3 ½ pounds corned beef brisket with spice packet
2 (12 fluid ounce) cans or bottles dark beer (such as Guinness®)
1 sweet onion (such as Vidalia®), coarsely chopped
4 ribs celery, leaves included, coarsely chopped
2 carrots, coarsely chopped
3 large cloves garlic
1 teaspoon whole black peppercorns
3 bay leaves
water to cover

Steps:

  • Place brisket fat-side up in a large stockpot, along with spice packet and any juices remaining in packaging. Add beer, onion, celery, carrots, garlic, peppercorns, bay leaves, and water to cover; bring to a low boil over medium-low heat. Cover and simmer for 3 1/2 hours. Remove from heat; and let meat rest in cooking liquid, about 20 minutes more.
  • Transfer brisket to platter; cut into thin slices across the grain.

Number Of Ingredients 21

4 lb boneless beef chuck roast trimmed, cut into 1½" cubes (have the butcher do it for you)
pepper, to taste
1 lb bacon, cut into ¼" strips & cooked crisp
1 bag(s) diced frozen onion, unthawed
8 oz can(s) tomato sauce
8 clove garlic, minced
1 tsp thyme, dried
1/3 c all-purpose flour
4 c burgundy or pinot noir wine, divided
2 can(s) reduced sodium chicken stock or broth
1/2 c reduced sodium soy sauce
2 bay leaves
1/2 stick butter
1 pkg frozen pearl onions, thawed
1/2 c water
2 Tbsp sugar
2 - 16 oz pkg baby bella mushrooms, whole, cut into quarters
SERVE WITH:
mashed potatoes
egg noodles
white rice

Steps:

  • 1. Season the beef with pepper & put it in your slow cooker.
  • 2. Cook bacon in a skillet until crisp, about 8 - 10 minutes.
  • 3. Put your diced onions in the skillet with the tomato paste, garlic & thyme until onions are unfrozen & soft, about 3 minutes.
  • 4. Put in your flour & stir for 1 minute to get the flour taste out of it.
  • 5. Stir in 2 C wine & get all the bacon bits off the bottom of the pan, cook 2 minutes.
  • 6. Pour into the slow cooker. (Don't worry about room for the rest of the ingredients. This will cook down enough to add the other stuff later).
  • 7. Pour in broth, soy sauce (give a quick stir) & bay leaves.
  • 8. Cover & cook for 9 - 10 hours on LOW.
  • 9. About 30 minutes before it's done, put your pearl onions, water, butter & sugar in a pan & sauté until the onions are soft, about 5 minutes.
  • 10. Pour in 2 C wine & reduce, about 5 minutes.
  • 11. Throw in the mushrooms & sauté about 10 minutes.
  • 12. Throw it all in the slow cooker & let it cook for about 15 more minutes.
  • 13. Serve over mashed potatoes, egg noodles or white rice with a nice glass of wine & you will be happy happy happy!

DRUNKEN BEEF TENDERLOIN

Last time I made this was for a very elegant "After-Rehearsal Dinner" for one of my favorite couples. It was hit of course. I served with "Garlic Mashed Chive Potatoes" and fresh steamed green beans. Of course we had a great salad and wonderful desserts to follow.

2 c bourbon
1 clove garlic
2 Tbsp fresh lemon juice
1 Tbsp sugar
1 tsp kosher salt
3 whole cloves
1 tsp coleman's dry mustard
1/2 tsp ground ginger
2 Tbsp worcestershire sauce
4 Tbsp orange marmalade
1 3-4 lb center-cut beef tenderloin, trimmed
1 1/4 c olive oil, extra virgin
freshly ground black pepper

Steps:

  • 1. Combine, bourbon, garlic, lemon juice, sugar, salt, cloves, dry mustard, Worcestershire sauce, and marmalade in a saucepan; heat until hot, stirring until well blended. Do NOT boil. Remove marinade from heat and cool completely.
  • 2. Place the beef tenderloin in a zip-top bag and add cooled marinade. Close bag and let marinate in the refrigerator 18-24 hours.
  • 3. Preheat oven to 425-degrees. Heat olive oil in skillet. Remove tenderloin from marinade and rub with freshly ground black pepper.
  • 4. Brown beef on all sides in the oil. Remove from skillet and place on a well-oiled rack in a roasting pan. Pour 1/2 cup marinade over the beef.
  • 5. Roast until meat thermometer registers 125-degrees for rare or 140-degrees for medium. (total time about 25-30 minutes, so watch your thermometer) Let stand at least 10 minutes before slicing.

