Coca Cola Glazed Salmon with Sauteed Veggies image

Pretty healthy and delicious salmon meal. My husband loved this dish.

Number Of Ingredients 10

4 medium portions of salmon fillet skinless
1 1/2 c coke
2 Tbsp balsamic vinegar
1 tsp sea salt
1 c fresh mushrooms chopped
2 small shallots chopped
3 clove garlic minced
1/2 c each red bell pepper orange bell pepper and yellow bell pepper
1/4 c fresh parsley chopped
2 Tbsp olive oil divided

Steps:

  • 1. Combine the coke, balsamic vinegar, and half the sea salt in small saucepan. Bring to a boil and reduce to about 1/2 a cup.
  • 2. Add 1 tbsp. oil to one skillet and add the peppers, mushrooms, shallots, and garlic. Saute until softened. Season with salt and pepper. Set aside and keep warm.
  • 3. Add 1 tbsp oil to another skillet and add the salmon and season with remaining sea salt. Saute 5 to 7 minutes each side. Pour coke mixture over and cook until glazed flipping once. Garnish with parsley and serve with sauteed veggies

This is a great "carb concious" main course. The Diet Coke makes the Salmon so tender and moist -it practically melts in your mouth and leaves you craving more!

Number Of Ingredients 4

4 salmon steaks
1 (12 ounce) can Diet Coke
2 tablespoons butter or 2 tablespoons margarine
1 tablespoon garlic powder or 1 tablespoon seasoning salt

Steps:

  • Preheat oven to 375.
  • Place butter in 9x9" glass pan and place in oven to melt as oven preheats.
  • Once butter is melted, place salmon steaks in dish.
  • Sprinkle seasoning evenly over steaks.
  • Pour Diet Coke over steaks and bake approximately 40 minutes or until salmon is cooked all the way through.
  • Fabulous served with carmelized onions!
