CREAMY GERMAN CUCUMBER SALAD



Creamy German Cucumber Salad image

A thoroughly authentic Creamy German Cucumber Salad recipe to accompany your summer dinners, BBQ's, potlucks and picnics - or enjoy it any time of year!

2 large cucumbers ((about 1 1/2 pounds or 700 grams), sliced to desired thinness )
1 teaspoon salt
1/4 cup sliced yellow onion
1 clove garlic (, minced)
For the Creamy Dressing:
3/4 cup sour cream
1/4 cup plain yogurt
2 tablespoons white wine vinegar
2 tablespoons chopped fresh dill ((fresh is best but can substitute 2 teaspoons dried dill))
2-3 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Place the sliced cucumbers in a bowl and toss with the teaspoon of salt. Let sit for about 30 minutes then drain thoroughly. Add the sliced onions to the cucumbers.
  • To make the dressing: Place all remaining ingredients in a small bowl and stir to combine. Pour the dressing over the cucumbers and onions and stir to combine. Add more salt and pepper to taste.Cover and chill for at least 2 hours (4 hours if using dried herbs) before serving.

2 large seedless English cucumbers, sliced thin
1 extra large onions, sliced thin
¼ cup chopped fresh dill
3 tablespoons white vinegar
3 tablespoons vegetable oil
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Lightly toss cucumber slices, onion slices, and chopped dill together in a large bowl.
  • Pour vinegar over cucumber mixture; toss to coat.
  • Pour oil over cucumber mixture; toss to coat.
  • Season with salt and black pepper.

2 English cucumbers (2 pounds)
1 small red onion
1 1/2 tablespoons salt
1 tablespoon plus 1 teaspoon white wine vinegar or sherry vinegar
1 teaspoon sugar
2 teaspoons dried dill or 2 tablespoons fresh

Steps:

  • Slice the cucumber lengthwise, remove the seeds, and slice thinly. Thinly slice the onion.
  • In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes. Press the liquid out of the vegetables and rinse well with cold water.
  • In a medium bowl combine the vinegar and sugar and stir well. Add the cucumber mixture and toss to coat. Stir in the dill.

2 medium or large cucumbers
1 teaspoon salt
Pinch of sugar
1/4 cup white vinegar
Dash of garlic powder
1/2 cup water
Sweet paprika
Black pepper

Steps:

  • 1. Peel the cucumbers and slice them very thin. Sprinkle with salt and let stand for 30-60 minutes with a plate and a 5-pound weight on top. Squeeze out the water on a paper towel.
  • 2. Combine the sugar, vinegar, garlic powder, and water. Add the cucumbers and marinate for a few hours. To serve, sprinkle paprika on half of the salad and black pepper on the other half.
