I love blue cheese and this is a great recipe from Maytag Dairy Farm. Use Maytag Blue cheese if possible but any high quality blue will do.

1 1/2 lbs broccoli, trimmed, florets separated, stems cut into 1/4-inch slices
2 tablespoons butter
2 tablespoons flour
2 garlic cloves, minced
1 cup milk
1/2 cup crumbled blue cheese
3 ounces cream cheese, room temperature
1/2 cup dried breadcrumbs

Steps:

  • Heat oven to 350°.
  • Cover broccoli with lightly salted water in a medium saucepan. Heat to a boil over high heat; cook 2 minutes. Drain and transfer to a shallow, buttered casserole dish.
  • Melt the butter in a medium saucepan over medium heat; stir in the flour and garlic. Cook, stirring, until bubbly, about 1 minute.
  • Stir in the milk, blue cheese and cream cheese. Cook, stirring, until sauce thickens, about 4 minutes. Pour over broccoli; sprinkle with bread crumbs.
  • Bake until heated through and lightly browned, about 25 minutes.

1 lb broccoli, rinsed and trimmed
2 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/3 cup panko breadcrumbs
2 large eggs

Steps:

  • Preheat oven to 425 degrees F.
  • Cut the broccoli florets into bite sized pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt, and pepper and set aside.
  • Beat the eggs together and set aside.
  • Spread the panko into a cookie sheet and place into the oven for 2 minutes or until lightly toasted. Set the timer so you don't burn them!
  • Remove the panko from the oven. Dip each floret in the egg wash, then in the breadcrumbs, and place on a cookie sheet. Place in the oven on the center rack and roast until the broccoli is tender, 8 to 10 minutes.

This is a recipe that I saw on Food Network and thought I'd give it a try. It is a remix of the old boring broccoli and cheese.

1 bunch fresh broccoli
olive oil, to drizzle
salt and pepper
2/3 cup parmesan cheese

Steps:

  • Cut broccoli into "trees" (stalks and florets together) then cut trees in half.
  • Put broccoli on baking sheet and drizzle with olive oil. Salt and pepper to tase.
  • Bake at 350 degrees for about 15 minutes or until tender.
  • Take out of oven and sprinkle parmesan cheese over top and bake again until cheese is bubbly.

A cookbook was published in 1979 after 10 years of recipes being broadcast. Of over 2,000 recipes that had been broadcast, the cookbook has the recipes that were the listeners' favorites.

1 (10 ounce) package frozen chopped broccoli
1/2 cup chopped onion
1 tablespoon butter
2 cups cooked rice
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup grated cheddar cheese

Steps:

  • Cook broccoli according to package directions- Drain.
  • In a large skillet, saute onions in butter.
  • When onion is transparent, stir in cooked rice, mushroom soup and the cooked broccoli.
  • Turn mixture into a buttered shallow 1 1/2 quart casserole, sprinkle with cheese.
  • Bake for 30 minutes in a 350°F oven.

1 large onion, chopped
1/2 cup margarine or 1/2 cup butter
4 eggs
1 cup cheddar cheese, shredded
1 (10 ounce) package frozen chopped broccoli, thawed and drained
8 ounces sour cream, i use low fat
1 teaspoon salt

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Mix all ingredients together well.
  • Grease a 8x8 pan, I use Pam.
  • Pour into prepared pan.
  • Bake@ 425 degrees Fahrenheit for 40 minutes or until bread is pulling away from side of pan.
  • Let sit for 15 minutes until cutting.
