Yum! Love these potatoes...whats not to love? I've added bacon and at times added ham too, to make it more of a meal, than a side! Always add some onion...My mom gave me this recipe many years ago and as always, I had to mess with the recipe a bit...lol!...hope you enjoy it as much as we do... Delicious! Enjoy!

1 - 28 /32 oz chunky hashbrowns or can use regular / i highly recommend o'brien style chunk potatoes w/ peppers and onions
1 1/4 c whipping cream or more if desire for the larger bag of hashbrowns
1/2 stick butter or 4 tablespoons, melted
2 c shedded swiss cheese
1 c cheddar cheese - i use sharp
chopped onion - optional
pinch thyme, dried
pinch nutmeg
salt & pepper to taste

Steps:

  • 1. Preheat oven to 400 degree F. Place hash browns in a greased 9 x 13 baking dish.
  • 2. I then salt, pepper and add the thyme and nutmeg to the whipping cream. Pour over the potatoes.
  • 3. Pour melted butter over potatoes.
  • 4. I then mix the cheeses and sprinkle them over top of the potatoes, evenly. Usually I sprinkle the top with chives or parsley.
  • 5. Bake for 45 - 60 minutes or until potatoes are cooked and top is golden.

This is an easy crowd pleaser. We often make double batches so that we can have leftovers. These taste great reheated the second day also. Preparation time does not take into account time needed to thaw hash browns.

1 (2 lb) package frozen hash browns (thawed 30 minutes)
1 cup diced onion
1 (10 1/2 ounce) can cream of chicken soup
1 (16 ounce) carton sour cream
1/2 cup margarine (melted)
8 ounces sharp cheddar cheese, grated
1 dash salt and pepper, to taste

Steps:

  • Mix all ingredients together in a large bowl.
  • Pour into greased 9 x 12 inch baking dish.
  • Bake at 375 degrees for 1 hour. (275-300degrees for 2-21/2hrs is better).
  • May be made 1-2 days ahead and refrigerated until baking.
