1 pound ground beef
1 (1.12 ounce) package Pace® Taco Seasoning Mix
1 (10.75 ounce) can Campbell's® Condensed Tomato Soup
1 ½ cups water
1 ½ cups uncooked instant white rice
Pace® Thick & Chunky Salsa
Shredded Cheddar cheese
Shredded lettuce
Tortilla chips

Steps:

  • Cook beef and taco seasoning in skillet until browned. Pour off fat.
  • Add soup, water and rice. Heat to a boil. Cover and cook over low heat 5 min. or until done.
  • Top with salsa, cheese and lettuce. Serve with tortilla chips for dipping.

1 pound ground beef
1 package (about 1 ounce) taco seasoning mix
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Pace® Chunky Salsa
Shredded Cheddar cheese
Shredded lettuce
Tortilla chips

Steps:

  • Cook the beef and taco seasoning in a 10-inch skillet until the beef is well browned, stirring often to separate meat. Pour off any fat.
  • Stir the soup, water and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the rice is tender.
  • Top with the salsa, cheese and lettuce. Serve with the tortilla chips for dipping.
  • Serving Suggestion: Serve with carrot and celery sticks. For dessert serve chunky applesauce sprinkled with cinnamon.

1 (15.5-oz.) can pinto beans, drained
8 oz. Mexican pasteurized prepared cheese product with jalapeño peppers, cubed (2 cups)
6 cups tortilla chips
1/4 cup sliced ripe olives
3/4 cup chopped seeded tomato
1/3 cup sour cream
1/4 cup chopped fresh cilantro

Steps:

  • In medium saucepan, combine beans and cheese; cook over medium heat until cheese is melted, stirring frequently.
  • Place 2 cups chips on each individual serving plate. Spoon about 2/3 cup bean mixture over chips. Top each with olives, tomato, sour cream and cilantro. Serve immediately.

These were a BIG hit in the Test Kitchen! I made this with half ground chuck and half sausage - so many layers of yummy flavors. Great for a tailgate, movie night or a girls night in!

1 bag(s) nacho chips- thicker kind
2 c shredded cheddar or any cheese you have
2 can(s) chili beans or leftover/canned chili
1 jar(s) salsa
1 or 2 c leftover cooked and chopped or shredded meat: chicken, hamburger, meatloaf, pork-whatever (optional)
2 c shredded lettuce (optional)
3 chopped green onions
1/2 c sour cream
1/2 bunch fresh cilantro leaves, chopped

Steps:

  • 1. On large circular pizza pan, spread out the entire bag of tortilla chips. Pour the beans all over the chips and then the chopped meat. Sprinkle the cheese to mostly cover the chips. Bake in 400 degree oven until cheese melts and starts browning a little. Around 10-15 mins. (Make sure the beans are heated thru. I actually heat the beans prior to pouring them on the chips so I don't risk burning the cheese before they are hot enough.)
  • 2. When the pan is out of the oven, pour the salsa over the cheese, then sprinkle with the onions. If you choose to add the optional shredded lettuce, sprinkle that on now.
  • 3. Place the sour cream into a small Ziploc bag, release air before sealing. Snip the very tip of a corner in the bag and squeeze the sour cream out by spirals onto the platter of nachos. Garnish with cilantro.

When you need a quick dinner that will please all. I usually make this on those days that we had a big lunch and just need to put a little something in out bellys.
