1/4 lb dried beef
2 tablespoons butter
3 tablespoons flour
3 cups milk
black pepper, to taste

Steps:

  • Melt butter in skillet.
  • Tear the dried beef into small pieces & stir into the butter.
  • Brown meat lightly.
  • Stir in flour.
  • When flour is dissolved into butter, add milk, stirring constantly.

Crock Pot Roast Beef With Mushroom and Sun-Dried Tomato Gravy image

A heavenly pot roast! The cook time includes the overnight marinating and crock pot time. Also, for those interested, one 3-oz serving of the meat and some of the potatoes and veggies is only 8 Weight Watchers points!

2 lbs lean chuck roast
1/4 cup low sodium soy sauce
2 minced garlic cloves
1 cup beef broth
1 (1/3 ounce) package dried shiitake mushrooms or 1 (1/3 ounce) package mixed dried wild mushrooms
1 tablespoon cracked black pepper
3 tablespoons sun-dried tomato paste
2 medium onions, quartered
1 (16 ounce) package baby carrots
16 small round red potatoes, washed and halved
1 tablespoon olive oil
1 1/2 tablespoons all-purpose flour
3 tablespoons water

Steps:

  • Trim the fat off of the roast.
  • Combine the soy sauce and garlic in a small bowl, and place the roast in a large Ziploc bag, pouring the soy sauce mixture on it.
  • Seal and marinate overnight, turning the bag at least once.
  • Bring the beef broth to a boil in a small saucepan.
  • Add the dried mushrooms, stir, cover and remove from heat.
  • Let sit for 20 minutes.
  • Drain the mushrooms through a coffee-filter lined sieve or cheesecloth-lined colander, reserving the broth.
  • Remove the roast from the bag, and save the remaining marinade.
  • Press the cracked black pepper into both sides of the roast.
  • Mix the marinade, mushroom broth, and tomato paste together; stir well and set aside.
  • Place the mushrooms, onion, carrots, and potatoes in a large crock pot and toss.
  • Heat the olive oil in a large skillet over medium high.
  • Add the roast and brown well on all sides.
  • Put the roast on top of the veggies in the crock pot, and pour the broth mixture over the roast and veggies.
  • Scrape the bottom of the skillet to remove the brown bits into the crock pot.
  • Cover the crock pot with the lid and cook on high 1 hour, then cook on low another 8 hours.
  • Place the roast and veggies on a serving platter and keep warm.
  • Reserve the liquid in the crock pot.
  • Place flour in a small bowl.
  • Gradually add the water and stir with a fork until well blended.
  • Add it to the broth in the crock pot, Cook uncovered for 15 minutes or until slightly thickened, stirring often.
  • Serve the gravy with the roast.

1 (10 1/2 ounce) can 98% fat-free cream of chicken soup, undiluted
8 ounces nonfat sour cream
1 (3 ounce) jar 95% fat-free dried beef (I use Hormel)
10 ounces skim milk
24 ounces boneless skinless chicken breasts
1/4 cup frozen green pea, thawed (optional)

Steps:

  • Spray 2-quart glass casserole baking disk with non-stick cooking spray.
  • Preheat oven to 250 degrees.
  • Mix soup, sour cream and milk together in a large bowl.
  • Set aside.
  • The dried beef comes rolled inside of a glass jar.
  • Leave it rolled up and cut into thin slices, then cut slices in half.
  • Lay dried beef in the bottom of the prepared casserole.
  • Place chicken on top in single layer.
  • Pour soup mixture over chicken, being sure to cover the top of the chicken, even if some of mixture runs back into pan.
  • Bake uncovered for 1-1/2 hours.
  • Remove from oven and scrape the sauce from the sides of the casserole and mix it with the unbrowned sauce, spreading some sauce over the chicken.
  • Return casserole to the oven and cook an additional 60-90 minutes, until sauce around chicken has browned slightly and is consistency of gravy.
  • Serve chicken and gravy over cooked rice or pasta.
  • To garnish, microwave peas 30 seconds; sprinkle over the chicken and rice/or pasta.
  • NOTE: If sauce thickens too much before chicken has cooked at least 2-1/2 hours, add 1/4 cup water.
  • Stir into gravy and continue cooking.
  • NOTE: For Real gravy-lovers, double the soup, sour cream and milk so you'll be sure to have enough!
  • This gravy is also delicious served over biscuits.

3 tablespoons unsalted butter
1/4 pound dried beef, pulled apart into shreds (Knauss brand is good)
2 tablespoons flour
2 cups milk
4 slices country bread or 4 buttermilk biscuits

Steps:

  • In a skillet, heat the butter until foamy. Add the dried beef and fry until edges are browned. Sprinkle with flour, stirring to coat beef with flour. Cook until flour is just starting to color, then slowly add milk, stirring to smooth any flour bits and thicken sauce. Bring to a boil and cook until there is no longer any taste of flour. Meanwhile, toast the bread. Place the toast or warm biscuits on plates and spoon gravy on top. Serve.

4 Tablespoons butter
1 2.5 oz jar or package dried beef
1/4 cup flour
3 cups milk (whole or 2% works best)
1 Tablespoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a large saucepan, melt butter over medium heat.
  • Add dried beef that has been cut into chunks or broken into little pieces.
  • Brown chipped beef in butter for 2 to 3 minutes; add flour.
  • Stir flour and beef together; the beef should clump up. Cook, stirring constantly for 1 minute.
  • Gradually add milk (about a cup at a time) while slowly stirring.
