1/4 cup slivered almonds (about 1 ounce)
1/4 cup plain fat-free yogurt
3 tablespoons low-fat mayonnaise
1 teaspoon bottled ground fresh ginger (such as Spice World, the stuff in the jar that you keep in the fridge, not ground ginger)
1/8 teaspoon crushed red pepper flakes
3/4 cup thinly sliced celery
1/4 cup chopped red onion
1/4 cup dried cherries
1/4 cup golden raisin
8 ounces roast cooked turkey breast, chopped
4 whole wheat pita bread, cut in half (6 inch)

Steps:

  • Heat a small nonstick skillet over medium-high heat. Add almonds, cook 2 minutes or until toasted, stirring constantly. Remove from heat; set aside.
  • Combine yogurt, mayonnaise, ginger and crushed red pepper in a medium bowl. Add almonds, celery and next four ingredients (through turkey), stirring well to combine. Spoon 1/3 cup turkey mixture into each pita half.

2 cups uncooked gemelli (twist) pasta (8 ounces)
1 1/2 cups cubed cooked turkey
1/2 cup dried cherries
1/4 cup slivered almonds, toasted
1 medium stalk celery, thinly sliced (1/2 cup)
3 or 4 medium green onions, chopped (1/4 cup)
3/4 cup refrigerated poppy seed dressing

Steps:

  • Cook and drain pasta as directed on package.
  • In large bowl, mix pasta and remaining ingredients except dressing. Pour dressing over mixture; toss until coated. Serve immediately, or cover and refrigerate until serving.

1 cup diced cooked turkey
2/3 cup chopped peeled apple
1 celery rib, finely chopped
1/2 cup chopped walnuts, toasted
1/4 cup golden raisin
1/3 cup non-fat vanilla yogurt
1/3 cup fat-free mayonnaise
1/2 teaspoon dried tarragon
1/2-1 teaspoon grated orange peel
1/8 teaspoon kosher salt
1 dash fresh ground pepper
4 whole-wheat sandwich buns, split

Steps:

  • In a bowl, combine the turkey, apple, celery, walnuts and raisins.
  • In a separate small bowl, combine the yogurt, mayonnaise, tarragon, orange peel, salt and pepper.
  • Pour dressing over turkey mixture and stir to coat. Spoon 1/2 cup onto each roll.

1/4 cup sliced almonds, toasted
1/4 cup roughly chopped fresh mint leaves
2 tablespoons roughly chopped fresh cilantro leaves
5 ounces washed and dried lamb's lettuce, stemmed (aka corn salad or mache)
2 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup dried tart cherries

Steps:

  • In a small skillet, toast the sliced almonds until just browned; set aside.
  • Combine the herbs and lettuce in a bowl and toss to combine; set aside.
  • In a separate bowl, whisk together oil and vinegar and season well with salt and pepper. Drizzle dressing over salad and toss to coat. Taste, adjust seasoning as needed. Top with the cherries and almonds and serve immediately.

2 cups mayonnaise (I use light mayo)
2 tablespoons Dijon mustard
1/4 cup powdered sugar, to taste
2 tablespoons champagne vinegar (Can be hard to find. Try upscale grocer)
2 tablespoons water
1/2 teaspoon pepper
1/2 teaspoon poppy seed
1 -2 teaspoon salt (Original recipe calls for 2 t, but I found that to be a little too much for my taste.)
1 lb bow tie pasta
1 tablespoon olive oil
8 ounces cooked turkey, cubed (more may be used)
3 ounces dried cherries (may use 5)
1/2 cup diced yellow onion
1/2 cup diced celery
1/2 cup sliced almonds

Steps:

  • Cook pasta, drain,& toss in olive oil.
  • Cool.
  • Combine pasta, turkey, cherries, onion, celery,& ¼ c almonds.
  • Mix in dressing to desired consistency.
  • Top with other ¼ c almonds.
  • NOTE: I tried substituting dried cranberries with cherry flavoring, but the flavor is just not the same as the dried cherries!

3 cups cubed leftover cooked turkey
2 cups shredded cabbage
3/4 cup diced celery
1/2 cup sliced green onion
1-1/2 cups chow mein noodles
1/2 cup slivered almonds, toasted
2 tablespoons sesame seeds, toasted
2/3 cup Miracle Whip
1 tablespoon milk
2 teaspoons prepared mustard
1-1/2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, toss together turkey, cabbage, celery and green onions. In another bowl, combine dressing ingredients. Pour over the turkey mixture. Chill for several hours. Just before serving, add the chow mein noodles, almonds and sesame sees; toss to mix. Yield: 6 servings.

1/4 cup dried cherries
2 celery ribs, chopped
1/4 cup honey mustard
Kosher salt and freshly ground black pepper
1/2 cup mayo
2 cups shredded roasted turkey
4 split-top hot dog buns, buttered and griddled
BBQ chips and pickle spears, for serving

Steps:

  • Mix dried cherries, celery, honey mustard and some salt and pepper in a medium bowl. Let sit to let flavors meld, 10 minutes. Add mayo and mix until incorporated. Adjust seasoning if necessary. Add turkey, then mix and season to taste.
  • Serve on split-top buns topped with crushed BBQ potato chips and pickles on the side.
