Might refer to this as a retro recipe. We had these on a regular basis growing up. Since I can't find anyone here in Virgina who knows what they are, it may be a Midwest thing. Mom said that you always served them at parties in the 50's & 60's because the boys liked them so much. They became legendary in my group of friends when Mom made them one evening for dinner. The guys kept asking where the tops to their burgers were to get under Mom's skin. It worked (she threatened to never cook for them again) and they still laugh about it today. Boys are rotten. We love them anyway. They did like the burgers! Note: You must use a lean ground beef or there is a tendency to end up with a soggy, greasy bun. Not good.

1 lb lean ground sirloin
1/3 cup chili sauce
1 1/2 teaspoons mustard
1 teaspoon onion, finely chopped
1 1/2 teaspoons Worcestershire sauce
1 teaspoon salt
pepper
4 hamburger buns, total of 8 bun halves (or 8 slices of bread)

Steps:

  • Combine all ingredients and mix.
  • Divide equal portions of mixture between the eight bun halves and spread on top.
  • Make sure to spread mixture out to the edge of the bun as any portion of the bun exposed to the broiler has a tendency to brown too much.
  • Place under the broiler for 6-8 minutes.

How many cheddars are too many in a burger? Science doesn't know yet. This burger handles four safely and deliciously. The all-beef patty is stuffed with two different cheddars, cooked in bacon fat, and topped with two other completely different cheddars. With four cheeses, you get a different flavor in every bite. Throw some crispy bacon on it along with lettuce and onions, and call it a beautiful, fantastic, cheesy day.

1 pound bacon
1 pound ground beef
4 slices white sharp cheddar
4 slices yellow sharp cheddar
4 slices white mild horseradish cheddar
4 slices yellow mild cheddar (Try sweet red cheddar if you can find it!)
4 buns
Green leaf lettuce
1 medium white onion, sliced

Steps:

  • Cook the bacon in a large frying pan, reserving the fat.
  • Rip up 1 slice of the white sharp cheddar and 1 slice of the yellow sharp cheddar and fold into the middle of each burger. Form 4 patties around the cheese. Season the beef with the salt and pepper.
  • Cook the patties in the bacon fat. Before they finish, melt a slice of the horseradish cheddar and a slice of the yellow mild cheddar on each burger. Cover the pan or tent to help the cheese melt.
  • BUILD YOUR BURGER: Bottom bun, lettuce, cheeseburger, bacon slices, onions, top bun. A gratuitous number of cheddars? No. Five would be crazy. But what are you going to do, three? No. Four's your number.

1 pound American cheese, shredded
1 pound Monterey Jack cheese, shredded
1 pound Swiss cheese, shredded
4 cups mayonnaise
1 cup seeded and diced jalapeno
1 teaspoon sriracha
One 28-ounce can pimento peppers
Fine salt and black pepper
Sixty 4-ounce burger patties
Kosher salt
60 brioche hamburger buns, toasted
Fried Pickles, recipe follows
1 pound granulated sugar
13 ounces cider vinegar
13 ounces white vinegar
1 tablespoon peppercorns
1 tablespoon brown sugar
5 cloves garlic
1 jalapeno
Kosher salt
5 cucumbers, sliced thin
1 cup tempura powder, such as Kikkoman
Oil, for deep-frying

Steps:

  • Mix together the American cheese, Monterey Jack cheese, Swiss cheese, mayonnaise, jalapenos, sriracha, pimentos and 1 teaspoon salt and pepper in a large bowl.
  • Prepare a grill for high heat. Season the burger patties with kosher salt and pepper. Place the patties on the grill and cook, rotating two to three times, until the edges begin to sweat, 2 to 3 minutes. Flip the burgers and cook for 2 to 3 minutes more.
  • Place a 2-ounce scoop of the pimento cheese in the middle of the cooked burgers. Serve the burgers on toasted buns, garnished with Fried Pickles.
  • Add the granulated sugar, cider vinegar, white vinegar, peppercorns, brown sugar, garlic, jalapeno, 2 1/2 ounces salt and 1 cup water to a stockpot and bring to a boil. Lower the heat and simmer until the sugar and salt are dissolved, 10 minutes. Let cool to room temperature. Add the sliced cucumbers to the brine and refrigerate for 24 hours.
  • In a bowl, mix together the tempura powder and 1 cup ice water until smooth.
  • Fill a large heavy pot with 2 to 3 inches of oil and heat to 350 degrees F. Working in batches, dip the pickles in the tempura batter and then into the oil. Fry until golden brown. Transfer to a paper-towel-lined plate to drain.

