1-1/2 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 large egg, room temperature
1/2 cup 2% milk
2 tablespoons butter, melted
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt and nutmeg. In a small bowl, combine the egg, milk and butter. Add to dry ingredients and mix well. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop dough by heaping teaspoonfuls, 5 or 6 at a time, into oil. Fry until browned, about 1-2 minutes, turning once. Drain on paper towels. Roll warm doughnut holes in confectioners' sugar.

1/2 pound jumbo lump crabmeat, picked through
2 tablespoons mayonnaise
2 teaspoons dijon mustard
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
2 teaspoons fresh lemon juice
1 scallion, thinly sliced
Kosher salt
4 slices Texas toast
4 tablespoons unsalted butter, melted
3 ounces monterey jack cheese (half grated, half thinly sliced)
1 bunch asparagus, trimmed and halved lengthwise
Freshly ground black pepper

Steps:

  • Mix the crabmeat with the mayonnaise, mustard, paprika, cayenne, lemon juice, scallion and a pinch of salt in a bowl. Set aside.
  • Preheat the broiler. Brush both sides of the Texas toast with half of the melted butter. Place on a baking sheet and broil until golden brown on top, about 3 minutes. Remove from the oven and flip the bread; top with the crab mixture, spreading it almost to the edges. Sprinkle with the grated cheese.
  • Toss the asparagus with the remaining melted butter in a medium bowl and season with salt and black pepper. Arrange side by side on the toast, then arrange the cheese slices across the middle of the asparagus.
  • Return to the broiler until the asparagus is tender and the cheese melts, about 4 more minutes.

1 cup granulated sugar
1/4 cup light corn syrup
Fine sea salt
3/4 cup heavy cream
8 ounces cottage cheese
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons granulated sugar, plus more if necessary
Pinch kosher salt
3 eggs
1 orange, zested, plus more if necessary
8 cups vegetable oil
Confectioners' sugar, for sprinkling

Steps:

  • For the sauce: In a small saucepot set over medium heat, add the sugar, corn syrup, 1/4 cup water and 1/8 teaspoon sea salt and cook until the sugar starts to bubble and turn brown, 10 to 12 minutes. Remove the saucepot from the heat. Add the heavy cream slowly and carefully to the caramel mixture (it will bubble up). When the bubbling slows, stir with a wooden spoon and add 1/4 teaspoon sea salt. Let cool enough to taste, taste and add more salt if necessary.
  • For the doughnuts: Combine the cottage cheese, flour, baking powder, granulated sugar, salt, eggs and orange zest, and set aside.
  • Heat the oil in a large saucepot set over medium-high heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F.
  • Scoop the dough using two spoons to make one tester ball, then carefully drop it in the oil and fry until golden brown, about 2 minutes. Cool slightly and taste, then add more granulated sugar and orange zest to the dough if desired. One at a time, scoop the remaining dough into balls (6 to 8 total) and carefully drop into the oil. Fry, turning occasionally to ensure all sides cook evenly, until golden brown and floating, about 4 minutes.
  • Remove the doughnut holes from the oil with a slotted spoon and place on a paper-towel-lined-plate to absorb any excess oil.
  • Transfer the doughnut holes to a platter and dust them with confectioners' sugar. Serve with the caramel sauce on the side.

  • Mix 1/2 cup sugar, 1 tablespoon sweetened cocoa powder and 1 teaspoon cinnamon in a bowl. Cut 1 pound pizza dough into 24 pieces. Place 3 dark chocolate chunks in the middle of each piece, pinching the dough to enclose; roll each into a ball. Working in batches, fry the dough balls in 2 inches of 350 degrees F vegetable oil, turning, until golden, about 4 minutes. Transfer to paper towels to drain, then roll in the sugar mixture while still warm.
