7 ounces tricolor spiral pasta
6 ounces thinly sliced hard salami, julienned
6 ounces provolone cheese, cubed
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small red onion, thinly sliced
1 small zucchini, halved and thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/4 cup minced fresh parsley
1/4 cup grated Parmesan cheese
1/2 cup olive oil
1/4 cup red wine vinegar
1 garlic clove, minced
1-1/2 teaspoons ground mustard
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
Dash pepper
2 medium tomatoes, cut into wedges

Steps:

  • Cook the pasta according to package directions; rinse in cold water and drain. Place in a large bowl; add the next 9 ingredients. , In a jar with tight-fitting lid, combine oil, vinegar, garlic, mustard, basil, oregano, salt and pepper; shake well. , Pour over salad; toss to coat. Cover and chill for 8 hours or overnight. Toss before serving. Garnish with tomatoes.

1 package (16 ounces) tricolor spiral pasta
2 medium plum tomatoes, seeded and julienned
8 ounces sliced salami, julienned
8 ounces provolone cheese, julienned
1 small red onion, thinly sliced and separated into rings
1 jar (5-3/4 ounces) pimiento-stuffed olives, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1/4 cup grated Parmesan cheese
1 bottle (8 ounces) Italian salad dressing

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. , In a large bowl, combine the pasta, tomatoes, salami, provolone cheese, onion, olives and cheese. Add dressing; toss to coat. Cover and refrigerate for several hours or overnight. Serve with a slotted spoon.

This is an authentic deli-style recipe for pasta salad, it's great to take to potlucks or just to have at any time or any season. I sometimes add in some feta in place of the Parmesan cheese, I usually double up on the dressing ingredients, plan ahead this needs to chill for 8 hours or up to 24 hours --- please do not omit the salami that is what makes this salad!

1 (7 ounce) package tri-color spiral pasta
6 ounces hard salami, thinly sliced
6 ounces provolone cheese, cubed
2 1/4 ounces ripe olives, sliced and drained
1 small red onion, thinly sliced
1 small zucchini, halved and thinly sliced
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup fresh parsley, minced
1/4 cup parmesan cheese, grated
1/2 cup olive oil or 1/2 cup vegetable oil
1/4 cup cider vinegar or 1/4 cup red wine vinegar
1/4 teaspoon garlic powder (or to taste, or use a small amount of fresh minced)
1 1/2 teaspoons prepared mustard or 1 teaspoon mustard powder
1 teaspoon dried basil
1 teaspoon dried oregano (or to taste)
salt and pepper
2 -4 teaspoons sugar (optional)

Steps:

  • Cook pasta according to directions; rinse in cold water, drain.
  • Place the cooked pasta in a large bowl.
  • Toss with 1-2 tbsp olive oil (to prevent pasta from sticking and drying out, this is optional).
  • Add the next 9 ingredients, with the Parmesan cheese; toss to combine.
  • In a jar with a tight fitting lid, combine oil, vinegar, garlic powder, mustard, basil, oregano, salt and pepper; shake well to combine.
  • Add in sugar if you find that the dressing is too strong.
  • Pour over the salad; toss to coat well.
  • Cover, and chill for 8 or more hours, (overnight is even better).
  • Toss again before serving.

1/2 cup chopped green or red sweet pepper
1 2-1/4 oz. can sliced pitted ripe olives, drained
1/4 cup grated Parmesan cheese
1/4 cup snipped fresh parsley
1/3 cup olice oil
1/4 cup white wine vinegar
1-2/2 teaspoons dry mustard
1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed
2 cloves garlic, minced
2 medium tomatoes, cut into wedges
Parsely springs (optional)

Steps:

  • 1. Cook pasta according to package directions; drain. Rinse with cold water and drain again. 2. In a large mixing bowl combine pasta, provolone cheese, salami, zucchini, onion, green or red pepper, olives, Parmesan cheese, and snipped parsley. 3. For dressing, in screw-top jar combine olive oil, vinegar, dry mustard, oregano, basil, and garlic. Cover and shake well. Pour dressing over pasta mixture and toss lightly to coat. Transfer salad to a salad bowl. cover and chill for 4 to 24 hours. 4. To serve, add tomato wedges and toss lightly. Garnish with parley.
