SWEET POTATOES IN THE OVEN
Simple diced sweet potatoes smothered in savory oregeno and lots of butter is a delicious way to enjoy the underrated sweet potato vegetable. Marshmallows isn't the only way to bite into a sweet potato!

Steps:
- Preheat oven to 350 and grease a baking dish that is oven friendly with nonstick cooking spray.
- Peel and prep sweet potatoes by dicing into 1/2 inch pieces. Make sure all pieces are similar in size to avoid over or under cooking some.
- Add potatoes and cooking oil to the dish and mix well to evenly coat all vegetables.
- Mix seasoning together and sprinkle on top of sweet potatoes.
- Cover entire casserole dish with foil and cook for 20 minutes.
- Remove foil and return to oven for an additional 20 minutes or until potatoes are fork tender.
- Serve with lots of butter.

DICED SAVORY SWEET POTATOES
This recipe was actually a recipe failure. I was trying to make sweet potato fries but ended up with this dish. We actually ended up really liking it. It's a different way to make sweet potatoes.

- Preheat oven to 450. Place diced sweet potatoes in gallon sized storage bag. Add the rest of the ingredients and toss to coat.
- Place parchment paper on large cookie sheet. Pour diced sweet potatoes onto parchment paper and place in oven.
- Bake for 20-30 minutes tossing at least once.

Steps:
- Preheat oven to 450.
- Scrub the potatoes if leaving the skins on or peel. Cut sweet potato into wedges (about 8 wedges per potato).
- Place potatoes in gallon ziploc bag or large bowl and add remaining ingredients.
- Coat potatoes evenly with oil and spices. Place in single layer on baking sheet.
- Bake for 15 minutes. Turn over and bake another 10-15 minutes.
- Serve with mayo or ketchup for dipping.

- In a large bowl, combine the first 7 ingredients. Add potatoes and onion; toss gently to coat. Spoon onto a double thickness of greased heavy-duty foil (about 18 in. square). Dot with butter. Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat until potatoes are tender, turning once, 30-35 minutes.
