1 tablespoon olive oil
1 small onion, diced
½ red bell pepper, chopped
1 pound ground beef
1 teaspoon minced garlic
1 teaspoon chili powder
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
½ cup frozen corn
1 cup shredded Mexican cheese blend, divided, or more to taste
1 cup salsa
1 cup cornmeal
¾ teaspoon salt
½ teaspoon baking soda
1 cup milk
2 eggs, beaten

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil in a skillet over medium-high heat. Add onion and red bell pepper; saute until softened, 5 to 7 minutes. Add ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
  • Mix corn into the beef mixture and toss to defrost, about 3 minutes. Drain and discard fat. Add about 1/4 of the shredded Mexican cheese blend and mix well. Pour meat sauce into a 9x13-inch casserole dish. Cover meat with a thin layer of salsa.
  • Combine cornmeal, salt, and baking soda in a large bowl. Add milk and eggs; stir until well blended. Pour cornmeal mixture on top of salsa layer and top with remaining shredded Mexican cheese blend.
  • Bake in the preheated oven until browned on top, about 30 minutes.

1 Jiffy cornbread mix
15 oz. can cream-style corn
2/3 cup sour cream
1 Tbs granulated sugar
1 egg
10 oz. can red enchilada sauce
1 lb. lean ground beef (or any ground meat, such as ground turkey, bison, or venison)
1 medium onion, diced (may substitute 1 Tbs. dehydrated onions)
1 red bell pepper (seeds and membranes removed, diced, can substitute any color of bell pepper)
2-3 Tbs. your favorite taco seasoning
1 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl, gently stir the cornbread mix, corn, sour cream, sugar, and egg just until combined; spread into a greased 12-inch cast iron skillet or a greased 9x13 pan.
  • Bake the cornbread mixture for 25-30 minutes, or until a knife inserted at the center comes out clean. (It may take longer for the cornbread to get done if using a 9x13 pan.) Using a fork, jab the warm cornbread all over the surface, then pour the enchilada sauce over the top.
  • Meanwhile, in a skillet over medium heat, sauté the onions and bell peppers with the taco seasoning in a bit of oil until softened, approx. 3-4 minutes; add the garlic and cook an additional 30 seconds.
  • Add the ground beef, continuing to cook and crumble the beef until it is fully cooked throughout; drain any fats that accumulate.Spread the ground beef mixture over the top of the baked cornbread; cover with foil or a lid.
  • Bake the casserole for 10 minutes. Remove the cover and top with cheese; bake an additional 5-10 minutes.Serve at once, with your favorite toppings, such as diced tomatoes, green chilies, salsa, sour cream, etc.

1 cup frozen corn

1 package (8-1/2 ounces) cornbread/muffin mix

  • Preheat oven to 400°. In a large skillet, heat oil over medium-high heat. Add sweet potato, onion and peppers; cook and stir 5-7 minutes or until potato is cooked halfway through., Stir in beans, corn, chiles, salt and cumin; heat through. 1 cup milk

Vegetable cooking spray
1 (6-oz.) package buttermilk cornbread mix
3 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 400°. Cook ground turkey in a large skillet over medium heat, stirring often, 5 minutes or until meat crumbles and is no longer pink. Add green onions, and sauté 1 minute.
  • Stir in soup and next 2 ingredients. Bring to a low boil, and remove from heat. Stir in 3/4 cup cheese and 1/4 cup cilantro. Add salt and pepper to taste. Pour turkey mixture into a 2-qt. baking dish coated with cooking spray.

I got this recipe from my Mother-in-Law years ago, and we make it regularly. This recipe is a double and we always make a freezer meal. It also reheats well so you can take it for lunches.

1 lb ground meat (I like 93%/7% ground turkey)
1 small onion, diced
1 bell pepper, diced
2 teaspoons chili powder
2 teaspoons seasoning salt
2 teaspoons lemon pepper
2 teaspoons garlic powder
1 teaspoon cumin
1 (8 ounce) can mushrooms (drained)
1 (16 ounce) can black olives (drained)
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 (16 ounce) can mexicorn
1 (16 ounce) can ranch style beans (I like black)
1 cup shredded cheddar cheese
1 (8 1/2 ounce) box Jiffy cornbread mix

Steps:

  • Preheat oven to 350.
  • In large stock pot, brown meat with onion and bell pepper. Stir in seasonings and canned ingredients. DO NOT DRAIN CANS except mushrooms and olives.
  • Leave to simmer on medium heat while preparing corn bread. Per my MIL's experience, add nearly twice the milk the package calls for, then spread a very thin layer of batter along the bottom of two 9x13 baking dishes.
  • Dump in the contents of the stock pot, layer on the shredded cheese, then top with the remaining corn bread batter. Bake until corn bread is cooked through, about 30 minutes.
  • Eat one today, freeze the other for later.
  • ALTERNATIVE: Mix ingredients together and leave out the cornbread for an amazing chili/soup! We did this for the first time today and it was very good.

2 cups frozen corn (preferably fire-roasted)
2 poblano chile peppers, seeded and chopped
1/2 cup chopped fresh cilantro, plus more for topping
2 teaspoons ground cumin
1 teaspoon ancho chile powder
1 16-ounce jar salsa
1 10-ounce can diced tomatoes and green chiles
1 10-ounce can diced tomatoes and green chiles
2 cups shredded cheddar cheese (about 8 ounces)
2 cups shredded muenster cheese (about 8 ounces)
18 to 20 corn tostada shells
2 avocados, sliced
Sour cream and pickled jalapenos, for topping (optional)

Steps:

  • Combine the refried beans, frozen corn, poblanos, 1/4 cup cilantro, the cumin and chile powder in a medium bowl. Combine the salsa, tomatoes and the remaining 1/4 cup cilantro in a separate medium bowl. Toss the cheddar and muenster cheese in a third bowl; set aside.
  • Spread about 1/2 cup of the salsa mixture in a thin layer in a 6-quart slow cooker. Top with about 6 tostada shells, breaking them as needed to cover the bottom. Spread half of the bean mixture over the tostada shells, then sprinkle with 1 1/2 cups of the cheese mixture and 1 cup of the salsa mixture. Repeat the layers (tostada shells, bean mixture, cheese, salsa mixture), then top with the remaining tostadas, cheese and salsa.
  • Cover and cook on low, 4 hours. Uncover and let rest 15 minutes. Serve with the sliced avocados, sour cream, cilantro and pickled jalapenos.

1 (15.25 ounce) can corn, drained
1 (8 ounce) corn bread mix

Steps:

  • Preheat oven to 400*F
  • In a skillet cook ground beef, onion, bell pepper, cumin & salt until ground beef is cooked through and onions are translucent.
  • Add salsa & corn to ground beef mixture and cook for additional 10 minutes.
  • Pour mixture into a 9x9 casserole dish.
  • Prepare muffin mix according to package directions and spread on top of ground beef mixture.
