4 (6-ounce) swordfish steaks, about 0.75-inch thick
salt and black pepper to taste
1 tablespoon vegetable oil
1 shallot, minced
12-ounces cherry tomatoes, halved
1/2 cup crème fraîche
2 tablespoons Dijon mustard
2 tablespoons capers, rinsed
1 tablespoon fresh tarragon, chopped

Steps:

  • Pat fish dry with paper towels and season with salt and black pepper. Heat oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Cook fish until golden brown and the thickest part of the fish registers 140°F, about 5 minutes per side. Transfer fish to platter and tent loosely with foil. Add shallot to now-empty skillet and cook until softened, about 3 minutes. Stir in tomatoes and cook until just softened, about 1 minute. Stir in crème fraîche, mustard, and capers and cook until slightly thickened, about 2 minutes. Season with salt and black pepper to taste. Top fish with sauce, sprinkle with tarragon, and serve.

Roast Beef:
1 3-pound eye of round beef roast, trimmed of excess fat and sinew
1/2 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon freshly ground pepper
Sauce:
1 tablespoon butter
1 tablespoon all purpose flour
2 cups low-salt beef broth
2 tablespoons Dijon mustard
2 tablespoons drained capers

Steps:

  • For roast beef:
  • Sprinkle beef with 1/2 teaspoon salt; let stand 1 hour.
  • Preheat oven to 350°F. Mix thyme, basil, and 1/2 teaspoon pepper in small bowl. Heat oil in large oven-proof skillet over medium-high heat. Add beef; cook until browned on all sides, turning occasionally, about 10 minutes. Sprinkle with herb mixture. Transfer skillet to oven. Roast until instant-read thermometer inserted into center of meat registers 130°F, about 40 minutes. Transfer to cutting board; let rest.
  • For sauce:
  • Place skillet with juices over medium-high heat. Add butter; stir until melted. Add flour; whisk until smooth. Gradually whisk in broth; bring to boil. Boil until sauce is reduced to 1 1/4 cups, whisking often, about 6 minutes. Whisk in mustard and capers. Season sauce with pepper.
  • Cut beef crosswise into very thin slices. Transfer beef to platter. Serve with sauce.
  • Test-kitchen tip:
  • Eye of round is not the most tender cut of beef. For the best flavor and texture, be sure to slice it very thinly.
  • What to drink:
  • With the beef, pour a full-bodied Syrah blend. One to try: Château de Jau 2007 "Le Jaja de Jau" ($11).

3 tablespoons butter or 3 tablespoons olive oil
4 chicken breasts, split,skinned and boned
2 tablespoons flour
1 cup chicken broth
1/2 cup half-and-half
2 tablespoons Dijon mustard
2 tomatoes, cut in wedges or 2 canned tomatoes, drained
2 tablespoons minced fresh parsley
1 cup frozen peas
2 tablespoons canned capers

Steps:

  • Melt butter or olive oil in a large skillet.
  • Add chicken breasts and cook until done and lightly browned, about 20 minutes.
  • Remove chicken to a warm serving platter.
  • Stir flour into pan drippings in skillet, cook for 1 minute.
  • Add the chicken broth, half and half.
  • Stir and cook until the sauce thickens and bubbbles, add in mustard, capers and frozen peas.
  • Return chicken to skillet, cover and heat for 10 minutes.
  • Garnish with tomatoes and sprinkle with parsley.
  • We typically serve with tortolini or other pasta and cover with extra dijon sauce.

2 salmon, skinless filet,1 inch thick
1 c half and half
1 Tbsp dry white wine
1 Tbsp whole grain dijon mustard
1 pinch salt and pepper
1 tsp capers
1 Tbsp roux (light not dark)
2 Tbsp butter
2 Tbsp canola oil
1/2 c chicken stock, light
1 tsp parsley, italian

Steps:

  • 1. Rinse and pat dry the salmon fillets with paper towels. Season with salt and pepper.
  • 2. Prepare the sauce by starting with the roux in a non-stick pan adding the half and half,then the mustard and capers,white wine and garlic. Bring to a simmer,add the chicken stock stirring constantly,when it's thickened,set to the side.
  • 3. Using a non-stick frying pan big enough to hold the fillets,(you want room to be able to turn them),get the pan hot on high,add the oil then the butter,coat the pan by moving the butter oil around and lay the fillets in. Be careful as not to burn yourself if the oil splatters.I use a splatter screen when doing this.
  • 4. Cook the fish for 3-4 minutes per side and check to see if the center is just done.Unless you like your salmon well done.
  • 5. Now plate your salmon and spoon the sauce over the fillets,sprinkle with parsley and serve. White and wild rice or couscous goes very well with this and a steamed vegetable. Enjoy!! :)

2 Tbsp. oil, divided
4 skinless salmon fillets (1 lb.)
1 Tbsp. flour
1 Tbsp. GREY POUPON Dijon Mustard
1 cup chicken stock
3 Tbsp. capers
2 Tbsp. minced garlic, divided
2 Tbsp. fresh lemon juice
2 Tbsp. chopped fresh parsley
1 pkg. (5 oz.) baby spinach leaves

Steps:

  • Heat oil in large skillet on medium-high heat. Add fish; cook 4 to 5 min. on each side or until fish flakes easily with fork. Remove fish from skillet. Discard any grease from skillet.
  • Whisk flour, mustard and chicken stock until blended.
  • Add capers and 1 Tbsp. garlic to skillet; cook and stir on medium heat 30 sec. Stir in lemon juice; cook 1 min., stirring frequently. Add chicken stock mixture; mix well. Bring to boil, stirring frequently. Continue to cook and stir 1 to 2 min. or until thickened. Remove from heat. Stir in parsley.
  • Heat remaining oil in medium skillet on medium-high heat. Add remaining garlic; cook and stir 1 min. Add spinach; cook and stir 2 to 3 min. or just until wilted.
  • Serve spinach topped with salmon and caper sauce.
