4 (10 -12 ounce) Delmonico steaks, 1-inch thick
2 teaspoons extra virgin olive oil
McCormick's Montreal Brand steak seasoning
1 tablespoon extra virgin olive oil
2 large yellow onions, thinly sliced
1/4 cup balsamic vinegar
1 1/2 teaspoons extra virgin olive oil
2 garlic cloves, minced
1 small white boiling onion, chopped
1/4 cup dry sherry
1 cup tomato sauce
1 tablespoon Worcestershire sauce
fresh ground black pepper

Steps:

  • Heat a heavy grill pan or griddle pan over high heat; wipe pan with olive oil.
  • Cook steaks 4 minutes on each side for medium, 7-8 minutes for medium-well.
  • Season with steak seasoning and remove to a warm platter.
  • Make the onions: heat a medium nonstick skillet over med-high heat; add in oil and sliced yellow onions; cook/stir 10-12 minutes, until onions are soft and sweet.
  • Add in balsamic vinegar and turn onions until vinegar cooks away and glazes onions a deep brown, 3-5 minutes.
  • Make the steak sauce: heat a small saucepan over medium heat; add in oil, garlic, and white onions; saute 5 minutes, until tender.
  • Add in sherry; stir to combine; stir in tomato sauce and Worcestershire; season with pepper.
  • To serve: top steaks with onions and drizzle a little steak sauce down over the top, reserving half to pass at the table.

  • Preheat a grill to high on one side and lightly oil the grate. Season a 2-inch-thick porterhouse steak (3 pounds) with coarse sea salt and pepper. Grill over direct heat for 4 minutes, then rotate the meat 90 and cook 2 more minutes. Repeat on the other side. Move the steak to the cooler part of the grill (position the smaller end away from the heat); cover and cook until the meat reaches 128 to 130 for medium-rare, 12 to 15 minutes. Let rest 5 minutes before slicing. To make the sauce, simmer 3/4 cup balsamic vinegar, 2/3 cup ketchup, 1/4 cup honey, 2 sliced shallots, 2 tablespoons Worcestershire sauce, 1 tablespoon dijon mustard, 1/4 teaspoon allspice, and salt, pepper and sugar to taste until thickened, about 15 minutes. Strain, then whisk in some butter.

STEAKS:
4 delmonico steaks, 1-inch thick (10-12 oz each)
2 tsp olive oil, extra virgin
steak seasoning blend (i like montreal by mccormick) or salt and pepper to taste
ONIONS:
1 Tbsp olive oil, extra virgin
2 large yellow onions, thinly sliced
1/4 c balsamic vinegar
STEAK SAUCE:
1 1/2 tsp olive oil, extra virgin
2 clove garlic, chopped
1 small white onion, chopped
1/4 c dry cooking sherry
1 c tomato sauce
1 Tbsp worcestershire sauce
freshly ground black pepper, to taste

Steps:

  • 1. Steaks: (Note - I actually prefer to do this step AFTER starting the onions and steak sauce) Heat up a heavy grill pan over high heat, and wipe it with olive oil before it gets too hot. Season both sides of your steaks with the steak seasoning or salt and pepper. Cook the steaks for about 4 minutes on each side for medium, 7-8 minutes for medium well. Remove them to a warm platter.
  • 2. Onions: Heat a medium nonstick skillet over medium-high heat. Add oil and yellow onions. Cook, stirring occasionally, for about 10-12 minutes, until the onions are soft and sweet. Add balsamic vinegar to the pan and turn the onions until the vinegar cooks away and glazes the onions a deep brown - approx. 3-5 minutes.
  • 3. Steak Sauce: Heat a small saucepan over medium heat. Add oil, garlic and white onions and saute for about 5 minutes, until tender. Add the sherry to the pan and combine them with the onions. Stir in the tomato sauce and Worchestershire sauce, and season with black pepper.
  • 4. To Serve: Top steaks with onions and drizzle a little steak sauce down over the top. Try to reserve about half of the sauce to pass at the table.

