WHITE CHOCOLATE BANANA PUDDING

Number Of Ingredients 11

2 (3.3-ounce) boxes instant white chocolate pudding mix
1 (14-ounce) can sweetened condensed milk
1 (8-ounce) package cream cheese, softened
2½ cups milk, divided
1 (16-ounce) container frozen whipped topping, thawed
2 (3.4-ounce) boxes instant vanilla pudding mix
2 cups heavy whipping cream
1 cup sour cream
6 medium bananas, thinly sliced
1 (12-ounce) box vanilla wafer cookies
Garnish: white chocolate curls, vanilla wafers

Steps:

  • In a large bowl, beat white chocolate pudding mix, sweetened condensed milk, and cream cheese at medium speed with a mixer until smooth. Gradually add 1½ cups milk, beating until smooth and thick. Stir in whipped topping.
  • In a separate large bowl, beat vanilla pudding mix, cream, and remaining 1 cup milk at medium speed with a mixer until smooth and thick. Stir in sour cream.
  • In a large trifle dish or serving bowl, layer white chocolate pudding mixture, bananas, vanilla pudding mixture, and vanilla wafers as desired. Store, covered, in refrigerator for up to 2 days. Garnish with white chocolate curls and vanilla wafers before serving, if desired.

My Aunt Shirley has been making this for several years. It is a traditional request for our Christmas dinners. She has been a Diabetic for close to 15 years, and this recipe is great for those with Diabetes.

1 lg box sugar-free vanilla instant pudding
1 lg light cool whip, thawed
6 large bananas, sliced
1 box sugar-free or plain vanilla wafers

Steps:

  • 1. Prepare pudding per box directions. USE SKIM MILK.
  • 2. Fold in Cool Whip & mix thoroughly. Crush 1/2 cup vanilla wafers for topping.
  • 3. Using a 9 x 13 casserole dish, layer wafers, bananas and pudding. Layer until you run out of ingredients. Sprinkle wafers on top. Cover and chill 4 to 6 hours before serving.

1 c reduced calorie whipped topping, thawed
1 large banana, thinly sliced
1 Tbsp sliced almonds

Steps:

  • 1. Prepare pudding mix according to package directions, using skim milk. To assemble , divide half of the pudding between 6 parfait glasses or stemed goblets. Using half of the whipped topping, make a thin layer of topping in each glass. Top with a few banana slices. Repeat layers, using remaining pudding, whipped topping and bananas. Sprinkle almonds over each serving. Cover with plastic wrap and refrigerate until ready to use.

I found this while searching for recipes to use up half a bag of white chocolate chips I had on hand. I wanted something a little special that was company worthy, but simple enough to do for any old time. This surely did fit the bill on all the criteria need to be filled and you'll never guess where I found it...Food Network's BEHIND THE BASH! Yes, I know..shocked the devil out of me too! Who know fancy food could be oh so easy! I did modify it to make it a more diabetic friendly dish. Keep in mind it's still very sweet and the carbs and fat need to be accounted in your diet. White chocolate chips are pretty much pure sugar. This recipe should be used for ultra special occasions. Don't forget about the sugar in bananas too. Like I said, this is a SPECIAL OCCASION kinda dish. Enjoy it, but keep in mind your dietary needs and limits.

  • Cook pudding and milk over medium heat, stirring frequently, until it boils, then remove from heat.
