BISQUICK CINNAMON MUFFINS



Bisquick Cinnamon Muffins image

Mix up a quick batch of Bisquick cinnamon muffins, dipped in butter and cinnamon sugar. Simple and easy, melt-in-your-mouth, breakfast and brunch recipe!

3/4 cup cane sugar
2 teaspoons ground cinnamon
2 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract
2 3/4 cups Bisquick Mix
2/3 cup cane sugar
2 teaspoons ground cinnamon
1/4 cup salted butter (melted)

Steps:

  • Pre-heat the oven to 350° F, and grease muffin tins or line them with cupcake liners.
  • In a small mixing bowl, mix together the sugar and cinnamon.
  • Add the eggs to the cinnamon sugar mixture, and mix well.
  • Next add in the milk and vanilla extract, continuing to mix well.
  • Add in the Bisquick mix, and mix everything together until blended.
  • Fill each of the greased or lined muffin cups about 1/2 to 2/3 full with muffin batter.
  • Bake at 350° F for about 25 to 30 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  • Allow them to cool in the muffin tin for about 5 minutes; then take a knife, run it around the edge of each muffin, and pop them out onto a wire rack for dipping.
  • In a small bowl, mix the sugar and cinnamon together.
  • Dip the top of each warm muffin in the melted butter.
  • Then dip every muffin in the cinnamon sugar mixture, rolling the top around to make sure it's covered with the slightly crispy cinnamon sugar topping.
  • Place the muffins back on the wire rack to finish cooling, or serve them while warm.

My husband thinks I should open a muffin shop Ha Ha, so I have been playing with different types of muffins. Today I felt like oatmeal raisin muffins.

1 egg
2 c bisquick
3/4 c quick cooking oats
1 Tbsp canola oil
1 tsp cinnamon
1 tsp vanilla extract
1 c raisins
1/3 c sugar
2/3 c milk

Steps:

  • 1. Pre heat oven 400 degrees, line a muffin pan with cupcake liners
  • 2. slightly beat the egg, add all the remaining ingredients, mix until the ingredients are wet, don't over mix.
  • 3. I use an ice cream scoop and scoop the mixture in the cupcake liners, I got 7 muffins out of this batter, depends on how big or small you want the muffins.
  • 4. Place in the oven and bake 18-20 mins, until golden brown. I will let you know how the family likes it when they get up, which will be soon when they smell these....mmmm

3 cups Quaker Old Fashioned Oats
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 tsp salt
1 1/2 cups skim milk (or milk of your choice)
2 eggs (beat)
1 small banana (mashed)
1 teaspoon vanilla extract
1/3 cup raisins
2 tbsp brown sugar

Steps:

  • Preheat oven to 350°F and line a 12-cup muffin tin liners (silicone are my favorite but paper ones are fine as well).
  • Mix together dry ingredients: oats, cinnamon, baking powder and salt.
  • In a separate bowl, whisk together milk, eggs, banana, and vanilla.
  • Pour wet ingredients into dry ingredients. Stir in raisins.
  • Spoon oat mixture evenly into 12 muffin cups.
  • Sprinkle brown sugar evenly on top of muffins.
  • Bake for 30 minutes, or until a toothpick comes out clean.
  • Store in a container in the fridge or freeze in a large ziplock.

This is adapted from "So Quick with New Bisquick" published in 1967. Mom was an avid Bisquick user and Heaven help me I just love the stuff. I actually only got 11 muffins from this recipe. My 7 year old loved these too.

3/4 cup quick-cooking oats
1 egg
2/3 cup milk

Steps:

  • Heat oven to 400.
  • Grease 12 muffin cups or use paper liners.
  • Mix all ingredients with a spoon to combine.
  • Beat for about 30 seconds.
  • Fill muffin cups 2/3 full with batter.
  • Bake 15 to 20 minutes.
  • Remove from pan immediately, split and butter each muffin.
  • Cold muffins warm well in the microwave (20-30 seconds on high).

  • In a large bowl, combine oats and buttermilk; let stand 5 minutes. Stir in eggs.
