DIVINELY ORGASMIC GERMAN SAUERKRAUT (CROCK POT)
DOGS for short. This stuff is amazing on brats, with pork roast and mashed potatoes, or on hot dogs. Serving sizes depend on how you use it.

Steps:
- Fry the bacon; While it's cooking, put the crock on high, and add the packages of drained sauerkraut.
- Peel and core the apple and chop it into little pieces and add it, or add the applesauce - one or the other.
- When the bacon is done KEEP THE BACON FAT; cool the bacon and crumble it and add it to the crock, and pour all of the bacon fat in as well.
- Really blend it up well with a fork, so that all the kraut is covered with some bacon fat; About every hour or so, stir the whole thing really well; As each hour goes by, the kraut gets more golden, and the apple disintegrates a bit more.
- After 4 hours on high, put it on medium, still continuing to stir every hour or half hour until it's reached your desired consistency.

- In a large skillet, cook bacon and onions over medium heat until bacon is crisp and onions are just tender, 5-7 minutes. Add vinegar and sugar to skillet; cook and stir 5 minutes. Add sauerkraut and caraway seeds to skillet; stir to combine. Transfer mixture to 4-qt. slow cooker. Cover and cook on low to allow flavors to blend, 1-2 hours.

JOLEAN'S CROCK POT OLD WORLD SAUERKRAUT SUPPER
This is a German recipe that my Mom made for us every New Year's Day. Although my siblings didn't care for sauerkraut, Mom INSISTED that we eat pork & sauerkraut for good luck on New Year's Day back in the 70's. Well, this is the recipe that we ALL loved, and I handed it down to my kids as well...A true tradition in my family, and a recipe that I found in one of Mom's Crock Pot Cookbooks from 1970, but tweaked just a bit so we all would like it! Truly yummy, totally filling, and the switch-up she made to using "Bavarian" sauerkraut makes all the difference in taste! Both of my ex-DH's love this recipe and brag about it to other people to this day...

Steps:
- Fry bacon until crisp. Drain (reserving drippings in pan) and break into small pieces. Add flour to the bacon drippings and blend well until slightly golden brown.
- Stir in sauerkraut (and liquid from 1 can). Mix well and saute for 5 minutes.
- Place sauerkraut mixture, crumbled bacon and sausage pieces in crock pot.
- Add all other ingredients. Mix together thoroughly.
- Cover and cook on Low 7 to 9 hours.
- Salt & pepper to taste, but you may not need it!
