This is a rendition of a macaroni and cheese dish a local restaurant makes. It's so rich and decadent I only make it once per year. It's not a "dieter's friend". You can use any pasta shape you like.

2 cups penne pasta
2 tablespoons butter
½ cup heavy whipping cream
½ cup half-and-half
½ teaspoon garlic salt
1 cup shredded Gruyere cheese
1 cup shredded mozzarella cheese, divided
½ cup shredded Parmesan cheese
½ cup Oaxaca cheese, shredded
cooking spray

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Stir in cream, half-and-half, and garlic salt. Add Gruyere cheese, 1/2 cup mozzarella cheese, Parmesan cheese, and Oaxaca cheese. Stir into cream until melted. Drain pasta and add to the sauce; stir to coat.
  • Spray a casserole dish with cooking spray and pour in pasta mixture. Sprinkle with remaining 1/2 cup mozzarella cheese.
  • Bake in the preheated oven until cheese is bubbly and slightly browned, 15 to 20 minutes.

2 cups elbow macaroni
2 eggs, beaten
2 cups evaporated milk
1/2 cup butter, melted
1/2 teaspoon cayenne pepper
2 1/2 cups sharp cheddar cheese, grated
1 cup breadcrumbs
1 teaspoon paprika
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally until it is almost tender, 10 to 12 minutes. Drain, rinse with cold water, and set aside.
  • In a large bowl, beat the eggs with the milk, 1/4 cup melted butter, the cayenne pepper, and a teaspoon of salt.
  • Put half the macaroni into a buttered 2-quart casserole and top with half the cheddar cheese. Repeat. Pour the milk mixture over the macaroni and cheese.
  • In a small bowl, mix the bread crumbs with the paprika, the remaining butter, and the Parmesan. Sprinkle the bread crumb mixture over the macaroni and bake until brown and bubbly, 40 to 45 minutes.

1 tablespoon butter
1 cup cottage cheese (not lowfat)
2 cups milk (not skim)
1 teaspoon dry mustard
1 pinch cayenne
1 pinch nutmeg
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 lb sharp cheddar cheese, grated
1/2 lb elbow macaroni, uncooked

Steps:

  • Heat oven to 375 degrees.
  • Combine cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper together in a bowl using a whisk. Reserve ¼ cup grated cheddar for topping. In a large bowl, combine the rest of the grated cheese, milk mixture and uncooked pasta. Pour into a buttered 9-inch baking pan, cover tightly with foil and bake 30 minutes.
  • Uncover pan, sprinkle with remaining 1/4 C cheddar cheese and dot with butter. Bake 30 minutes more uncovered, til brown on top. Let cool ~ 15 minutes. Enjoy!

3 cups short pasta (macaroni or cavatelli)
4 tablespoons (1/2-stick) unsalted butter
2 (12-ounce) cans evaporated milk
1/3 cup skim milk
2 eggs
1 teaspoon kosher salt
1/4 teaspoon ground nutmeg
Pinch cayenne pepper
8 ounces processed American cheese slices, torn (about 2 cups)
8 ounces Gruyere cheese, grated (about 2 cups)
8 oz. sharp cheddar cheese, grated (about 2 cups)

Steps:

  • Preheat oven 375°F. Cook pasta and drain, returning it to hot pot. Add butter, tossing until melted. Whisk together the milks, eggs, salt, nutmeg, and cayenne in a medium bowl. In a separate bowl, combine all the cheeses. Spread 1/3 of the pasta in the bottom of a 9x13-inch baking dish. Top with 1/3 of the cheese mixture. Repeat with the remaining pasta and cheese, then pour milk mixture over the top. Bake until warmed through and golden, about 20-30 minutes.

8 -10 slices fresh white bread (or 1 french bread loaf, crust removed)
12 tablespoons butter (1 1/2 Sticks)
1 lb rigatoni pasta (or Elbow Macaroni)
sea salt
1/2 teaspoon white pepper (or Black)
1/2 teaspoon nutmeg
2 teaspoons dried tarragon
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
5 cups milk (heated in saucepan or microwave)
12 ounces gruyere cheese (grated)
10 ounces sharp white cheddar cheese (grated)
5 ounces pecorino romano cheese (grated)
1 1/2 lbs cooked lobster meat (chopped into large chunks)
1/2 lb cooked sea scallops (chopped)
1 lb cooked bacon (drained of fat and chopped)

Steps:

  • Preheat your oven to 375 degrees Farenheit.
  • Remove the crusts from 8-10 slices of fresh white bread (or french bread) and tear apart. Place the torn pieces into a large plastic ziplock bag. Melt 6 Tbsp of Butter in a small saucepan and pour half of the melted butter over the bread. Seal the bag and toss the bread until well coated. Set aside.
  • In a large pot, bring 6 cups of water to a boil and add a pinch of salt.
  • While the water comes to a boil, take the remaining melted butter and brush with a pastry brush into a 3 Quart baking dish (or a disposable aluminium turkey roasting pan - for easy cleanup and transport). (Also, if you don't have a pastry brush, you can use a paper towel dipped in the butter to coat the pan). Set aside.
  • In another large pot on medium heat, melt 6 Tbsp butter and, once melted, add 1/2 cup all purpose flour. Whisk together to make a rue. Slowly pour in the warm milk and whisk constantly until all the milk is added and the sauce thickens and begins to bubble. Remove from heat.
  • Add the olive oil to the boiling water and stir in the pasta. Follow cooking instructions on the package for cook time or until the pasta is al-dente (firm, but not hard). Pour the pasta into a colander and rinse with cold running water and allow to drain.
  • Add 1/2 tsp Sea Salt, White Pepper, Nutmeg, Tarragon, Cayenne Pepper, Gruyere, Cheddar and Pecorino cheeses to the sauce mixture and stir until the cheese melts.
  • In a large bowl, combine the drained pasta and cheese sauce and pour into the buttered baking dish. Combine lobster, sea scallops and cooked bacon. Sprinkle the bread pieces over the top and place in the oven.
  • Bake for 30 minutes or until the top is golden brown and the cheese bubbles.
