2-1/4 cups all-purpose flour
2 teaspoons sugar
3/4 teaspoon salt
1 cup cold unsalted butter, cubed
6 to 8 tablespoons ice water
FILLING:
1 package (8 ounces) cream cheese, softened
1-1/4 cups sugar, divided
1 teaspoon vanilla extract
9 cups thinly sliced peeled McIntosh apples (about 11 medium)
1/2 cup all-purpose flour
1 teaspoon apple pie spice
1/4 teaspoon salt
1 can (14-1/2 ounces) pitted tart cherries, drained
2 tablespoons butter

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., Preheat oven to 425°. For filling, in a small bowl, beat cream cheese, 1/4 cup sugar and vanilla until blended. In a large bowl, toss apples with flour, pie spice, salt and remaining sugar. Stir in cherries., On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry even with rim., Spread cream cheese mixture onto bottom of pastry. Add apple mixture; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake 45-50 minutes or until crust is golden brown and filling is bubbly. Cover top loosely with foil during the last 10-15 minutes if needed to prevent overbrowning. Cool on a wire rack. Refrigerate leftovers.

2 (21 ounce) cans apple pie filling, coarsely chopped
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 (8 ounce) package reduced-fat cream cheese
½ cup confectioners' sugar
¼ teaspoon ground cinnamon
10 small flour tortillas
½ cup white sugar
½ cup brown sugar
⅓ cup water
⅓ cup butter
1 tablespoon cornstarch
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apple pie filling, 1 teaspoon cinnamon, and nutmeg in a bowl.
  • Beat cream cheese, confectioners' sugar, and 1/4 teaspoon cinnamon in a separate bowl until whipped and smooth. Stir apple pie filling mixture into cream cheese mixture.
  • Spoon apple-cream cheese mixture into each tortilla; roll tortilla around filling. Arrange rolled tortillas, seam-side down, in a 9x13-inch baking dish.

1 teaspoon almond extract
1 pinch salt

1/2 cup granulated sugar, for filling
1/4 cup granulated sugar, for top

4 tablespoons butter, melted (1/2 stick)
12 ounces packaged cream cheese, room temperature (1 large 8 ounce block plus 1 small 4 ounce block)

Steps:

  • Preheat oven to 350. Line the bottom of a greased 8×8 pan with four of the crescent rolls, spreading out to cover the bottom entirely. In large mixing bowl, place cream cheese and 1/2 cup sugar.

2/3 cup thinly sliced peeled tart apple (1/8-inch slices)

4 ounces cream cheese, softened
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1 package crescent rolls
1 can apple pie filling
1/4 cup (1/2 stick) unsalted butter, melted
Mixture of cinnamon and sugar

Steps:

  • Preheat oven to 350°F. Spray an 8" x 8" baking pan with non-stick spray and set aside. Hand whip the cream cheese, sugar and vanilla extract together until well blended. Unroll the package of crescent rolls and cut into even halves. Pinch together the seams and place one of the halves into the bottom of the baking pan. Spread the cream cheese evenly on top of the dough and top that with the apple pie filling. If you are using a low sugar or sugar free apple pie filling, you'll probably want to add some sugar or brown sugar to the apples. Top with the other half of the dough and pour the melted butter all over. Sprinkle generously with the cinnamon sugar. Bake uncovered at 350°F for 30 minutes until golden brown. Let cool long enough to set the filling before cutting. Cook's Notes: Variations: Experiment with other pie fillings - cherry and blueberry are good substitutes with a plain sprinkling on top of regular granulated sugar instead of the cinnamon sugar.
