CLASSIC DEVILED HAM

3/4 pound ham, cut in chunks
1/4 of a medium-sized onion, in chunks
1/4 cup Dijon-style mustard
4 tablespoons ham drippings or softened butter
1 1/2 tablespoons honey
2 teaspoons dry mustard powder
1/4 to 1/2 teaspoon ground cloves (go by taste here - cloves are powerful)
1/4 teaspoon turmeric
1/4 teaspoon pepper
1/8 teaspoon white pepper
about a 1/4 cup of ham broth or water to thin to desired consistency

Steps:

  • Using a food processor (or a grinder if you have one) run ham and onion through the grating blade. Remove and place in the food processor with the steel cutting blade. Process until nearly pulverized.
  • Add mustard, drippings or butter, honey, mustard powder, cloves, turmeric, and the two peppers. Blend until smooth. If the mixture seems dry, add broth or water, tablespoon by tablespoon until desired consistency is reached, stopping to scrape down from time to time.
  • Flavor is best after this has sat for a while. It will be firmer after refrigeration.

8 slices white bread
4 tablespoons unsalted butter
4 slices pepper jack cheese
2 cups Winning Deviled Ham, recipe follows
1 pound smoked ham, cut into 1-inch cubes
1/2 cup mayonnaise
1/4 cup prepared mustard
1/2 cup chopped onion
2 tablespoons chopped fresh parsley leaves
3 tablespoons maple syrup
2 tablespoons hot sauce (recommended: Tabasco)
1 tablespoon Worcestershire sauce
2 teaspoons paprika
1 teaspoon mustard powder
Salt
Pepper

Steps:

  • Butter each slice of bread on 1 side. Put 4 slices of bread, butter side down, into a large skillet. Top with a slice of cheese and 1/2 cup deviled ham. Place another slice of bread, butter-side up, onto each sandwich. Cover the skillet, put it on medium heat, and cook until the bottoms are nicely browned, about 5 minutes. Turn the sandwiches over and cook until the bottoms are browned, about 3 minutes. Serve while hot.
  • Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.

Devilled Ham - Copycat Underwood's Devilled Ham image

I looked for a long time for an acceptable substitute to Underwood's Devilled Ham, and this is really close! It's also called potted meat. I buy a smoked ham shank and use part of the ham for this. You will need to process this recipe in a pressure cooker used for canning. I use those small 1/4 pint jars - those little fancy jam/relish jars, but you could put in 1/2 pints too.

2 chicken bouillon cubes
1 cup boiling water
3 cups cooked ham, chopped
1 tablespoon gelatin
1/4 cup crispy brown rice cereal
1/2 cup hot water
1/2 teaspoon ground pepper
1/2 teaspoon garlic powder

Steps:

  • Dissolve chicken cubes in 1 cup of boiling water.
  • Add gelatin.
  • Soak rice cereal in the 1/2 cup of hot water.
  • Put Ham, rice cereal/Water, Chicken cubes/water and spices in blender or food processor.
  • Process until it turns into a paste - it will be rather sloppy.
  • Spoon into jars, leaving 1/2 inch headspace.
  • Apply the lids and tighten the rings.
  • Process either 1/2 or 1/4 pints for 50 minutes at 10 lbs pressure. If your altitude is over 2,000 feet, process at 15 pounds pressure. This recipe can be multiplied. If you use chicken instead of ham, you will have to add fat to the chicken or it will be too dry to eat!

2 tsp yellow mustard
5 drops hot pepper sauce
1 tsp garlic powder
1 tsp onion powder

1/4 tsp celery salt
1/4 cup onion ((optional - yellow or white onion, finely chopped or diced) )
1/4 cup celery ((optional - finely chopped or diced))

Steps:

  • Use a food processor to grind the cubed cooked ham down to a finer consistency. Pulse until the ham reaches a dry ground ham appearance (but not so much that it turns to a paste).
  • Transfer the ham to a large mixing bowl and add the mayonnaise, yellow mustard, hot pepper sauce, garlic powder, onion powder, ground black pepper, paprika, and celery salt. *Add optional ingredients if desired.
  • Mix until well combined then cover with plastic cling film and refrigerate to chill before serving.

I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

3 tablespoons mayonnaise
