1 tablespoon Italian seasoning (or dried oregano)
2 teaspoons brown sugar
2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon coarse Kosher salt (or ½ teaspoon table salt)
½ teaspoon black pepper
3 pounds skin-on bone-in chicken thighs (8 bone-in thighs, see note below about boneless)
2 tablespoons olive oil

Steps:

  • Preheat oven to 400° F. Set out a 13x9-inch or similar baking dish or line a rimmed baking sheet with foil or parchment paper.
  • In a small bowl, whisk together the seasonings until well combined.
  • Pat the chicken thighs dry with paper towels and place them in the baking dish.
  • Rub both sides of the chicken with olive oil. Sprinkle the seasoning mixture over the chicken, rubbing it on both sides of the chicken thighs. Try to rub some of the rub underneath the skin as well as on top of the skin for the most flavorful chicken. Arrange the chicken thighs skin side up on the pan.
  • Bake in the preheated oven, without moving or turning, until the internal temperature of the thickest part of the chicken (not touching the bone) reaches at least 165° F. This will take about 30-40 minutes, depending on the size of your chicken thighs.
  • If desired, you can broil the chicken for a few minutes to get the skin extra crispy. Be sure to use a broiler-safe baking dish/pan and do not put parchment paper under the broiler.

This is a wonderfully easy dish to prepare, and when served with a seaming pile of garlic mash potatoes it's comfort food at its best. So yummy. Many an Autumn evening, when I'm home alone, I'll make this dish and serve it up next to a warm cozy fire... some classical music playing in the background, and a glass (or two) of chardonnay. Mmmmm So, you ready... Let's get into the kitchen.

THE BAKED GARLIC
2 clove(s) garlic
1 tablespoon(s) olive oil, extra virgin, for drizzling
1 pinch(es) salt, kosher variety
2 tablespoon(s) sweet butter, unsalted (room temp)
THE COATING
3 tablespoon(s) dijon mustard (i like grey poupon)
1 tablespoon(s) olive oil, extra virgin
1/8 teaspoon(s) black pepper, freshly ground, or to taste
1/4 teaspoon(s) salt, kosher variety, or to taste
THE CHICKEN
2 large chicken thighs bone-in, skin on
1 cup(s) panko breadcrumbs

Steps:

  • PREP/PREPARE
  • THE BAKED GARLIC
  • Gather your ingredients.
  • Place a rack in the middle position, and preheat the oven to 350f (175c).
  • Place the garlic cloves on a piece of parchment paper, and drizzle with a bit of olive oil, and a pinch of salt.
  • Twist the parchment together, and place into the preheated oven, until the garlic is tender, about 20 - 25 minutes.
  • Remove from the oven, allow to cool.
  • Mash the garlic into the softened butter, and reserve.
  • Chef's Tip: Baked garlic goes great when mixed with some fluffy mash potatoes. In addition, you eat it spread it over some toast. So yummy.
  • THE COATING
  • Gather your ingredients.
  • Mix all the coating ingredients together in a small bowl, and reserve.
  • THE ASSEMBLY
  • Leave the rack in the middle position, and increase the temperature of the oven to 425f (220c).
  • Place the panko breadcrumbs in a dish or pie plate.
  • Carefully separate the skin from the meat of the chicken thighs.
  • Rub half the garlic butter under the skin of the first chicken thigh, and repeat for the second.
  • Restore the skin, and then brush the coating over the skins of the chicken thighs (both top and bottom).
  • Dredge the thighs in the panko breadcrumbs until thoroughly coated.
  • Place the chicken thighs on a parchment-lined baking sheet fitted with a wire rack.
  • Place into the preheated oven until the internal temperature of the thighs reaches 165f (75c), about 35 - 40 minutes.
  • Remove from oven and allow to rest for 5 minutes before serving.
  • PLATE/PRESENT
  • Plate with your favorite sides... how about a nice pile of garlic mash potatoes. Enjoy.

These low-carb, keto-friendly chicken thighs are basted with a tangy and rich butter sauce. They are easy enough for a weeknight meal and guaranteed to impress the pickiest eaters. Serve over egg noodles, mashed potatoes, or rice, or alongside your favorite vegetables.

4 tablespoons butter, divided
4 cloves garlic
2 tablespoons lemon juice
¼ teaspoon onion powder
4 (8 ounce) skin-on, bone-in chicken thighs
salt and ground black pepper to taste
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place 3 tablespoons butter in a microwave-safe bowl and heat in a microwave oven until melted, 1 to 2 minutes. Smash garlic cloves with the side of a chef's knife and add garlic to the warm butter. Stir in lemon juice and onion powder. Set aside.
  • Sprinkle both sides of chicken thighs with salt and pepper. Heat remaining 1 tablespoon butter in a medium-sized oven-safe skillet over medium-high heat. Brown chicken, skin-side down, for 3 to 4 minutes. Flip chicken over and brush skin with lemon-butter mixture. Pour remaining butter mixture into skillet and remove from heat.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Brush skin every 10 minutes with pan juices.
  • Remove skillet from the oven and place chicken on a serving platter. Drizzle chicken with pan juices and garnish with parsley.