In the early '70s a cook named Bob Detweiler got tired of making "just burgers," so he made up this recipe (his wife, Julie, the manager, suggested the cheese topping). It became an instant hit, and they've had it on the menu ever since.

1/3 cup drained, sliced canned whole green chiles
1/3 cup sliced pitted oil-cured black olives
1/3 cup sliced sauteed cremini mushrooms
2 tablespoons unsalted butter
2 tablespoons vegetable oil
4 James Beard's Favorite Hamburger patties, recipe follows
4 slices onion
1/4 cup beer, plus more as needed
4 slices cheddar cheese
4 toasted hamburger buns

2 pounds chopped beef chuck or round
1 onion
1 tablespoon heavy cream
Freshly ground black pepper, to taste
Unsalted butter
Vegetable oil, as needed
Kosher salt, to taste

Steps:

  • Make the Det Mix: Combine all the ingredients in a bowl.
  • Make the hamburgers: Heat the butter and oil in a large cast iron skillet over high heat. Add the hamburgers and cook halfway through and turn over. Cover each with about 1/4 cup of the Det Mix and top with the onion slices. Pour in the 1/4 cup beer and cover with a lid. Steam a couple of minutes until the onion is translucent. Re-steam with beer a couple of times. Top each hamburger with a slice of cheese and cover until melted. Transfer the hamburger to the buns and serve.
  • Spread the meat out on a board and grate 2 to 3 tablespoons of onion into it¿use a fairly fine grater so you get just the juice and very finely grated raw onion. Now mix in about a tablespoon of heavy cream and some freshly ground black pepper. Form into patties¿a 6 to 8-ounce patty for an average serving.

1 tablespoon plus 1/4 cup flaxseed meal
One 6-ounce jar marinated artichoke hearts, chopped
2/3 cup oyster mushrooms, chopped
2 tablespoons jarred jalapenos, chopped
12 green olives, sliced
8 cloves garlic, finely minced
1 small red onion, chopped
1 small red pepper, chopped
4 tablespoons olive oil
Two 15-ounce cans garbanzo beans, drained
One 15-ounce can black beans, drained
1 1/2 cups gluten-free rolled oats
1/4 cup gluten-free oat flour
1/4 cup vegan Worcestershire sauce
2 teaspoons oregano
1 teaspoon paprika
1 teaspoon celery salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes
1/2 teaspoon ground sage
8 burger buns
Sriracha Aioli, recipe follows
Suggested toppings: pickles, red onion, tomato, mixed greens
1 cup full-fat coconut milk
1 1/4 tablespoons apple cider vinegar
1 tablespoon garlic granules
2 teaspoons ground mustard powder
1 teaspoon salt
2 cups avocado oil
1/4 cup sriracha
4 teaspoons gluten-free yellow mustard

Steps:

  • Combine 1 tablespoon flaxseed meal and 3 tablespoons water in a small bowl to create a "flax egg" and set aside for at least 5 minutes.
  • In a large pot or saute pan, mix artichokes, mushrooms, jalapenos, olives, garlic, onion and red pepper with 2 tablespoons olive oil and saute over medium-high heat until vegetables have softened, 5 to 10 minutes.
  • Mix garbanzo beans and black beans in a bowl and mash until almost no whole beans remain and the two are well combined.
  • Mix oats, oat flour, Worcestershire sauce, oregano, paprika, celery salt, cumin, cayenne, red pepper flakes, sage and remaining 1/4 cup flaxseed meal in a bowl until well combined.
  • Mix sauteed ingredients with the mashed bean mixture. Once well combined, mix in the dry ingredients. Lastly, add the flax egg and combine well.
  • Heat a large skillet with remaining 2 tablespoons olive oil over medium-high heat.
  • Using a kitchen scale, form the mixture into 4-ounce patties and place in the skillet, cooking each side until browned and internal temperature reaches 145 degrees F, 5 to 7 minutes on each side. Once cooked, slather buns, tops and bottoms, with Sriracha Aioli and toast in the skillet, sauce-side down, 2 to 3 minutes. Top burgers with pickles, red onion, tomato and mixed greens.
  • For the vegan mayo: Pour coconut milk, vinegar, garlic granules, mustard powder and salt into a blender and begin blending. Once ingredients have come together, begin slowly pouring the avocado oil into the blender while blending, about 1 minute to pour the entire 2 cups. Once all of the avocado oil has been poured, let the blender run for 1 minute to whip the mayo. Use immediately or store in the refrigerator for up to 10 days.
  • For the sriracha aioli: Mix sriracha, mustard and 2 cups vegan mayo in a bowl and whisk together until well combined. Use immediately or store in the refrigerator for up to 10 days.
