EASY BREAKFAST STRATA
We start this breakfast casserole the night before so it's ready for the oven the next day. That way, we don't have to deal with the prep and dirty dishes first thing in the morning! -Debbie Johnson, Centertown, Missouri

Steps:
- Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. With a slotted spoon, place sausage mixture over bread. Sprinkle with cheese., In a large bowl, whisk together eggs, mustard and milk; pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats., Bake, uncovered, until a knife inserted in center comes out clean, 30-35 minutes. Let stand 5 minutes before cutting. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

BREAKFAST STRATA: EASY RECIPE FOR A BRUNCH CROWD
Steps:
- Butter a standard (9x13) casserole dish. Combine eggs, milk, cream, herbs and parmesan or romano thoroughly (If you're using whole milk you don't need the cream--just replace it with more milk). Heat a tablespoon or so of oil in a medium skillet. Sauté the sausage over medium-high heat until browned. Remove from pan. Add a little bit more oil and the shallots or scallions and the pepper. Sauté until slightly softened. Combine with sausage. Assemble the strata. Place a layer of bread slices on the bottom of the dish. Tear little bits off extra slices to fill in gaps. Cover with half the sausage/pepper mixture. Pour half the egg mixture over and than sprinkle on half the cheese. Repeat. Top with cherry tomatoes. Cover and refrigerate until needed, at least 20 minutes. Uncover and bake at 350 degrees 45 minutes to 1 hour. Variation Ideas: Mediterranean strata: Use a combination of artichoke hearts, olives, sun-dried tomatoes, feta cheese and other Mediterranean ingredients. Swiss strata: How about onions, mushrooms, spinach and Swiss cheese? Simple strata: Steamed broccoli and tomatoes.
EASY BREAKFAST STRATA
This is my daughter's favorite egg dish. It has less fat, salt, and calories, but all the taste of the original version. Instructions are easy enough for my beginning cook to make on her own with minimal supervision.

- Preheat oven to 325 degrees F (165 degrees C). Prepare a 13x9-inch baking dish with cooking spray. Put an oven rack in the middle tier of the oven.
- Beat eggs, half-and-half, and black pepper together in a bowl until smooth.
- Arrange 6 bread slices into the bottom of the prepared baking dish. Spread about half the ham and half the spinach over the bread. Sprinkle half the green onions and half the Cheddar cheese over the ham and spinach. Spread the bread cubes over the layers and pour 1 cup of the egg mixture over everything. Repeat layering of ham, spinach, green onions, and Cheddar cheese and pour remaining egg mixture over the top.
- Cover dish with plastic wrap. Put some soup cans atop the plastic wrap to help keep ingredients immersed in liquid; refrigerate at least 15 minutes.
- Bake in preheated oven until the liquid sets in the middle of the dish, about 50 minutes. An instant-read thermometer inserted into the center should read 155 degrees F (68 degrees C). Let the casserole stand for 8 to 10 minutes before serving.

EASY BREAKFAST STRATA
It's like bread pudding, only with bacon. Yummy. You can add pretty much anything to this and it works. Hashbrowns, sautéed veggies, mushrooms, spinach.. your imagination is the limit! Serve with a green salad for a brunch or casual dinner.

Steps:
- In a 9 x 13 greased pan, layer bread cubes, sausage, bacon and cheese.
- In a separate bowl, beat eggs with the 1/2 and 1/2, salt, pepper, and mustard. Pour over the layered ingredients and make sure to press everything down into the custard mixture.
- Cover and refrigerate over night. If your in a hurry you can weigh the top down with cans and cut the wait time down to about 2 hours (ok, so not so much a hurry but it's faster than overnight!)
- Take out of refrigerator and let set at room temperature 30 minutes before baking 50-60 minutes at 350 degrees. Knife inserted into the center should come out clean.
