DINETTE CAKE

Steps:
- In a large bowl, beat the sugar, milk, oil, egg and vanilla until well blended. Combine the flour, baking powder and salt; gradually add to sugar mixture until blended., Pour into a greased 9-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Serve with fruit or ice cream if desired.

- First put dry ingredients into mixing bowl. Then add shortening and half of the milk. Mix until blended but not too much. Then add remaining milk, egg, and the flavoring. Mix until just smooth. It will come together nicely. Pour into greased and floured pan (I like to use Professional Pan Coating recipe number 78579. Nothing sticks when you use that to coat your pans!) Bake in 350 degree oven.

This is another "from scratch" recipe from my friend Miss Linda Mayhood. She bakes this in an 8 x 8 pan to use for strawberry shortcake or doubles it and bakes it in a 13 x 9 x 2 and just serves it as wonderful cake.

- Heat oven to 350. Grease and flour square pan, 8x8x2 or 9x9x2 inches, or round pan, 9x1 1/2 inches. Beat all ingredients except frosting in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan.
- Bake until wooden pick inserted in center comes out clean, square 35-40 minutes, round 35 minutes; cool. Frost with French Silk Frosting.
- For French Silk Frosting: Beat butter, powdered sugar, chocolate, and vanilla on low speed until blended. Gradually beat in milk until fluffy.
