- Position racks in the upper and lower thirds of the oven; preheat to 450 degrees F. Brush 2 large baking dishes with vegetable oil. Pat the wings dry; sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Spread in the dishes and bake, rotating halfway through, until golden, 40 to 45 minutes.
- Meanwhile, mix the dijon mustard, honey, mustard powder and garlic in a bowl. Remove the wings from the oven and toss with the mustard mixture, then continue baking until glazed, 3 to 5 more minutes.

- Preheat oven to 450 degrees. In a large bowl, combine maple syrup and mustard. Add cooked wings; toss. Transfer to a rimmed baking sheet and bake until glaze has thickened, 2 to 3 minutes. Serve, with lemon wedges.
LEMON DIJON CHICKEN WINGS
These are for the grill but could be done in the oven too?? They are not glazed but flavored with marinade.

Steps:
- In a large bowl mix all the ingredients together and add the wings. Stir well and dump into a large zipper top bag.
- Put the bag on a platter and into the refrigerator for at least 2 hours.
- Oil the grates and preheat the grill to high heat.
- Remove the wings from the marinade and add the marinade to a small saucepan. Bring it to a boil and cook for 5 minutes.
- Turn one grill section from high to medium heat and start grilling the wings there.
- Grill the wings for about 10 minutes turning frequently.
- Baste with some more marinade.
- Finish the wings for 5 minutes or so (juices should run clear) on the high heat burner. It will crisp them up.

- Mix first 3 ingredients until blended. Pour over wings in shallow dish; turn to evenly coat wings. Refrigerate 30 min. to marinate.

- In a large bowl, stir together the olive oil, lemon juice, mustard, garlic, salt, and pepper. Add chicken wings, cover, and marinate in the refrigerator for at least 2 hours, stirring occasionally. Preheat grill for high heat. Drain marinade from chicken into a small saucepan. Bring to a boil, and simmer for 5 minutes. Set aside for basting. Lightly oil the grill grate. Grill wings for 10 to 15 minutes, or until juices run clear. Turn frequently and baste with the marinade during the last 5 minutes

- Mix all ingredients except chicken until blended. Pour half over wings in shallow dish; turn to evenly coat wings. Refrigerate 1 hour to marinate.