six 20-ounce prime rib-eye steaks, at room temperature
sea salt and coarsely ground black pepper to taste
1/3 cup extra-virgin olive oil
MEAT BUTTER
3 fresh bay leaves
1 tablespoon fresh thyme leaves
2 tablespoons sea salt
1 pound (4 sticks) unsalted butter, at room temperature

Steps:

  • 1. Butter: Combine the bay leaves, thyme, and salt in a spice grinder and process until powdery. Place the butter in a mixing bowl. Add the powdered mixture and, using a hand-held electric mixer, blend well. Scrape the butter mixture onto the center of a sheet of plastic film. Pull the film up and over the soft butter and, using your hands, form the butter into a roll about 1 3/4 inches in diameter. Wrap tightly and refrigerate for up to 1 week, or wrap in freezer wrap, label, date, and freeze for up to 3 months. When ready to serve, unwrap the flavored butter and, using a sharp knife, cut crosswise into 1/2-inch-thick slices, allowing one slice per steak.
  • 2. Steak: Clean, oil, and preheat the grill. Wipe excess moisture from the exterior of the steaks using a paper towel. Season one side with salt and pepper. Place the steaks on the hot grill, seasoned side down. Grill for 3 minutes. Season the top side and, using tongs, turn the steaks and grill for 3 minutes to just sear the exterior. Remove the steaks from the grill and, using a pastry brush, lightly coat both sides of each steak with olive oil. Return the steaks to the grill and cook, turning occasionally, until the exterior is nicely charred and the interior has reached the desired degree of doneness on an instant-read thermometer. Remove from the grill and let rest for 5 minutes before serving with a generous pat of Meat Butter.

I'm not certain from where this recipe originated, but it is one of my husband's and my favorites. This past Valentine's Day, which happened to be on the day of a blustery snowstorm, he actually made this recipe on the outdoor grill. Now that's love!

2 Delmonico steaks (or cut of preference)
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
1 garlic clove, minced
2 teaspoons rosemary, dried
3 tablespoons olive oil

Steps:

  • Preheat grill to medium-high heat.
  • Tenderize steaks and season on both sides with salt and pepper.
  • With two layers of aluminum foil cut into a square, make a sack-like shape (rounded on the bottom and pinched in the middle) and do not seal just yet.
  • Place garlic, rosemary and oil in the sack and swish from side to side to combine.
  • Tightly seal the sack.
  • Place sack on top rack of grill (as not to be too close to the flame, which may burn the garlic).
  • Grill steaks on bottom rack for 5-8 minutes on each side or until desired doneness. Close grill cover between flipping of steaks.
  • Remove foil sack from grill at the same time as steaks.
  • Plate steaks, open foil sack slightly and drizzle oil over steaks. If desired, spoon garlic and rosemary from sack onto steaks as well.

½ cup olive oil
¼ cup Worcestershire sauce
6 tablespoons soy sauce
¼ cup minced garlic
½ medium onion, chopped
2 tablespoons salt
1 tablespoon pepper
1 tablespoon crushed dried rosemary
3 tablespoons steak seasoning
3 tablespoons steak sauce (e.g. A-1)
4 (10 ounce) Delmonico (rib-eye) steaks

Steps:

  • Combine the olive oil, Worcestershire sauce, soy sauce, garlic, onion, salt, pepper, rosemary, steak seasoning, and steak sauce in the container of a food processor or blender. Process until well blended.
  • Prick steaks on both sides with a fork, and place in a shallow container with a lid. Pour marinade over steaks, cover, and refrigerate at least 3 hours, or overnight.
  • Preheat an outdoor grill for medium heat, or light charcoal, and wait until coals are completely white. Soaked wood chips may be added to the coals when ready for a smoky flavor, if you like.
  • Remove steaks from marinade, and discard the marinade. Lightly oil the grilling surface, and place steaks on the grill. Cover, and grill steaks for about 10 minutes on each side, or to your desired degree of doneness.
