EASY SHREDDED BEEF GREEN CHILE ENCHILADA CASSEROLE
I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

Steps:
- In large frying pan or sauce pan, combine shredded beef, diced green chiles, half of the green enchilada sauce and full can of mushroom soup.
- Cook over medium heat until heated through
- Pour about 2 Tablespoons of remaining enchilada sauce in bottom of the casserole dish.
- Place 1 tortilla in casserole and cover with prepared sauce from pan.
- Sprinkle small layer of cheese over sauce.
- Place another tortilla over sauce and continue layering until last tortilla is on top.
- Pour remaining sauce over complete casserole and cover the top with remaining cheese.
- Cover and bake in 350 degree for about 30 minutes or until nice an bubbly .
- Let sit about 10 minutes to allow to set before serving.
- Top with sour cream if desired.

For this version of stuffed bell peppers, I used the fillings for ground beef enchiladas. Tasty and filling, and very easy! and even better the next day. - Preheat oven to 350ºF. Spray cooking spray in a baking pan big enough to hold all the halved peppers lying flat cut side up. Set aside.
- Cut bell peppers in half lengthwise (down through the stem, or just beside the stem). Remove seeds and membranes. Put peppers in a microwaveable dish and splash with a tablespoon of water. Cover tightly and microwave on high for 3 minutes. Drain well, and lay the peppers out in the baking pan or casserole big enough for them to lay flat with their cut sides up.
- Brown ground beef with onion in a large skillet. Give the meat a light sprinkle of salt and pepper while cooking. Cook until onions are translucent and water from meat has evaporated. Drain the grease.
- While meat is cooking, drain olives and set aside 6 halves or slices to use as garnish.
- Add garlic to cooked meat, and continue cooking for another minute. Add enchilada sauce, tomato sauce, drained olives, remaining spices, and 1 cup of the cheese to the hamburger. Stir until cheese is completely melted and mixture has thickened somewhat.
- Divide enchilada stuffing evenly among pepper cups. Sprinkle remaining cheese over the top. If you reserved any of the olive halves/slices, put them on top of the cheese. This is just for presentation, so if you forgot to set some aside, don't worry about it.
- Bake for 30 minutes, or until cheese on top begins to brown. Remove from oven, and sprinkle with chopped cilantro. Serve.
- Leftovers may be frozen.
- Notes:
- • I stuffed both red and green bell peppers, and I like the red much better for this dish. They give it a sweetness the green does not impart. The green bell peppers have 1 less carb per serving. To improve macros, I recommend serving with some avocado slices on the side.
- • Use any enchilada sauce that is gluten free, sugar free, and has no added tomato sauce.
- • You'll be using only 1/2 of a small can of tomato sauce. Be sure you use one with no added sugar. You can freeze the other half in a freezer bag and save to use next time, or make 2 batches at one time and freeze the extras to be warmed and served later.

EASY BEEF ENCHILADA
This is a sure hit for Mexican food lovers, potlucks and when you don't have time to make authentic enchiladas. I'm not sure where I got this, as the first time I made it was over 25 years ago. I believe it came from a ladies club cookbook they sold for money for charities. You can use hot peppers, mild or leave them out all together. The topping is so rich 'n creamy and you don't need to mix it. This is my family's favorite 1 dish meal. Very easy to prepare.

- Heat oven to 350º and spray a 9x13 pan.
- Heat skillet and fry and crumble hamburger with onion.
- Add 1 can of diced tomatoes (rotel if you want it hot) and canned peppers.
- Add taco seasoning.
- As this simmers, line pan with 6 of the corn tortillas,(if using 14 tortillas, fill in the holes with torn pieces of the 7th one) pour in hamburger mixture, drain off extra oil.
- Place 6 more corn tortillas on top, using torn pieces of the last tortilla (if using 14) to fill in the holes. Spread 1 can of cream of chicken soup over top of tortillas.
- Next, sprinkle the 2 cups of grated cheese over soup.
- Pour 1 cup of milk evenly over cheese, no need to mix.
- Cover with foil and bake 45 minutes.
- If you want the topping more firm, remove foil and bake 5 minutes more.
- Serve with warm buttered flour tortillas and a side of guacamole.
