This recipe was created by my grandfather, he called it depression stew cause when you looked at it, it looked depressing...LOL! Just kidding, this was created out of necessity feeding 5 kids back in 1935 in Hawaii, a simple dish made with things that there was an abundance of, way back when.

1 pkg ground beef
1 medium onion, chopped
2 clove garlic, minced
salt & pepper, to taste
1 bunch watercress, fresh - cut into bite size pieces
2 - 3 can(s) tomato sauce
1 tsp worcestershire sauce

Steps:

  • 1. Fry ground beef with garlic & onion until onions are transparent. Add salt, pepper & worcestershire sauce to taste & tomato sauce, cook at medium high heat. Shut off stove & add watercress & remove pot from burner, do not stir until 30 minutes after. When done, watercress will be limp but not "bitter".
  • 2. **NOTE: Make sure stove is shut off because if heat is left to long with watercress, it will turn "BITTER" for the whole pot.

A hearty, filling stew invented by my mother during the "Great Depression" to keep her growing boys happy. She only needed two pork chops to feed six people. Hot biscuits are almost required as the side for this stew. Good anytime of the year, especially when unexpected dinner time guests show up.

2 -3 large pork chops
4 large white potatoes
2 large yellow onions
6 stalks celery, include leaves
1/2 gallon water
1/4 cup flour
salt and pepper
2 chicken bouillon cubes

Steps:

  • Boil pork until it falls from the bone. Cut into small bite sized pieces ( fat as well ) and return to pot with some salt and pepper and keep on slow simmer.
  • Peel and cut potatoes into bite size chunks.
  • Roughly dice the onion and celery. Add all vegetables and boulion cubes to the pot and bring to a boil. Simmer low until vegetables are done. Thicken with a mix of flour and cold water. Taste for salt or pepper.
  • The stew is white with some green so you might want to add a chopped carrot for color.
  • Serve in deep soup bowls with biscuits on the side. Some may want to add ketchup to their bowl of stew. This is OK - I do it.
  • You may substitute and inexpensive cut of pork for this recipe.

My grandma made this stew with what she had during the depression, My husband requests this about twice a monnth.

1 package(s) beef hotdogs
1 32 oz box(es) chicken broth
8-10 medium potatoes peeled and halved
3- 15 1/2 ounce(s) cans italian stewed tomatoes (reduced sodium)
1 can(s) corn
2 cup(s) water
1/2 teaspoon(s) each salt,pepper, garlic, smoked paprika

Steps:

  • put chicken broth,potatoes, stewed tomatoes, water and spices in large saucepan bring to boil, boil for 20 minutes, or until potatoes are almost done
  • slice hotdogs into 1/2 inch pieces and add to pot along with 1can drained corn
  • heat thru. crusty french bread and a green salad complete this dinner :)
