This isn't so much of a recipe as it is a method. I had these at my friends house and they were awesome. I personally love peaches on mine, but you can substitute any flavour cream cheese and any type of fruit(canned or fresh)you like! Fresh strawberries and strawberry cream cheese is delicious!

8 frozen waffles
3 ounces cream cheese
14 ounces canned peaches or 14 ounces fruit
1 tablespoon brown sugar
whipped cream

Steps:

  • Toast Waffles.
  • Cover with a layer of cream cheese.
  • Add a layer of fruit.
  • Sprinkle with Brown Sugar.
  • Cover completely with whipped cream.

1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

2 egg whites
2 egg yolks

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Whisk the flour, baking powder, sugar, and salt together in a mixing bowl; set aside. Beat egg whites until foamy in a separate large glass or metal mixing bowl. Whisk the egg yolks, lemon zest, and vanilla extract together in a third bowl; whisk in the milk. Stir in the flour mixture until smooth. In this recipe, I am using strawberries. But you could use most any other fruit you like that is in season...like peaches or blueberries, etc... If you make it using low fat or non fat ingredients, it can be healthy and delicious too! Kids will go for it and is a beautiful breakfast to serve to company!

Number Of Ingredients 7

4 to 12 waffles, prepared from package directions, or use frozen waffles...your choice! (whole grain waffles would be great!)
1 pt strawberries (may use frozen if desired) or use some other fruit in season...see
1 pkg 8 ounce package softened cream cheese (can use regular, low fat or fat free. i use fat-free.)
1 8 ounce tub of cool whip. (again, i use the fat-free)
1/3 c sugar (may use splenda...) add more or less to your taste... some like it sweeter than others.
1/2 c chopped pecans (or walnuts) peanuts taste good too if you have no pecans
2 6 ounce containers plain or fruity yogurt (optional) ... makes it a little creamier

Steps:

  • 1. In a food processor or electric chopper, process your strawberries (or other fruit) until no chunks remain. In a mixing bowl, mix together the fruit, cream cheese, Cool Whip and chopped nuts until well-blended and smooth. Do this by hand or use electric mixer. Add sugar or Splenda as desired. It should be sweetened, but many people prefer it to be not as sweet as others like it. How sweet you want it to be is up to your discretion.
  • 2. Store in a plastic or glass dish with a tight fitting lid and refrigerate at least 2 hours before serving. It is best refrigerated overnight. Prepare waffles according to the package directions, or prepare frozen waffles. Spoon this chilled mixture on top of each waffle and serve.
  • 3. NOTE* - In this recipe, I use strawberries, but you could use some other kind of fruit. Peaches, apples, ripe plums, blueberries, canned pumpkin (or canned sweet potatoes!)bananas, etc...could be used. Experimentation can be fun! If you don't use all of this mixture, it can be refrigerated. Best to use within a few days. Also, I like to serve this on a plain sliced and toasted bagel. This creamy topper makes a toasted bagel taste heavenly! Bon Apetit' Y'all!
