DOROTHY STONE'S BOURBON-GLAZED SWEET POTATOES

Number Of Ingredients 5

3 pounds medium-large sweet potatoes, of uniform size
4 tablespoons melted butter
Salt and freshly ground black pepper to taste
2 tablespoons light brown sugar
1/4 cup bourbon

Steps:

  • Scrub the sweet potatoes, place in a pot, and cover with water. Bring to a boil, and cook until barely tender, 15 to 20 minutes. Drain and rinse under cold water.
  • When the potatoes are cool enough to handle, peel them, and slice in rounds 1/4 inch thick.
  • Use 1 tablespoon of the butter to grease a shallow baking dish about 10 inches by 14 inches.
  • Arrange the potato slices, slightly overlapping them, in the dish, and drizzle with the remaining butter. Season with salt and pepper, then sprinkle evenly with the sugar. If desired, the dish can be prepared in advance up to this point and set aside, covered, for 3 hours at room temperature or overnight in the refrigerator.
  • Preheat oven to 425 degrees. Bake the potatoes for 20 minutes, then lower oven temperature to 350 degrees, and bake 20 minutes longer, until the potatoes are nicely glazed.
  • Just before serving, warm the bourbon in a small saucepan. Wear oven mitts, and stand back from the pan. Ignite the bourbon, and pour it, still flaming, even over the potatoes. Serve at once.

6 large sweet potatoes, peeled and sliced
1 cup sugar
1/2 cup butter
1/2 cup Bourbon
1/2 teaspoon vanilla

Steps:

  • Arrange sweet potatoes in an oblong baking dish.
  • Combine sugar, butter, bourbon, and vanilla in a large saucepan and heat to a boil.
  • As soon as the sauce comes to a boil, pour it over the sweet potatoes.

4 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/2 cup (1 stick) unsalted butter, softened
1/2 cup bourbon
1/3 cup orange juice
1/4 cup (packed) light brown sugar
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/3 cup chopped pecans
Special equipment: 2-quart baking dish

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350°F. Butter a 2-quart baking dish.
  • In a medium pot over moderately high heat, combine the potatoes with enough cold water to cover by 1 inch. Bring to a boil, then reduce the heat to moderately low and simmer, uncovered, until the potatoes are tender, about 15 minutes. Drain the potatoes and transfer to the bowl of a stand mixer fitted with a paddle attachment. Add the butter, bourbon, orange juice, brown sugar, salt, cinnamon, nutmeg, and cloves and beat on medium speed until smooth, about 1 minute.
  • Transfer the mixture to the prepared baking dish and sprinkle the pecans on top. Bake until golden brown, about 45 minutes. Serve immediately.

Only a Southerner, inheritor of the infamous Southern sweet tooth, would add massive quantities of butter and sugar to a dish and still regard it as a vegetable. Add a shot of bourbon? No problem.

4 tablespoons (1/2 stick) unsalted butter, plus more for the baking dish
4 to 6 sweet potatoes, peeled and sliced about 1/2 inch thick
Coarse salt and freshly ground black pepper
1/2 cup firmly packed light brown sugar
1/2 cup bourbon
2 tablespoons sorghum, cane, or maple syrup

Steps:

  • Preheat the oven to 350°F. Butter an ovenproof gratin or casserole dish. Arrange the sweet potato slices in the prepared dish and season with salt and pepper.
  • In a large saucepan, combine the sugar, 4 tablespoons butter, bourbon, and syrup and bring to a boil over medium-high heat. As soon as the sauce is boiling, pour it over the sweet potatoes. Bake the casserole, basting and turning the potatoes occasionally, until the sweet potatoes are soft and tender, 45 to 60 minutes. Taste and adjust for seasoning with salt and pepper.

1 stick unsalted butter, quartered
3/4 cup molasses
1/2 cup light brown sugar
Pinch cayenne pepper
1 cup bourbon
Salt and freshly ground black pepper
8 large sweet potatoes, par cooked and cut into 2-inch dice
3/4 cup toasted chopped pecans

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the butter, molasses, brown sugar and cayenne in a medium saucepan and cook over medium heat until smooth, about 5 minutes. Increase the heat to high, add the bourbon and cook for 2 minutes to allow alcohol to burn out. Season with salt and pepper.
  • Put the potatoes in a large baking dish, pour the molasses mixture over and toss to coat. Roast in the oven, stirring a few times, until the potatoes are cooked through and glazed, about 20 minutes. Remove to a platter and top with the pecans.
  • Alternatively, this can be done in a large saute pan: Melt the butter, molasses, brown sugar and cayenne over medium heat. Add the bourbon and let the alcohol cook out. Add the potatoes and cook until glazed over medium-high heat. Transfer to a platter and top with the pecans.
