The kids will enjoy helping with this recipe! This recipe yields a lot of cookies, so freeze the excess in freezer bags for later! Note: You will need a very large bowl (or dish pan) for mixing.

2 cups white sugar
2 cups light brown sugar
4 eggs
2 cups vegetable oil
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons salt
4 cups cornflakes cereal
1 ½ cups rolled oats
1 cup flaked coconut
1 cup chopped pecans
1 cup chopped dates
1 cup raisins

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a cookie sheet.
  • Cream white sugar, brown sugar, eggs, vegetable oil and vanilla together in a large bowl or dishpan. In a separate bowl combine flour, baking soda and salt. Stir the flour mixture into the creamed sugar; mix until well combined.
  • Stir corn flakes, oats, coconut, pecans, dates and raisins into the dough. You will most likely need to use your hands to mix everything thoroughly. Shape the dough into 1 1/2 to 2 inch balls and press them down lightly onto a greased cookie sheet.
  • Bake in a preheated 325 degrees F (165 degrees C) oven for 10 to 14 minutes or until golden.

2 cup(s) sugar
2 cup(s) brown sugar
4 - eggs
2 cup(s) vegetable oil (or butter, softened - recommended)
2 teaspoon(s) vanilla
4 cup(s) flour
2 teaspoon(s) baking soda
1 teaspoon(s) salt
4 cup(s) corn flakes
1- 1.5 cup(s) rolled oats
1 cup(s) coconut
1 can(s) dates or nuts (optional)

Steps:

  • In large mixing bowl combine all dry ingredients to include flour, soda, salt, corn flakes, oats,coconut and nuts. Set aside.
  • In separate bowl cream together sugar, brown sugar, vegetable oil (or butter), vanilla. Add eggs one at time, mixing well after each addition.
  • Gradually combine dry ingredients with wet ingredients blending well. Bake at 350 degrees for 10 minutes on a lightly greased cookie sheet.
