  • 4. Add flour. Adjust amount, if needed, to make a rue.
  • 5. Add garlic. Whisk until smooth.
  • 6. ** Add milks. (You can use more or less of each kind of milk to suit your taste. I like to add some Evap. milk to the regular to add creaminess.)
  • 7. Whisk in Parmesan cheese until smooth & heated through.
  • 8. Add spinach to serving dish. Add garlic cheese sauce. Mix well. Serve.

1 tsp salt

  • 1. Preheat oven to 350 degrees and melt butter in a 9x13 in pan.

  • 3. Add milk, flour, baking powder and salt. Beat until well blended.

  • 5. Bake 40 to 35 minutes or until set. Let stand 10 minutes before cutting into triangles or squares.
  • 6. You can make this ahead, freeze in and then reheat it. Here's how. After baking cool completely and cut into squares. Transfer squares to a cookie sheet and place in the freezer until all squares are frozen solid. Place frozen squares in a food storage bag. To reheat. Place frozen squares on a cookie sheet and place in a 325 degree oven for 15 minutes. Enjoy!

Using prepared Alfredo sauce this version is deceptively simple to make, yet so incredibly delicious, the crispy tart features Tyson® Crispy Chicken Strips, caramelized onions and fresh spinach. 2 1/2 Tyson Crispy Chicken Strips
2 Tablespoons butter
1 sweet onion, diced
11 Ounces fresh spinach
1 egg
2 14-ounce pie crusts
1/4 Cup Alfredo sauce
1/4 Cup Asiago cheese, shredded
2 Tablespoons balsamic glaze

Steps:

  • Prepare Crispy Chicken Strips according to package directions. Set aside, but keep oven on. Slice Crispy Chicken Strips when cooled.
  • Heat butter in a large skillet over medium heat. Add onions, cover and cook for 10 to 15 minutes stirring often until onions are tender. Add spinach to the pan and heat for an additional 5 minutes stirring often until spinach has wilted.
  • In a small bowl, whisk together 1 egg with 1 tablespoon of water. Set aside.
  • To assemble, lay out pie crusts on parchment lined baking sheets. Spread half of the Alfredo sauce in the middle of the crusts leaving 1½ inches around the edge without any cheese sauce. On top of sauced pie crusts, evenly divide the caramelized onions and spinach, Crispy Chicken Strips, Asiago cheese and drizzle with balsamic glaze. Fold outside edges up and in over filling, center will remain without pie crust covering. Crimp with your fingers as you move around so that pie crust holds the filling. Brush egg wash over the edges of the crust and bake for 40 to 45 minutes or until crust is golden brown.
