Time 20m

Number Of Ingredients 5

250 g / 8 oz raw skinless hazelnuts ((Note 1))
1/4 cup /30 g Dutch processed unsweetened cocoa powder (Note 2)
3/4 cup / 90 g icing sugar / confectionary sugar
2 tbsp hazelnut oil ((or vegetable, canola, grapeseed or other neutral flavoured oil))
1 tsp vanilla extract

Steps:

  • Preheat oven to 180C/350F.
  • Place hazelnuts on a baking tray, roast for 8 minutes or until golden. Transfer into blender.
  • Blend on the lowest speed until the nuts are ground into a crumb. Scrape down the sides as necessary. Then increase the speed to 4 until it turns into a paste. You may need to scrape down the sides - in my Vitamix blender, I did not have to. Then increase the speed as high as it will go and whizz until it becomes smooth with a consistency like honey.
  • Add remaining ingredients, then whizz, starting on low and increasing to high. Whizz until smooth - the sugar takes the longest to dissolve (Note 3).
  • Pour into a jar - it will be lovely and warm. Allow to cool to spread consistency. Do not refrigerate as the sugar will crystallise and it will become grainy.
  • Use as you do Nutella! Especially fabulous with Nutella Crepes!

Time 20m

Number Of Ingredients 6

1 cup whole hazelnuts
pinch salt
4 ounces semisweet chocolate chips
4 ounces milk chocolate chips
2 tablespoons powdered sugar (or to taste)
1 tablespoon vegetable oil (optional)

Steps:

  • Toast the hazelnuts at 375°F for 10-12 minutes until fragrant & the skins split
  • Place the warm hazelnuts in a kitchen towel and rub vigorously to remove some of the skins (not all of them will come off).
  • Transfer to a food processor (while warm) and puree into a paste (like thick peanut butter).
  • Melt both types of chocolate chips in the microwave (on 70% power) until smooth, about 1 minute.
  • Add in powdered sugar. With the food processor running, slowly add the melted chocolate to the ground nuts (scrape the sides if required). Continue processing until smooth. Add oil to reach desired consistency (optional).
  • Pour the mixture into a jar/container (it will thicken slightly upon cooling).

Time 15m

Number Of Ingredients 6

2 cups hazelnuts ((240g))
1 1/2 tbsp pure vanilla extract
1/4 cup cocoa powder
1/3 cup sweetener of choice ((see above for options))
1/4 tsp salt
1/2 cup milk of choice (OR 2 tbsp oil)

Steps:

  • Homemade Nutella Recipe: If hazelnuts are not already roasted, preheat the oven to 400 F and bake for 6-8 minutes or just until they begin to brown. Rub them together in a paper towel to get the skins off. It's okay if a few stubborn skins won't come off. In a Vitamix or food processor, blend the nuts until they've turned to butter, then add all other ingredients and blend a long time until it's smooth like Nutella! (I think I blended off-and-on for a full two minutes. It's extra-creamy in a Vitamix, but a Cuisinart food processor works as well.) Storage tips are listed above.View Nutrition Facts
