FRIED SHRIMP RECIPE
Flavorful juicy shrimp are breaded with flaky crispy panko bread crumbs and deep fried until just cooked through and perfectly golden brown. Easily just as delicious as what you'll find in any restaurant!

Steps:
- Add flour, paprika, garlic powder, salt and pepper to a medium shallow dish and whisk to blend.***
- In a second medium shallow dish whisk eggs until well blended.
- Pour panko into a 3rd shallow dish (a pie plate works well here).
- Preheat oil in a large pot to 350 degrees while you coat shrimp. Note that shrimp should be lightly wet on the exterior, if not rinse with water and drain well otherwise the flour won't stick in the next step.
- Dredge shrimp in flour mixture on both sides. Transfer to egg mixture and coat on both sides. Then finish by coating in panko on both sides, while pressing into panko so it adheres well.
- Fry shrimp in batches (no more than 10 at a time) until cooked through, about 1 minute. Bring oil back to 350 degree temperature between batches.
- Use a large spider to remove shrimp from oil and transfer to a baking sheet lined with two layers of paper towels to drain. Repeat process with remaining shrimp.
- Garnish shrimp with parsley if desired, serve with lemon wedges and your favorite shrimp sauce (such as cocktail sauce, honey mustard, tartar sauce, sriracha dip, creamy herb etc).

Steps:
- Heat 2 tablespoons of oil in a wok over medium heat until shimmering. Add the garlic, scallions and let brown, stirring occasionally, 3 to 5 minutes. Add the chile pepper flakes if using and stir until aromatic, about 30 seconds. Transfer oil and aromatics to a large metal bowl. Wipe wok clean with paper towel.
- Add remaining oil to wok and heat to 375°F (190°C) over medium heat. Meanwhile, combine egg and cornstarch in a medium bowl. Add shrimp and toss to coat. When the oil is ready, add half of the shrimp, dropping them into the oil one at a time. Cook, agitating and flipping shrimp frequently until crisp and just cooked through, 2 to 3 minutes total. Transfer shrimp to a paper towel-lined plate and repeat with remaining batch.
- Add drained fried shrimp to bowl with browned aromatics. Season to taste with salt, pepper, and optional additional seasonings. Serve immediately.

- Beat eggs in a medium bowl until frothy. Mix flour, salt and pepper in another medium bowl. Dredge shrimp in flour, shake off excess. Dip shrimp into eggs, then press shrimp into Panko; turn shrimp over and press into Panko again to coat both sides.

- Place the shrimp in a bowl and season with salt, pepper and garlic powder. In a small bowl, stir together the flour and paprika. Place eggs and panko crumbs into separate bowls.
- Heat the oil in a deep-fryer or deep skillet to 375 degrees F (190 degrees C). Dip each shrimp into the flour mixture, then into the egg, and finally into the panko crumbs to coat. - Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
- Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
- Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
- Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.
DEEP-FRIED SHRIMP WITH CROUTONS

- 1. Deep-fry shrimp (from the Edit Tap, click to open recipe and follow instructions) but only for 1 to 2 minutes. 2. Remove bread crusts and cut bread in 2-inch cubes (or approximately the size of the shrimp). Slice water chestnuts. 3· In one cup, combine soy sauce, sherry, salt and sugar. In another cup, blend cornstarch and cold water to a paste. 4. Reheat deep-frying oil. Add bread cubes and deep-fry until golden. Drain on paper toweling arrange on a serving platter. 5. Heat remaining oil. Add water chestnuts stir-fry a few times. Add deep-fried shrimp stir-fry 1/2 minute to reheat. 6. Add soy-sherry mixture and bring quickly to a boil. Then simmer, covered, 2 minutes. 7. Stir in cornstarch paste to thicken. Spoon mixture over bread cubes and serve at once. - In deep fryer or 4-quart Dutch oven, heat oil (2 to 3 inches) to 350°F.
