1 (9 inch) baked pie shell
4 ounces small, cooked shrimp, peeled and deveined
⅔ cup grated Gruyere cheese
2 eggs, beaten
1 cup light sour cream
1 tablespoon finely chopped green onion
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread shrimp evenly across the bottom of the pie crust. Sprinkle cheese over the shrimp.
  • Stir sour cream, green onions, salt and pepper into the beaten eggs; then pour mixture evenly over the shrimp and cheese.
  • Bake in a preheated oven for 25 to 30 minutes. Serve warm or cold.

4 ounces swiss cheese, shredded
1/4 cup green onion, thinly-sliced
1 unbaked 9-inch pie crust
2 eggs
1/2 cup mayonnaise
1/3 cup 2% low-fat milk
2 teaspoons fresh dill weed, chopped
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Layer shrimp, cheese and green onion in pie crust.
  • Combine eggs, mayonnaise, milk, dill and salt in a small bowl; mix until thoroughly combined.
  • Pour into pie crust and bake for 20 to 30 minutes, or until center is set.

3 tablespoons butter, softened, divided
1 unbaked pastry shell (9 inches)
1 large onion, chopped
2 cups shredded Swiss cheese
1 tablespoon all-purpose flour
3 large eggs
1 cup half-and-half cream
1/4 teaspoon salt

Steps:

  • Spread 1 tablespoon butter over bottom of pastry shell; set aside. In a skillet, saute onion in remaining butter until tender. Spread in pastry shell. Toss Swiss cheese with flour; sprinkle over onion. In a bowl, whisk the eggs, cream and salt. Pour evenly over cheese., Bake, uncovered, at 400° for 10 minutes. Reduce heat to 325°; bake 30-35 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

2 eggs
1 cup low-fat cottage cheese
1 tablespoon olive oil
1 bunch asparagus, trimmed and cut into 1-inch pieces
½ white onion, chopped
2 teaspoons olive oil
1 pound peeled and deveined shrimp
salt and ground black pepper to taste
1 (9 inch) unbaked deep-dish pie crust (such as Marie Callender's®)
1 (8 ounce) package shredded Monterey Jack cheese
3 green onions, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour egg whites, eggs, and cottage cheese into a blender; pulse several times to mix and blend until smooth, about 1 minute.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat; cook and stir asparagus and onion until asparagus is tender, about 8 minutes.
  • Heat 2 teaspoons olive oil in the same skillet over medium heat. Season shrimp with salt and black pepper; cook in hot oil until they turn pink and are no longer translucent in the center, 5 to 8 minutes.
  • Fit pie crust into a 9-inch deep-dish pie plate and spread shrimp into the crust; top with asparagus mixture. Pour cottage cheese mixture over vegetables and shrimp. Spread Monterey Jack cheese over the top of the quiche. Sprinkle green onions over cheese.

2 quarts water
¼ cup coarse salt
⅓ cup white sugar
5 sprigs dill
2 pounds medium shrimp, with shells
2 tablespoons vegetable oil
1 tablespoon white wine vinegar
1 tablespoon minced dill
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • Bring water to a boil in a large pot over high heat. Add salt, sugar, and dill sprigs; stir until sugar has dissolved. Pour in shrimp and cook until the shells turn pink, and the meat is no longer translucent, 3 to 4 minutes. Strain the shrimp through a colander, discard dill sprigs, and chill until cold in the refrigerator, about 30 minutes.
  • Once shrimp have cooled, peel and devein them; discard the shells. Whisk together oil, vinegar, minced dill, salt, and pepper; toss with shrimp meat to coat. Cover, and chill overnight in the refrigerator; serve with sprigs of fresh dill.
