This recipe is a perfect dish to serve company, as it is all prepared in one baking dish. If you want to serve another side dish, it goes well with a cheese-based dish or salad. I found it in a cookbook ages ago with easy gourmet recipes. Passive time is marinating time.

6 boneless skinless chicken breasts
1 (16 ounce) jar honey mustard dressing
3 cups vegetables (I use onions, potatoes, and carrots)
1/4 cup fresh parsley, chopped
2 tablespoons fresh chives (2 tsp. dried chives)
salt and pepper, to taste
2 tablespoons honey
1 lemon, juice of

Steps:

  • Rinse the chicken and pat dry. Place in a shallow bowl and pour the salad dressing over; marinate, covered, in the refrigerator for 6-8 hours.
  • Preheat the oven to 350 degrees. Place the chicken in a greased baking dish. Place the vegetables around the chicken. Stir in the salt, pepper, chives and parsley to the mustard marinate. Pour over the chicken and veggies.
  • Drizzle with honey and lemon juice.
  • Bake for 1 hour.

4 boneless skinless chicken breast halves (4 ounces each)
1/2 pound sliced fresh mushrooms
1-1/2 cups fresh baby carrots
1 cup pearl onions
1/2 cup julienned sweet red pepper
1/4 teaspoon pepper
3 teaspoons minced fresh thyme
1/2 teaspoon salt, optional
Lemon wedges, optional

Steps:

  • Preheat oven to 375°. Flatten chicken breasts to 1/2-in. thickness; place each on a piece of heavy-duty foil (about 12 in. square). Layer the mushrooms, carrots, onions and red pepper over chicken; sprinkle with pepper, thyme and, if desired, salt. , Fold foil around chicken and vegetables and seal tightly. Place on a baking sheet. Bake until chicken juices run clear, about 20 minutes. If desired, serve with lemon wedges.

Oven Foil-Pack Honey Dijon Chicken and Sweet Potatoes image

4 tablespoons butter, melted
2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon Montreal chicken seasoning
4 boneless skinless chicken breasts (about 1 1/4 lb)
2 large sweet potatoes (about 1 3/4 lb), peeled and cut into 3/4-inch pieces (4 cups)
1/2 large red bell pepper, cut into 1-inch pieces
2 green onions, thinly sliced

Steps:

  • Heat oven to 400°F or heat gas or charcoal grill for direct grilling. Cut 4 (18x12-inch) sheets of foil. In medium bowl, mix melted butter, honey, mustard and seasoning. Add chicken, and turn to coat; set aside.
  • In large microwavable bowl, microwave sweet potatoes uncovered on High 5 to 7 minutes or until fork tender. Carefully divide potatoes among the 4 pieces of foil. Top with bell pepper chunks. Top each with chicken breast and sauce.
  • For each packet, bring up 2 sides of foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • If baking, place packets on cookie sheet, and bake 25 to 30 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). If grilling, place packets on grill over medium heat. Cover grill; cook 18 to 20 minutes, rotating packets one-half turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Place packets on plates. Cut large X across top of each packet; carefully fold back foil. Top with green onions.
