Steps:
- Preheat oven to 350 degrees.
- In small bowl, combine flour, salt, 2 1/2 tablespoons of cocoa powder and baking soda.
- In a separate bowl, cream margarine and sugar.
- Add vanilla and water.
- Gradually beat in the dry ingredient mixture.
- By the spoonful, drop cookie dough onto a foil covered cookie sheet and bake for 8-10 minutes or until toothpick inserted comes out clean.
- When the cookies are cooled, microwave the peanut butter in a small bowl for about 30 seconds or until it turns into a liquid form.
- Add cinnamon and cocoa powder to the peanut butter liquid and transfer the mixture into an icing bag or plastic bag.
- If you put the mixture into a plastic bag, cut a small piece of the tip off so that it can come out.
- Drizzle the mixture in a criss-cross design on the cooled cookies.

- 1. Preheat oven to 350 degrees F. Spray cookie sheets with nonstick cooking spray or greasing lightly.
- 2. In a medium sized bowl combine the brown sugar, white sugar, peanut butter, shortening, salt, baking soda, and vanilla; beat until smooth.
- 3. Add the egg and beat until mixed in. Stir in the oatmeal and flour until mixed in evenly.
- 4. Using my fingers, I pinch about 1 tablespoon of dough and place in a somewhat rounded mound on cookie sheet, 1 1/2 inches apart. ( or can drop by spoonful) With the bottom of a glass, dip in sugar and flatten down each cookie to about 1/4 inch thick. Dipping in sugar after each cookie.
- 5. Place cookies in oven and bake for 10 - 12 minutes or until lightly browned.
- 6. Remove from sheet to a cooling rack.
- 7. Make filling: Mix the 3 ingredients in a bowl, until well blended.
- 8. Spread the frosting on the bottom of half of the cookies and then top with the other half to create the sandwich cookies.

- Beat the butter until creamy, for about 2 minutes. Add both of the sugars, beat butter and sugar mix for two more minutes. Then mix in the peanut butter and egg. Mix together all the dry ingredients including: flour, baking soda, baking powder and salt. Mix well. Stir the dry ingredients into the sugar butter mixture.
- Wrap dough in plastic and refrigerate for at least three hours.
- Preheat oven to 375 degrees Fahrenheit*.
- Shape dough into balls that are one inch and one-fourth wide and long. Place about three inches apart on an un-greased cookie sheet. Flatten in criss-cross patterns with a fork. Place in oven.
- Bake cookies till they are a light brown (nine to ten minutes*). Cool on baking sheet for a few minutes then transfer to rack to cool completely. *For chewier cookies bake at 300 degrees Fahrenheit for fifteen minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine sugars, peanut butter and shortening in large bowl. Beat at medium speed of mixer until well blended. Add eggs, one at a time, beating well afer each addition. Combine flour, baking soda and salt. Add gradually to creamed mixture at low speed. Mix just until blended. Stir in peanut butter chips with spoon. (Dough will be stiff.)
- Shape into 1 1/2 inch balls. Place 2 inches apart on ungreased baking sheet. Make crisscross marks on top with floured fork tines.

- Form cookie balls and place on two greased cookie sheets.
- Flatten each cookie ball with hands to about a 2 inches diameter and 1/4 inch thick.
- With a fork indent the tops of cookies with the crisscross pattern.
- Bake for 7-9 minutes, they will look underdone but still take them out.
- Let cool for 5-10 minutes before removing from the tray.