2 pounds Beef
1/4 cup Vegetable Oil
6 cloves Garlic Cloves
1 tablespoon Allspice
32 ounces Beef Stock
2 tablespoons Tomato Paste
1 tablespoon Thyme
1 tablespoon Worcestershire Sauce
2 l Bay Leaves
1/2 - 1 cups Cabernet Sauvignon or similar rich red wine
1/2 - 3/4 cups Jack Daniels or similar Kentucky Bourbon
1/2 cups Black Coffee (liquid)
1 tablespoon Dark chocolate pieces or chocolate syrup
2 cups Onion chopped (separated)
5-6 Potatoes (Russet or Yukon)
1/3 pound Green Beans (cut to thirds)
3 Carrot - peeled and sliced
2 sprigs Parsley - Fresh (garnish only)

Steps:

  • 1. Heat oil in heavy large pot over medium-high heat. Dredge cubed beef in flour and sauté until brown on all sides, about 5 minutes.
  • 2. Add garlic and sauté 1 minute.
  • Add beef stock, ½ of the onions, carrots, tomato paste, allspice, thyme, Worcestershire sauce and bay leaves. Stir to combine.
  • 3. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.
  • 4. Add coffee, chocolate, whiskey and wine, potatoes, and balance of onions. Simmer about 40 minutes uncovered until gravy thickens to the point it clings to a spoon. Adjust seasonings to taste. Should be a complex slightly sweet beef gravy.
  • 5. Add beans cut to about thirds. Simmer uncovered until vegetables and beef are very tender, about 40 minutes.

16 ounces pepperoncini peppers, Med or 16 ounces pepperoncini peppers, Mild
3 beef bouillon cubes
1 teaspoon garlic powder
12 ounces beer, Your choice
12 ounces water
1 green pepper, sliced
12 hoagie rolls
12 slices muenster cheese (optional)

Steps:

  • If You Follow Each Step Of These Directions This Recipe Will Turn Out To Be delicious.
  • Take the can of beer and take one big drink from the can.
  • Now pour the rest of the beer into bottom of crock pot.
  • Pour ONLY (8 oz) which is half of the jar of juice from pepperoncini's into the crockpot, (If You Use More than the 8 ounces The Beef Becomes To Sweet).
  • Place about 6-10 pepperoncini peppers in bottom of the crockpot.
  • Trim fat from the roast and place in crock pot on top of peppers, beer and juice.
  • Pour the 12 ounces of water over the roast into crockpot.
  • Drop in your beef bouillon cubes.
  • Cook Italian beef on low 8 to 10 hours. (better if cooked overnight).
  • When beef is tender Remove roast from crockpot set aside.
  • Remove peppers from crockpot and place the peppers into a bowl and set aside for topping sandwiches later.
  • Place roast back into crockpot and pull roast with two forks to shred.
  • Cook until 2 hour before ready to eat top shredder roast with green peppers stir gently to submerge peppers in juice.
  • To serve place a piece muenster cheese (opt) onto bottom side of open hogie roll ladle shredded beef from crock over the cheese add a little juice and enjoy.

Hey! My mom sent me this recipe- She and my dad loved it when they had it at a friend's Christmas Party last week. She had to add that yes, it has beer, but the alcohol burns off. She liked how it was flavorful but did not have a heavy ketchupy flavor. I look forward to trying it myself!

2 packages Lipton Onion Soup Mix
4 tablespoons Cavender's all purpose Greek seasoning
2 (12 ounce) cans beer

Steps:

  • Combine all ingredients and bake at 350 for 3-4 hours, or until the meat falls apart.
  • Remove any fat.
  • Tear meat apart more, and put it in a crock pot with the meat's juice.

1 lb of fresh rice noodles
1/4 lb of thinly sliced beef flank steak
2 green bell pepper
1 red bell pepper
1/2 cup of bean sprouts
3 cloves of garlic
2 tablespoon of oyster sauce
1 tablespoon of corn starch
1 tablespoon of Sriracha (optional)
2 tablespoon of Asian five spice powder
1 cup of chicken broth

Steps:

  • 1. Marinate beef with soy sauce. 2. Sauteed beef in a wok for 5 minutes under high heat with 1 tablespoon of canola oil. 3. Save beef in a bowl. 4. Cut bell peppers into 1" squares. Dice in the wok under medium heat until soft with 1 tablespoon of canola oil. 5. Add bean sprouts and sauteed for 2 minutes. 6. Save the veggies in a separate bowl. 7. Put cut rice noodles in a pot of boiling water until they separate. Strain them. 8. Mix chicken broth, five spice powder, oyster sauce, corn starch and Sriracha. Stir well. 9. In a hot wok, add the gravy mixture, then the cooked noodles, beef and veggies.
