1/3 cup margarine
1/4 cup brown sugar substitute (Sugar Twin Brown)
1 teaspoon sugar substitute (Splenda or Sugar Twin)
1 large egg
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/3 cup raisins or 1/3 cup finely chopped fresh apple
1 teaspoon grated orange zest (peel)
2/3 cup unsweetened orange juice

Steps:

  • Preheat oven to 350°F
  • Lightly coat an 8x8x2-inch baking pan with cooking spray.
  • In a mixing bowl, combine margarine, sweeteners and egg.
  • Beat on medium speed 2-3 minutes; scraping sides of bowl as necessary.
  • In medium bowl, sift together flour, baking powder,baking soda and cinnamon.
  • Stir in raisins or apples and orange zest.
  • Add to first mixture, alternating with the orange juice, beginning and ending with the flour mixture.
  • Pour the batter into the prepared pan.
  • Bake 18-20 minutes,.
  • or until a wooden pick inserted in center comes out clean.
  • Cool cake in pan on wire rack.

1/3 cup margarine
1/4 cup Splenda brown sugar blend
1/3 cup Splenda granular
1 egg
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
2/3 cup orange juice
2 teaspoons orange extract
2 tablespoons chopped nuts

Steps:

  • Pre-heat oven to 350 degrees.
  • Grease 8-inch square baking pan.
  • In large mixing bowl, combine margarine, Splenda's and egg. Beat 2 minutes at high speed, sraping the bowl occasionally. Blend in flour and mix well.
  • Blend in remaining ingredients, except nuts. Beat 1 minute on slow speed.
  • Pour mix into prepared pan. Sprinkle with nuts. Bake at 350 degrees 25 to 30 minutes.

1 (18.25 ounce) package yellow cake mix
4 eggs
2 (3.5 ounce) packages instant vanilla pudding mix
½ cup vegetable oil
2 teaspoons orange extract
1 (11 ounce) can mandarin orange segments
1 (12 ounce) container frozen whipped topping, thawed
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Combine cake mix, eggs, 1 package of pudding, vegetable oil, orange extract, and mandarin oranges and beat well for about 3 minutes.
  • Bake in 3 - 9 inch greased and floured round cake pans for 20-25 minutes in a pre-heated 350 degree F (175 degrees C) oven.
  • To Make Frosting: Fold pudding and pineapple into whipped topping and frost cake. Keep refrigerated.

Made this for Church fellowship. No one could tell that is was made with no sugar added ingredients.

1 box pillsbury plus sugar free yellow cake mix
12 oz mandarin oranges in light syrup
4 eggs
3/4 c oil
20 oz crushed pineapple in own juice
12 oz sugar free cool whip
1 large box instant sugar free vanilla pudding

Steps:

  • 1. mix dry cake mix with mandarin oranges with juice, oil and 4 eggs. Divide evenly in 3 round cake pans greased and flour. Bake in 350 degree oven for 25 min. Cool completely before frosting.
  • 2. Frosting: mix the dry pudding mix with the crushed pineapples in own juices. Fold in sugar free cool whip. Let chill in refrigerator for 10 mins. before frosting cake. Frost between layers and then tops and sides. Keep refrigerated until serving. Very Moist.

3 teaspoons baking powder
1/2 teaspoon salt
18 tablespoons unsalted butter or 18 tablespoons margarine, at room temperature,divided
2 1/3 cups sugar, divided
5 large eggs
1 cup orange juice, divided
2 teaspoons orange zest
1/3 cup sugar, plus
2 tablespoons sugar, divided
1 1/2 teaspoons unflavored gelatin
1/4 cup orange juice
1/2 cup unsalted butter or 1/2 cup margarine
2 large eggs, separated
2 egg whites
2/3 cup sugar
3 1/2 tablespoons light corn syrup
2 tablespoons water
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
slivered orange rind (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease three 9 inch round cake pans and line bottom with wax paper cut to fit bottom of pan.
  • In a medium bowl, mix flour, baking powder and salt.
  • In the large bowl of an electric mixer, beat 1 cup butter and 2 cups sugar at medium speed until creamy.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in flour mixture alternately with 3/4 cups orange juice, beating well after each addition.
  • Beat in orange peel.
  • Pour batter evenly into prepared pans.
  • Bake in a 350 degree oven 25 to 30 minutes or until cake tester inserted in center of cakes comes out clean.
  • Remove pans from oven and loosen cakes around edges with a small metal spatula.
  • Turn cakes out onto wire racks; peel off and discard wax paper.
  • Turn cakes, right-side up, and prick all over with a wooden pick.
  • In a small saucepan, melt remaining 2 tablespoons butter, 1/3 cup sugar and 1/4 cup orange juice.
  • Cook, stirring until sugar dissolves.
  • Spoon slowly over warm cakes, letting syrup soak in.
  • Let cakes cook completely.
  • To make the filling, in a small saucepan, mix 1/3 cup sugar and gelatin.
  • Add orange juice.
  • Stir over low heat until gelatin dissolves.
  • Add butter, stir until butter melts.
  • In a small bowl, beat egg yolks; stir in orange mixture; then return mixture to saucepan.
  • Cook over low heat 3 to 5 minutes, stirring until thickened.
  • Cool to room temperature.
  • Beat egg whites with remaining 2 tablespoons sugar until stiff; fold into cooled orange mixture.
  • Refrigerate until very thick but still spreadable, about 10 minutes.
  • Do not chill too long or mixture will set.
  • Use to fill Orange Sunshine Cake.
  • To make the frosting: in the top of a double boiler, mix egg whites, sugar, corn syrup, water and cream of tartar.
  • Beat with an electric mixer or rotary beater over boiling water 7 minutes or until very stiff and glossy.
  • Remove from heat; beat in vanilla.
  • Use to frost Orange Sunshine Cake.
  • To assemble the cake: place one cake layer on cake plate, spread with half the Orange Filling.
  • Top with second cake layer, spread with Frosting.
  • Top with remaining cake layer and spread with remaining Orange Filling.
  • Frost sides of cake with remaining Frosting.
  • Garnish with slivered orange peel, if desired.

1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup buttermilk
1/4 cup orange juice
1 teaspoon grated orange rind
1 1/2 cups granulated sugar, divided
1/4 cup vegetable oil
1 egg yolk
4 egg whites
confectioners' sugar (to garnish)
orange strip (to garnish)

Steps:

  • Preheat oven to 350*.
  • Spray a 6 cup decorative or plain tube pan with vegetable cooking spray.
  • Dust with flour.
  • Set aside.
  • In a medium bowl, sift together the flour, baking powder and salt.
  • In a small bowl, combine buttermilk, orange juice and grated orange peel.
  • Mix well.
  • In a large bowl, stir together 1 cup sugar, oil, and egg yolk until crumbs form.
  • Stir in flour mixture alternately with buttermilk mixture, beginning and ending with flour mixture.
  • In a medium mixing bowl, using an electric mixer set on high speed, beat egg whites until soft peaks form.
  • Beat in remaining sugar, 2 tablespoons at a time, until stiff peaks form.
  • Gently fold egg whites into batter.
  • Pour into prepared pan.
  • Bake until a toothpick inserted near center comes out clean, about 1 hour.
  • Place on a wire rack and cool for 10 minutes.
  • Turn cake out onto rack and cool completely.
  • Sprinkle with confectioners sugar; garnish with orange peel strips.
