1/2 cup apricot preserves
8 frozen waffles
4 slices deli turkey
4 slices deli ham
4 slices Havarti cheese (about 3 ounces)
4 bacon strips, cooked
2 tablespoons butter, softened
Maple syrup

Steps:

  • Preheat griddle over medium heat. Spread preserves over four waffles. Layer with turkey, ham, cheese and bacon; top with remaining waffles. Lightly spread outsides of waffles with butter., Place on griddle; cook 4-5 minutes on each side or until golden brown and heated through. Serve with syrup for dipping.

For 12-year-old Jeffrey (a.k.a. JD), cooking is all about being adventurous, which explains why he tried putting Hawaiian rolls in a waffle iron for our Kid Cooks contest. JD is admittedly obsessed with the rolls ("They're one of my favorite foods!" he says), and he wanted to make something new with them. His invention was a big hit in our test kitchen!

Number Of Ingredients 9

4 slices pork roll
2 tablespoons maple syrup
1/2 teaspoon hot sauce
1 tablespoon ketchup
Butter cooking spray
16 Hawaiian sweet rolls (from a 24-pack)
4 large eggs
4 slices American cheese
Salt and pepper

Steps:

  • Preheat the oven to 350˚ F. For the pork roll: Prep a cookie sheet with a piece of parchment paper. Lay the pork roll slices on the parchment paper evenly spaced apart. Using 1 tablespoon of maple syrup, brush both sides of the pork roll generously with syrup. Bake for 15 minutes, flipping one time halfway through. The pork roll should be nicely browned on both sides. While the pork roll is cooking, prep the sauce and waffles.
  • For the sweet and tangy sauce: Mix the hot sauce, ketchup and 1 tablespoon maple syrup in a bowl. Set aside.
  • For the waffles: Heat a waffle iron to medium high. Spray with cooking spray. Take 4 Hawaiian rolls in a square, being careful not to pull them apart, and place on the waffle iron. Close the waffle iron and cook for 2 to 3 minutes, or until golden brown. Carefully remove and repeat three more times to have a total of 4 waffles.
  • Heat a nonstick pan and spray with cooking spray. Carefully crack the eggs into the heated pan. After 3 to 4 minutes, break the yolks and cook for an additional minute. Flip when the edges of the whites get crispy and cook on the other side for an additional 2 to 3 minutes. Add 1 slice of American cheese to each egg. Let the cheese melt, then remove from the heat.
  • To assemble the sandwiches, generously spread the sweet and tangy sauce on all 4 waffles. Layer 2 eggs and 2 slices of pork roll on top of 1 waffle. Season with salt and pepper. Cover with a second waffle to form a sandwich. Repeat for the second sandwich. Cut in half and enjoy!

These breakfast sandwiches were a big hit in the Test Kitchen. They have the perfect balance of savory and sweet. In our mind, putting an egg on any sandwich and it's an instant winner. We love the basic bacon, egg and Swiss cheese flavor combination. Dipping the sandwich into syrup was so good and created a sweet/salty flavor...

WAFFLE BATTER
2 c self-rising flour
2 Tbsp sugar
3 large eggs, beaten
1 tsp vanilla
1/4 c oil
2 c milk or buttermilk
FOR EACH SANDWICH
1 slice Swiss cheese
2 slice bacon, cooked
1 large egg, over-medium
powdered sugar
maple or strawberry syrup

Steps:

  • 1. Preheat waffle iron and brush with oil or shortening.
  • 2. For waffle batter, place flour and sugar in a large mixing bowl. Make a deep well in the center and place the beaten eggs and all the liquid ingredients into the well.
  • 3. Beat by hand until all are combined and smooth.
  • 4. Prepare waffles according to the manufacturer's instructions. Cook them until they are still a bit soft, not crisp. As they get done, remove to a plate and cover with foil to keep warm.
  • 5. While waffles are cooking, fry bacon to desired doneness.
  • 6. Cook eggs, one at a time, in a bit of the bacon fat, turning once to an over-medium consistency.
  • 7. Assemble sandwiches: Cut one waffle in half and place one half on serving dish. Layer a slice of Swiss cheese on the waffle.
  • 8. Then stack on 2 slices of bacon and an over-medium egg.
  • 9. Top with the other half of waffle and sprinkle with powdered sugar.
  • 10. Serve with syrup on the side, if desired.
